You don't need the luck of the Irish to make an eye-catching dessert! Just rely on cake mix, ready-to-spread frosting, cereal and ice cream cones.

1 package Betty Crocker™ Super Moist™ white cake mix
Water, vegetable oil and egg whites called for on cake mix box
2 containers Betty Crocker™ Rich & Creamy vanilla frosting
16 to 20 drops green food color
3 sugar-style ice cream cones with pointed ends
1/3 cup marshmallow bits from 1 1/2 cups Lucky Charms™ cereal
Betty Crocker™ yellow decorating gel or icing (from 0.68- or 4.25-ounce tube)
3 tablespoons yellow candy-coated fruit-flavored bite-size candies
Yellow paper baking cup, cut in half
Betty Crocker™ green sugar, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Make and bake cake as directed on box for 13x9-inch pan. Cool 10 minutes. Run knife around sides of pan to loosen cake; remove from pan to cooling rack. Cool completely, about 1 hour.
  • Cover large flat tray or piece of cardboard with foil or plastic food wrap. Place cake on center of tray.
  • Spoon frosting into large bowl. Stir in food color until well blended. Reserve 1/2 cup frosting. Frost cake with remaining frosting. Spread outside of ice cream cones with reserved frosting. Arrange cones with pointed ends up on one corner of cake for trees. Decorate each tree with 12 to 14 marshmallow bits.
  • Arrange 2 rows of marshmallow bits from trees to within 4 inches of other short end of cake for walking path. At end of walking path, create pot of gold, using candies and baking cup. Sprinkle green sugar around top edges of cake. Store cake loosely covered.

  • Leprechauns are fairies. Although they might not match your initial idea of what a fairy is, leprechauns are considered a part of the family. Like other fairies, they’re small in size and prone to mischief.
  • There aren’t any female leprechauns. As a way of explaining why there is no record of female leprechauns (and therefore no way to procreate in the traditional sense), some sources claim leprechauns are the unwanted children of the fairy community.
  • There’s a leprechaun colony in Portland, Oregon. After noticing a small circular hole in concrete where a light pole was meant to be, a journalist named Dick Fagan took it upon himself to make use of it.
  • Leprechaun means “small body.” Leprechaun is believed to be a variation of the Middle Irish word, lūchorpān—lū means small and corp means body.
  • Sometimes, leprechauns are red. Although the little Irishmen are now synonymous with the color green, they weren’t always. Early accounts of leprechauns describe them as wearing red and sporting a variety of hats, often three-cornered.
  • Leprechauns have a troublesome cousin called the clurichaun. Also sporting red is the rambunctious clurichaun, a mythical creature that shares many characteristics with the leprechaun.
  • Leprechauns are the bankers and cobblers of the fairy world. Leprechauns are known for their money, and there’s apparently a lot of it in the cobbling business.
  • Leprechauns are sneaky. Wherever there are leprechauns, there are stories of people trying to steal their gold. The rule is, if you’re lucky enough to catch a leprechaun, you can never take your eyes off him or he’ll disappear.
  • But leprechauns can be generous if you’re kind to them. Constantly being chased for one’s gold—or cereal— can take a toll on any fairy’s demeanor. As a result, leprechauns are distrustful and secretive.
  • Someone claims to have found the remains of an actual leprechaun. In 1989, a local businessman in Carlingford, Ireland, claimed to have found evidence of a real leprechaun on a mountain called Slieve Foye.
