CHILI MACARONI AND CHEESE
I got the idea from another recipe site, but I've modified it enough that I consider it my own creation now. It's easy to prepare, and reheats well.

Steps:
- Cook and drain ground beef with salt, pepper, green pepper, onion and garlic.
- Add chili sauce, water, chili powder and corn.
- Simmer about 10 minutes to heat through.
- Meanwhile, prepare macaroni as directed on package.
- Combine sauce and pasta.
- Note. I use jarred pureed garlic, about 1 tsp, instead of whole cloves. Also, if you don't care to use the macaroni and cheese package, you can make your own, or use some other pasta. The sauce by itself makes about 4 cups, and is quite thick.
- Note -- The first time I made the sauce, I froze it before adding the pasta. It was still very good even after three months in the freezer.

Steps:
- Prepare Mac and Cheese as directed on box but do not add cheese packets yet (just the butter and milk).
- While Mac and Cheese is cooking, put the 2 cans of chili into a microwave safe bowl and heat up in microwave for 3 minutes.
- Add the mac and cheese (minus the cheese) into the bowl with the chili and mix.
- Cut up the 4-6 hotdogs (smaller or bigger, depending on what your preference is) and heat them up in the microwave for about a minute or so.
- Add the hotdogs to the macaroni and cheese (minus the cheese) and chili mixture.
- Last but definitely NOT least, add the cheese packs to the chili mac mixture in the bowl. This way the cheese covers ALL the ingredients so everything is cheesy =) .
CHILI MAC N CHEESE
I combined two favorites of mine to make my family's ultimate comfort food! I took this to a pot luck and got rave reviews. I have even made it with cut up hot dogs for chili dog casserole. **Extra note based on reviews: This is not meant to be a spicy dish, if you like your chili hot you might want to use the hot chili seasoning packet, or else use two of the regular ones. You could also add a bit of hot sauce. My family does not eat spicy (hot spicy) food, so this dish is suited to our tastes, if you like extra kick, adjust it to suit yours!

- Prepare the Cheese Sauce. While the pasta cooks, make the cheese sauce. If using Cheddar cheese: melt the butter in a large heavy-bottomed pot. Add the flour and whisk until smooth. Cook, whisking constantly, until smooth and light tan, about three minutes. While whisking, add the milk in a slow and steady stream. Whisk to remove any lumps. Add the cheese, one handful (about two tablespoons) at a time. Stir gently. Allow the cheese to melt into the sauce before adding the next handful. Repeat until all the cheese is added. If using Velvetta: Add the milk to the pot. Heat. Add the Velvetta. Stir gently until melted.
- Make the Chili Mac. Drain the pasta. Add to the cheese sauce. Stir to combine. Add the warm chili. Stir. Reduce heat to low. Cook for about three minutes, stirring occasionally so the cheese doesn’t stick to the bottom of the pot and burn.
