Liang Mu Di (Chinese Stir-Fried Corn and Edamame) image

The name of this dish means "two plots of land", and evokes the image of a field of corn and a field of soybeans growing side by side. Growing up in Iowa, this was the reality of the landscape around me, but it wasn't until I moved to China that I encountered this simple vegetable dish that brings the two together. This is standard fare in the parts of China where I've lived. 1/4 cup peanut oil
1/2 lb fresh edamame or 1/2 lb frozen edamame
1/2 lb fresh kernel corn or 1/2 lb frozen corn kernels
1/2-1 red bell pepper, 1/4 to 3/8-inch dice (if you first cut strips, and then slice across the strips diagonally, you get pretty little red diam)
1/2 teaspoon salt
1/8-1/4 teaspoon ground sichuan pepper (optional)
1/2 cup chicken broth (optional)

Steps:

  • If using fresh corn and edamame, parboil for a couple of minutes. Drain water.
  • If using frozen, and cooking in a western kitchen, I recommend thawing the corn and edamame before stir-frying. Outside of China, I don't find burners with enough heat to stir-fry something that's frozen. (Even in Chinese homes, where the gas flame typically wraps half-way up the side of the wok, people say they can't get good results like the restaurants do because their burners aren't hot enough. If there's no danger of setting your sleeve on fire or singeing the hair on the back of your hand, stir-fry conditions are less than ideal.).
  • Wash and dice bell pepper.
  • Heat wok over highest heat until smoking.
  • Add oil and swirl in pan to coat pan and heat oil.
  • Throw in bell pepper and stir fry briefly.
  • Add corn and edamame. Stir to coat with oil.
  • Add salt and pepper and stir.
  • Add chicken broth, if using, pouring along the side of the wok, so that it heats as it goes inches.
  • Stir-fry until vegetables are heated through.
  • Serve as part of a Chinese meal with rice, soup, and other dishes.

CHINESE STIR FRIED BEEF NOODLES

1 tablespoon soy sauce
1 tablespoon cornstarch
8 ounces nanka saimen noodles
1/2 lb thinly sliced flank steak
3 dried mushrooms (softened and thinly sliced. In a pinch, canned mushrooms can be substituted)
1 carrot (sliced into matchstick size pieces)
4 ounces snow peas (sliced in half)
1/2 cup chicken broth
2 green onions (sliced into 2-inch shreds)
2 tablespoons soy sauce
1/2 teaspoon salt
8 ounces bean sprouts

Steps:

  • Boil noodles in water for about 10 minutes. Rinse, drain and mix in 2 tablespoons oil. Set aside.
  • Marinade flank steak in soy sauce and cornstarch for 10 minutes.
  • Heat wok. In 2 tablespoons oil stir fry beef until the color has changed. Remove from wok and place in bowl.
  • Heat wok. In 2 tablespoons oil, add mushrooms, carrots and snow peas. Stir fry briefly until snow peas turn bright green. Remove from wok and place in bowl.
  • Heat wok and to 2 tablespoons oil, add green onions. Stir fry 4 seconds, then add broth, soy sauce and salt.
  • Stir in cooked noodles, mix for about 3 minutes.
  • Add cooked beef and vegetables, blend thoroughly before mixing in bean sprouts.
  • Serve hot.

Edamame is more commonly known as a soybean, harvested at the peak of ripening right before it reaches the "hardening" time. Edamame means "Beans on Branches" . A good source of protein. Enjoy as a snack squeezed directly from the well seasoned pods into the mouth with the fingers. Hence finger licking good!

1 lb frozen edamame, in the pod (3-4 cups)
1 tablespoon vegetable oil
1 teaspoon sesame oil
1 teaspoon fresh ginger, grated
1 teaspoon garlic, minced
1/2 teaspoon salt
sesame seeds, toasted

Steps:

  • Bring a large pot of water to a boil. Add edamame and continue boiling until beans are crisp-tender, about 6 minutes.
  • Meanwhile mix remaining ingredients together.
  • When done, run cold water over, or put in ice water, to stop cooking. Drain well; pat excess moisture off, and toss in the dressing.
  • Top with seeds.
  • To eat, hold pod by stem end, and slide the individual beans out with your teeth. Discard pod.

