LIGHT RASPBERRY MOUSSE



Light raspberry mousse image

Mary's rasperry mousse is so light, soft and full of flavour - close your eyes and you could be in a veg patch of raspberries on a summer's day!

Provided by Mary Berry

Yield Serves 4-6

Number Of Ingredients 6

4 leaves gelatine
300g/10½oz raspberries
4 free-range eggs, separated
75g/2½oz caster sugar
150ml/5fl oz double cream
few raspberries, for garnish

Steps:

  • Soak the gelatine in a small bowl of cold water for 5 minutes until soft. Squeeze out the liquid and tip out all but 1 tablespoon of water.
  • Put the gelatine into a heatproof bowl with the tablespoon of water. Put the bowl over a pan of simmering water for a few minutes. Stir until dissolved and runny.
  • Blend the raspberries in a food processor and pass through a sieve into a bowl, removing the seeds.
  • Whisk the yolks and caster sugar together in a bowl using an electric hand whisk until thick, fluffy and pale in colour. This will take about 4-5 minutes.
  • Whip the cream to soft peaks in a separate bowl.
  • Stir the sieved raspberries and gelatine into the egg yolk and caster sugar mixture, then carefully fold in the cream.
  • Whisk the egg whites in a clean bowl until stiff peaks form. Stir 2 tablespoons into the raspberry mixture, then carefully fold in the rest.
  • Spoon into a 1.2 litres/2 pint bowl or 4-6 glasses. Place in the fridge for 4 hours, or until set.
  • Decorate with raspberries and serve straight from the fridge.

2 cups fresh raspberries
1/2 cup sugar
1 tablespoon lemon juice
1-1/2 teaspoons unflavored gelatin
1/4 cup cold water
1 cup heavy whipping cream

Steps:

  • Place the raspberries in a food processor; cover and puree. Strain and discard seeds. Transfer puree to a large bowl. Stir in sugar and lemon juice; set aside. , In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Stir over low heat until gelatin is completely dissolved. Stir into raspberry mixture. Refrigerate until slightly thickened, about 1 hour. , Transfer gelatin mixture to a large bowl. Beat on high speed until foamy. Gradually add cream; beat until thickened, about 2 minutes. Spoon into dessert dishes. Cover and refrigerate until set, 1-2 hours.

1 (1/3 ounce) package sugar-free strawberry gelatin
1 cup ice cube
1 1/2 cups fresh strawberries, sliced
3/4 cup reduced-calorie whipped topping

Steps:

  • (First I'd put some hot water in the blender to heat up the container, let stand for 5 minutes then pour out.).
  • In a blender, combine water and gelatin.
  • Cover and process until gelatin is dissolved.
  • Blend in ice cubes until partially melted.
  • Add strawberries; process well.
  • Pour into a bowl; fold in whipped topping. Chill for 2 hours.

75g dark chocolate 70% grated
4 tbsp low-fat yogurt
2 large egg whites
2 tsp caster sugar
350g berries (try blueberries, raspberries, cherries or a mix)

Steps:

  • Melt the chocolate in a heatproof bowl over a pan of simmering water, making sure the bowl doesn't directly touch the water. Once melted, allow it to cool for 5-10 mins, then stir in the yogurt.
  • Whisk the egg whites until stiff, then whisk in the sugar and beat until stiff again. Fold the whites into the chocolate mix - loosen the mixture first with a spoonful of egg white, then carefully fold in the rest, keeping as much air as possible.
  • Put berries into small glasses or ramekins, then divide mousse on top. Chill in the fridge until set.

2 cups fresh strawberries, washed
2 tablespoons orange juice (preferably fresh)
2 tablespoons lemon juice (preferably fresh)
1 1/2 teaspoons unflavored gelatin
1/4 cup cold water
1/3 cup sugar
1/2 cup 1% fat cottage cheese
1/2 cup nonfat plain yogurt
1 egg white, at room temperature
1 tablespoon sugar

Steps:

  • In a blender or food processor, puree strawberries with orange juice and lemon juice until smooth.
  • Set aside.
  • In blender or food processor, puree cottage cheese and yogurt until smooth.
  • Set aside.
  • Put water in small saucepan.
  • Stir in gelatin; let stand for 1 minute.
  • Dissolve over low heat, stirring constantly.
  • Add 1/3 cup sugar.
  • Cook and stir until sugar has completely dissolved and mixture has thickened slightly.
  • Place in a large bowl; whisk until just warm to the touch.
  • Do not allow it to jell.
  • Slowly whisk strawberry puree and yogurt-cottage cheese puree into the gelatin mixture.
  • Place in the freezer for 30-40 minutes, or until quite thick but not set.
  • Whisk occasionally so that lumps don't form.
  • Beat egg white until soft peaks form.
  • Add 1 T.
  • sugar and beat until stiff peaks form.
  • Gently fold beaten egg white into strawberry-gelatin mixture, blending thoroughly.
  • Transfer to a serving bowl or to 4 individual serving bowls.
  • Chill for at least 8 hours before serving.
