BUTTERMILK RANCH DRESSING WITH BIBB LETTUCE

3 scallions, white and green parts, chopped
1/2 cup chopped fresh basil leaves, lightly packed
2 tablespoons freshly squeezed lemon juice
11/2 tablespoons Dijon mustard
1 tablespoon good olive oil
2 garlic cloves, chopped
2 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 cup good mayonnaise
1/2 cup Greek-style yogurt, such as Fage Total
1/2 cup buttermilk, shaken
Salad greens for 6
3 small Bibb lettuces, cut in half through the core
2 large ripe tomatoes, thickly sliced
1 red onion, sliced

Steps:

  • Place the scallions, basil, lemon juice, mustard, olive oil, garlic, salt, and pepper in the bowl of a food processor fitted with the steel blade. Puree for 15 to 20 seconds to make a smooth mixture. Add the mayonnaise, yogurt, and buttermilk and blend until smooth. Transfer the dressing to a container, cover, and refrigerate for 1 hour for the flavors to develop.
  • Arrange the lettuce, tomatoes, and onion artfully on salad plates and drizzle with the dressing. Sprinkle with salt and pepper and serve.
  • Cook's Note: Ina substituted Boston lettuce for Bibb lettuce when taping this episode.

This is a great ranch dressing mix, which is lower in sodium and without the preservatives found in the commercial brands. This dressing mix not only makes a good salad dressing and dip, it is also good as a sauce on cooked vegetables, baked potatoes, fish, poultry and meat. This recipe makes 1/2 cup of the dry mix, or enough to make 8 cups of the finished dressing. You can make the dry mix up in larger quantities and package it in small decorative jars just large enough to hold one recipe for holiday gifts. When wrapping the jars of the mix, you could include a copy of the recipe and the ingredients for making more of the dry mix. This way if the recipient likes the dressing, they can make more of it for themselves and share it with even more friends. Recipe is from Cook It Light.

I'm not fond of a garlic press-cleaning out all the holes is a chore. I prefer chopping garlic, but finely chopping or mashing large quantities to a paste (see page 72) can be tiresome. Recently I picked up my Microplane, a rasp-type grater, and grated the garlic directly over my saucepan. A couple of swipes back and forth and the garlic had disappeared into the pan below.

Yield makes about 1 1/4 cups

Number Of Ingredients 9

1/2 cup mayonnaise (page 282)
1/4 cup buttermilk
3 tablespoons sour cream
2 green onions (white and green parts), chopped
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons apple cider vinegar
2 teaspoons Dijon mustard
1 clove garlic, very finely chopped
Coarse salt and freshly ground black pepper

Steps:

  • In a bowl, combine the mayonnaise, buttermilk, sour cream, green onions, parsley, vinegar, mustard, and garlic; season with salt and pepper. Store in an airtight container in the refrigerator for up to 8 hours. The garlic becomes very strong if made more than a day in advance.