One of my favorite annual treats from my CSA is Edamame, a fresh soybean that is a popular snack in Japan. Did you know that soybeans actually enrich the soil they are grown in? They enrich the body that eats them, too! :)

edamame, as much as you would like to prepare (I use fresh, but frozen is easier to find and works well)
salt

Steps:

  • If using fresh, strip all of the pods off of your soybean bunch and boil them whole in salted water for 5 minutes.
  • (Start timing once the water returns to a boil) Drain the pods, liberally salt them, and then slip the seeds out of the pods directly into your mouth.
  • Have a discard bowl handy for the shells.
  • You may never want to eat potato chips again!

3 tablespoons balsamic vinegar
2 tablespoons Dijon mustard
1 1/2 tablespoons toasted sesame oil
2 garlic cloves, minced
2 cups corn, frozen (thawed)
2 cups shelled edamame, frozen (thawed)
20 large shrimp, peeled and deveined
4 scallions, trimmed and thinly sliced
1/2 cup fresh basil, chopped
salt
pepper

Steps:

  • Place a large skillet filled with 2 inches of water over high heat; cover and bring to a boil.
  • Whisk the first four ingredients together in a small bowl to make a vinaigrette.
  • Cut four 10x12 inch pieces of aluminum foil.
  • Place 1/2 cup corn and 1/2 cup edamame in the center of each piece of foil.
  • Top each pile of corn and edamame with 5 shrimp.
  • Drizzle shrimp with vinaigrette and top with scallions.
  • Season with salt and pepper.
  • Fold up each piece of foil to form a packet, making sure to seal.
  • Place packets in a bamboo steamer and set steamer in skillet with the boiling water.
  • Reduce the heat to low, cover, and steam for 13 minutes or until shrimp are thoroughly cooked. (Rotate packets halfway through cooking time.).
  • Carefully open packets to release steam.
  • Sprinkle with basil and serve.

1 cup red bell pepper, cut into 1-inch strips
1 cup green bell pepper, cut into 1-inch strips
1/2 cup onion, chopped
1 (14 ounce) can baby corn, drained
1 garlic clove, minced
1 teaspoon chicken bouillon granule
3 tablespoons water
1 tablespoon dry sherry
1 tablespoon soy sauce
1 teaspoon cornstarch
1/4 teaspoon sesame oil
1 teaspoon vinegar (optional)

Steps:

  • In a one-quart microwavable casserole, combine all the ingredients except the cornstarch, sesame oil and vinegar.
  • Stir to coat well, cover and microwave on high heat 4 to 5 minutes; stir once halfway through cooking.
  • In a small bowl, combine the corstarch with 1 tablespoon of water, stirring to dissolve the cornstarch completely.
  • Add it to the vegetable mixture along with the sesame oil and vinegar. Stir well, then cook 1 to 2 minutes more, until the sauce is thickened.

3/4 cup long grain brown rice
1 1/4 cups frozen edamame, shelled
1 tablespoon fresh lime juice
1 tablespoon rice vinegar
1 1/2 teaspoons sesame oil, toasted
1/2 teaspoon sugar
3 scallions, thinly sliced on the diagonal
salt
pepper
crushed red pepper flakes (my own addition)

Steps:

  • In a med saucepan, bring 1 1/2 cups lightly salted water to boil.
  • Add rice, reduce to a simmer; cover and cook, 30 minutes.
  • Stir in edamame; cover and cook until rice is tender, 15 to 20 minutes.
  • In a small bowl, stir together lime juice, vinegar, oil, chili flakes (if using) and sugar until sugar is dissolved.
  • With a fork, stir in lime juice mixture and scalliions into rice; season with salt and pepper.
