LEMONY TUNA, TOMATO & CAPER ONE-POT PASTA

Give student staple tuna pasta a boost with capers, mascarpone, lemon zest and parmesan for a more sophisticated take on a budget-friendly midweek meal

2 tbsp olive oil
1 red onion , finely chopped
500g cherry tomatoes , halved
400g dried pasta (we used rigatoni)
1l hot vegetable stock
2 x 110g cans tuna in olive oil, drained
3 tbsp mascarpone
30g parmesan , grated
2 heaped tbsp capers
½ lemon , zested
small bunch parsley , finely chopped

Steps:

  • Heat the oil in a saucepan over a medium-low heat. Add the onion and a pinch of salt and fry gently for 7 mins or until softened and turning translucent. Add 350g of the tomatoes, the pasta and veg stock to the pan and bring to the boil, then reduce to a simmer and cook for 15 mins, uncovered, stirring occasionally. The tomatoes should have broken down and the pasta will be just cooked.
  • Add the remaining tomatoes and bubble uncovered on a medium-high heat for 5 mins or until the liquid has reduced. Gently fold through large flakes of tuna, the mascarpone, parmesan, capers, lemon zest and parsley as well as salt and a generous grind of black pepper. Place a lid on the pan and leave to sit for 5 mins before serving in deep bowls.

8 ounces spaghetti (or other pasta)
2 tablespoons olive oil
3 garlic cloves minced
2 pouches 2.6 ounces tuna in olive oil
1 tablespoon lemon juice (plus zest)
Salt & pepper to taste
2 tablespoons capers
2 tablespoons fresh parsley chopped (divided)
Grated parmesan (for serving)

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup pasta cooking water, then drain the pasta. Return to the pot to keep warm.
  • In the wide pan, heat the olive oil at medium heat. Then add the garlic and cook until fragrant, about 30 seconds. Stir in the tuna, lemon juice and zest, salt and pepper, and heat through for 1 minute.
  • Add the pasta, capers and 1 tablespoon chopped parsley, and continue to stir until the spaghetti is well coated. Add as much of the reserved pasta water as needed to thin out the sauce.
  • Garnish with remaining parsley and serve warm.

1/2 cup butter
2 cloves garlic, minced
1 teaspoon lemon, rind of
1 teaspoon basil, crumbled
1 teaspoon dried parsley, crumbled
1/3 cup dry white wine
2 tablespoons flour
salt, to taste
fresh ground pepper, to taste
2 (6 1/2 ounce) cans tuna packed in oil, drained
1 lb medium pasta shell, just cooked
lemon wedge
parmesan cheese, freshly grated

Steps:

  • Melt butter in a heavy large skillet over medium heat.
  • Add garlic, lemon peel and herbs; cook stirring occasionally approximately 5 minutes, being careful not to burn garlic.
  • Gradually add flour, stir till blended.
  • Gradually add wine, stir till blended.
  • Season with salt and pepper.
  • Stir until sauce thickens, about 1 minute.
  • Mix in tuna, heat through.
  • Place shells in serving bowl, pour sauce over and toss.
  • Garnish with lemon wedges and freshly grated Parmesan cheese.

LEMON SPAGHETTI WITH TUNA & BROCCOLI

250g broccoli , cut into small florets
2 shallots , finely chopped
85g pitted green olive , halved
2 tbsp caper , drained
198g can tuna in oil
zest and juice 1 lemon
1 tbsp olive oil , plus extra for drizzling

Steps:

  • Boil the spaghetti in salted water for 6 mins. Add the broccoli and boil for 4 mins more or until both are just tender.
  • Meanwhile, mix the shallots, olives, capers, tuna and lemon zest and juice in a roomy serving bowl. Drain the pasta and broccoli, add to the bowl and toss really well with the olive oil and lots of black pepper. Serve with a little extra olive oil drizzled over.

1 (300 g) packet pasta, shape is your choice
1 tablespoon olive oil
1 tablespoon all-purpose flour
1 lemon, juice and rind of
1/2 cup cream (I used reduced fat)
1 (425 g) can tuna, drained and flaked
1/2 cup kalamata olive, pitted and roughly chopped
1 tablespoon capers
1/4 cup fresh flat-leaf parsley, roughly chopped

Steps:

  • Cook your pasta according to directions, drain and reserve 2 tablespoons of the cooking water.
  • Return the pasta and cooking water to the saucepan and set aside.
  • Heat the oil in a small saucepan over medium-high heat.
  • Add the flour.
  • Cook, stirring for 30 seconds, then remmove from the heat.
  • Slowly add the lemon juice, stirring and bring to the boil over medium heat.
  • Allow to cool a little, then add the cream.
  • Add the cream mixture, tuna, olives, capers, parsley, 3/4 of the lemon rind, and salt and pepper to the pasta.
  • Toss over a low heat until well combined.
  • Spoon into serving bowls and sprinkle with the remaining lemon rind.

350 g pasta shells
200 g fresh green beans, trimmed and cut into short lengths
200 g tuna in vegetable oil
1 lemon, zest of, grated zest
1 1/2 tablespoons capers
1/8 teaspoon dried chili, crushed
olive oil, for drizzling

Steps:

  • Cook pasta in boiling water for 8 minutes.
  • Add beans and cook for a further 3 minutes until both pasta and beans are just tender.
  • Meanwhile, tip the tuna and its oil into a bowl and flake the fish, keeping the pieces quite large.
  • Stir in the lemon zest, capers, chillies and plenty of salt and pepper.
  • Drain the pasta and beans, return them to the pan and toss with the tuna mixture.
  • Drizzle with a little olive oil if mixture seems dry and serve.

350g pasta shells
200g pack trimmed fine beans , cut into short lengths
200g can tuna in oil
grated zest of a lemon
1 heaped tbsp small capers
generous pinch of chilli flakes
olive oil for drizzling

Steps:

  • Cook the pasta in boiling salted water for 8 minutes. Add the beans and cook for a further 3 minutes until both the pasta and beans are just tender. Meanwhile, tip the tuna and its oil into a bowl and flake the fish, keeping the pieces quite large. Stir in the lemon zest, capers, chilli and plenty of salt and pepper.
  • Drain the pasta and beans, return them to the pan and toss with the tuna mixture. Add a little olive oil if you need to moisten everything. Serve the tuna and lemon pasta on its own or with a tomato and onion salad.
