4 teaspoons olive oil
1 large onion, finely chopped (1 cup)
4 cloves garlic, finely chopped
1 tablespoon tomato paste
1 1/2 cups sliced carrots (4 medium)
1 cup dried lentils (8 oz), sorted, rinsed
1 carton (32 oz) Progresso™ chicken broth (4 cups)
1 carton (32 oz) vegetable broth (4 cups)
4 slices bacon, chopped
2 dried bay leaves
1 teaspoon dried thyme leaves
3/4 teaspoon salt
1/2 teaspoon pepper
1 bag (6 oz) fresh baby spinach leaves

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In 10-inch skillet, heat oil over medium-high heat. Cook onion in oil 2 minutes, stirring frequently, until tender. Add garlic and tomato paste; cook 1 minute. Spoon mixture into slow cooker. Stir in remaining ingredients except spinach.
  • Cover; cook on Low heat setting 9 hours. Discard bay leaves. Stir in spinach just before serving.

A delicious, nutritious and filling soup with the optional but strongly recommended kick of spice!

2 cups dried green lentils (sorted & rinsed)
8 cups vegetable stock
2 stalks celery (small diced)
4 medium carrots (small diced)
1 medium onion (small diced)
1 shallot (small diced)
3 garlic cloves (minced)
1 14- oz can fire roasted petite diced tomatoes
1 dried bay leaf
1/2 t dried thyme
1 t ground cumin
1/2 t smoked paprika
1/4 t cayenne pepper (or to taste)
1/2 t ground black pepper
2 t kosher salt
9 oz-bag fresh spinach (roughly chopped)
1 T red wine vinegar

Steps:

  • In a 6 quart or larger slow cooker, add all of the ingredients except for the spinach and red wine vinegar. Stir and cover. Cook on low for 7 to 8 hours or high for 3 to 4 hours. About 15 minutes before the soup is finished cooking, remove the bay leaf. Add the spinach and red wine vinegar. Stir and allow just enough time for the spinach to wilt (about 10 to 15 minutes).
  • Serve with more ground black pepper or grated parmesan cheese.
  • Enjoy!

1 pound cooked, smoked lean ham, cut into chunks
1 (14.5 ounce) can low-sodium diced tomatoes, undrained
1 ¾ cups dried lentils, rinsed
8 ounces chopped onion
6 ounces sliced carrots
6 ounces chopped celery
5 cloves garlic, minced
½ teaspoon ground black pepper
½ teaspoon salt
½ teaspoon dried thyme, or more to taste
1 bay leaf

Steps:

  • Combine water, ham, tomatoes, lentils, onion, carrots, celery, garlic, pepper, salt, thyme, and bay leaf in a slow cooker.
  • Cover and cook on LOW until lentils and vegetables are as soft as you like, 6 to 8 hours. Remove bay leaf before serving.

1 cup green lentils or 1 cup brown lentils
2 onions, chopped
2 celery ribs, finely chopped
2 carrots, finely chopped
1 potato, peeled and grated
1 clove garlic, minced
1 teaspoon cumin seed
1 teaspoon lemon, zest of
6 cups vegetable broth (chicken broth may be substituted)
1 (10 ounce) package frozen chopped spinach, thawed
2 tablespoons lemon juice

Steps:

  • Sort lentils and rinse under cold water.
  • Place lentils, onions, celery, carrots, potato, garlic, cumin seeds, lemon zest, and vegetable broth in the crockpot.
  • Cover and cook on LOW for 8-10 hours or on HIGH for 4-6 hours or until lentils and vegetables are tender.
  • Add spinach and lemon juice and cook on HIGH for 20 minutes more.

2 medium onions, chopped
1 garlic clove, chopped
1 tablespoon olive oil
8 ounces dried lentils
1 teaspoon lemon, zest of
1 tablespoon lemon juice
10 ounces frozen spinach
7 cups water or 7 cups stock

Steps:

  • Sautee onions and garlic in oil in 3 quart saucepan over med. heat until onions are tender. Stir in water (or stock), salt and lentils. Heat to boiling; reduce heat. Cover and simmer 1 hour. Stir in lemon peel, lemon juice and spinach. Cover and simmer until spinach is tender, about 5 minutes. A serving is about 1 1/4 cup.

  • In a 3 1/2 quart or larger slow cooker combine the lentils, celery, carrots, onion, garlic and ham. Season with basil, thyme, oregano, the bay leaf and pepper. Stir in the chicken broth, water and tomato sauce. Cover and cook on Low for 11 hours. Discard the bay leaf before serving.
