LIBBY'S PUMPKIN MUFFINS
These muffins are amazing! The recipe is from a can of Libby's pumpkin. We absolutely love these things! It is hard to eat just one!

Steps:
- For streusel: combine 5 tbsp flour, 5 tbsp sugar, 3/4 tsp cinnamon. Cut in butter until mixture resembles coarse crumbs. Set aside.
- Combine eggs, sugar, all of the oil, and pumpkin in a mixer bowl. Mix well.
- Sift together flour, salt, baking soda, cinnamon, nutmeg, cloves, and allspice in a different bowl
- Add flour mixture to the pumpkin mixture. Combine just until blended.
- Fill greased or lined muffin tins.
- Sprinkle 2 teaspoons streusel over the top of each muffin.
- Bake in an oven preheated to 350° for 35 minutes.

- In a large bowl, cream together the margarine and the sugars.
- Add the next 5 ingredients; stir to mix well.
- Mix together the dry ingredients; gradually add the dry ingredients to the creamed mixture and stir just until combined.
- Fill greased or paper line muffin cups two-thirds full with batter.
- For streusel topping: mix together the flour and brown sugar; cut in the margarine with a pastry blender until resembles coarse meal.
- Sprinkle evenly over each cupcake batter.
- Bake at 375 degrees for 20-25 minutes or until tests done.
- Cool in pan for 5 minutes, then remove to a wire rack.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease 18 muffin cups or use paper liners.
- In a large bowl, sift together 2 1/2 cups all-purpose flour, 2 cups sugar, pumpkin pie spice, baking soda and salt. In a separate bowl, mix together eggs, pumpkin and oil. Add pumpkin mixture to flour mixture; stirring just to moisten. Fold in apples. Spoon batter into prepared muffin cups.
- In a small bowl, mix together 2 tablespoons flour, 1/4 cup sugar and 1/2 teaspoon cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping evenly over muffin batter.

PUMPKIN APPLE STREUSEL MUFFINS
Delicious! This is a favorite muffin recipe - I am required to make them at least once every fall. I substitute freshly ground whole grain flour for the all-purpose. **PLEASE NOTE**. If you substitute store-bought wheat flour for the all-purpose, you do not need to add the additional amount of flour - just use the same amount as all-purpose. My picture is of the whole grain version.

- Add liquid ingredients to dry ingredients; stir just until moistened.
- Stir in apples.

- In small bowl, combine 2 tablespoons all-purpose flour, ¼ cup sugar and ½ teaspoons Ground cinnamon. Cut in 4 teaspoons Butter, until mixture is crumbly.

- Combine first 4 ingredients, set aside. In another bowl, mix next 3 ingredients. Add to dry mix, stirring only until moist. Stir in apples.
- Spoon into lightly greased muffin pan. Makes 18 good sized muffins.
- Mix 2 TBSP flour, 1/2 tsp cinnamon, 1/4 C sugar together for topping. Cut in 4 TBSP butter until crumbly.
- Sprinkle streusel topping on muffins. Bake 35-40 minutes at 350 degrees.
