TROPICAL LIME PARFAITS
Ree's parfaits consist of layers of crumb followed by a mix of fluffy whipped cream cheese and heavy cream. The addition of coconut chips and extract, plus lime, gives the parfaits a truly tropical flavor.

Steps:
- For the crumb: Combine the graham cracker crumbs, sugar, butter, coconut chips and lime zest in a bowl. Mix to combine.
- For the filling: Using an electric mixer, beat the cream cheese, heavy cream, powdered sugar, coconut extract and lime zest and juice in a large bowl until light and fluffy.
- Begin by layering 1/4 cup of the crumb in the bottom of each of 4 parfait glasses. Top each with 1/3 cup of the filling. Repeat the layers once more, then garnish with extra toasted coconut and lime zest.
LIGHT AS A TROPICAL BREEZE LIME PIE
It's a light and refreshing dessert, reminiscent of key lime pie but much healthier. I'm not sure who to credit: I've had it for years and it could have come from a nutrition class or from Weight Watchers, but I know I've made it several times with good results and compliments. You can adda a can of crushed pineapple and/or coconut to make it more "tropical," but I actually prefer it as a light Summer dessert or a foil to a heavier meal. Cooking time is the chill time here, preparation time includes all "stove time."

Steps:
- In a small mixing bowl, combine the crust ingredients.
- Mix well and press into a pie pan or springform pan.
- Bake at 350 degrees for 8-10 minutes.
- Cool, then place in the freezer while you prepare the filling.
- Place the apple juice concentrate in a small saucepan, sprinkle the gelatin over it and let the mixture stand for a few minutes to soften the gelatin.
- Add the sugar or Splenda blend and heat on low until the sugar dissolves.
- Transfer the mixture to a bowl (you'll be adding the yogurt to this later) and stir in the lime juice, vanilla and half of the grated lime rind.
- Place the bowl in the refrigerator or freezer until it has thickened to egg-white consistency.
- With an egg beater or mixer, whip the mixture until it is light and fluffy.
- Stir in the yogurt, blending thoroughly.
- Pour the mixture into the partially frozen crust.
- Sprinkle the pie with the remaining grated lime rind and chill until firm.

LIGHT-AS-A-CLOUD KEY LIME PIE EXTRAORDINAIRE
If you are looking for an everyday common key lime pie then this is not for you, the addition of beaten egg whites added to the filling is what makes this pie stand out from any other recipe! if you want a less fluffier pie then just use two egg whites instead of three. Prep time includes freezer time. This pie may also be served frozen just thaw slightly before slicing

Steps:
- Set oven to 325°F.
- For the crust; in a bowl mix together graham cracker crumbs with sugar and cinnamon; add in melted butter and mix to combine completely.
- Press into a 9-inch pie plate.
- Bake crust for 5 minutes; remove and cool completely.
- Separate 3 eggs, then place the whites into a mixing bowl.
- Reserve the yolks in another bowl; to the yolks add in 1 whole egg, lime juice, sweetened condensed milk; mix until smooth and completely combined, then mix in food colouring until combined.
- Using an electric mixer beat egg whites with salt and cream of tartar until stiff but not dry; fold the beaten whites in the lime mixture.
- Pour the filling into the partially baked pie crust.
- Bake at 325°F for 10-15 minutes or until just set.
- Let cool at room temperature then place in freezer for a minimum of 5 hours (or overnight).
- Just before serving whip cream with confectioners' sugar (to taste).
- Serve the pie decorated sweetened whipped cream and lime slices.
