WARM TUNA & LENTIL NIçOISE SALAD
The simplest of salads that's two of your 5 a day. With just 4 ingredients you can create a hearty lentil lunch to keep you going 'til dinner

Steps:
- Cook the eggs in a pan of boiling water for 7 mins, then set aside in cold water. Tip the lentils into a saucepan and gently warm. Stir through the mixed antipasti in their oil, along with the tuna in large flakes. Season to taste. Gently peel the eggs and slice them in half. Spoon the warm lentils into bowls and top each one with the halved eggs and black pepper.

LENTILS NICOISE
From the Whole Foods website. I made this a little lower fat by eliminating the oil and cooking the onion and garlic in a small amount of water. I also use fat free feta cheese and whole wheat pasta. Use canned tomatoes if it is not tomato season- you want to have flavorful tomatoes for this recipe. This is a simple yet tasty recipe.

- In a large skillet, heat the olive oil over medium heat. Add the garlic and onions, lower the heat and sauté for 5 minutes of until soft and translucent. Add the tomatoes and cook for 10 minutes longer. Stir in the lentils and olives and heat through. Season with salt and pepper.
- Meanwhile, cook the fettuccine according to package directions. Drain and toss with Nicoise sauce.
- Serve topped with crumbled feta cheese.

- Preheat your oven to 400F and line a baking sheet with parchment. Place the potatoes on the baking sheet and drizzle them with 1 1/2 tablespoons olive oil. Mix them with your hands to coat them evenly in the oil. Sprinkle the potatoes with salt, pepper, and thyme or Herbs de Provence. Roast for 30 minutes, or until the potatoes are golden brown and easily pierced with a fork.
- Bring a medium pot of water to boil. Add the green beans and boil for 3-4 minutes, or until they're tender but still firm. Remove the green beans from the water with a slotted spoon.
- Add the lentils to the boiling water. Boil for 25-30 minutes, or until the lentils are tender but not mushy. Drain the lentils thoroughly through a fine sieve.
- Transfer the lentils to a mixing bowl. Add 1 1/2 tablespoons olive oil, the shallot, the capers, the parsley, and the vinegar, as well as Kosher salt and black pepper to taste.

- For the lentils: Place the lentils in a saucepan, then add 1 ½ (375 ml) water, the garlic clove, and the thyme. Bring to a boil, then lower the heat to the minimum and cover. Cook for about 20 minutes, or until the lentils are tender with a bite. When the lentils are done, drain, remove the thyme sprig and garlic clove, and transfer them to a bowl. Add 2 tbsp (30 ml) of the dressing, some freshly ground black pepper, and a good pinch of salt. Mix to combine, then let cool to room temperature.
- For the salad: While the lentils are cooking, prepare a large bowl with cold water and ice and set it close to the stove. Place the potatoes and the eggs in a saucepan, then cover with cold water. Bring to a simmer, then set a timer for 4 minutes. Using a slotted spoon, transfer the eggs to the ice water bath, leaving the potatoes to simmer. Increase the heat to medium, then add the green beans to the saucepan. Set a timer for 2 minutes. Using a slotted spoon, transfer the green beans to the ice water bath. Test the potatoes by pricking them with a sharp knife. If they still seem too firm, keep on simmering them for 2 to 3 minutes, or until tender. Using a slotted spoon, transfer the potatoes to the ice water bath and leave to cool completely about 5 minutes.
