A classic lemon soufflé has to be the ultimate in all the recipes you can find for the fluffy, light dessert. This one is so easy to make-enjoy.

For the Soufflé Dish:
2 tablespoons salted butter, melted
4 tablespoons granulated sugar
For the Soufflé Mixture:
1 1/3 cups whole milk, divided
7 tablespoons granulated sugar, divided
1/3 cup all-purpose flour
2 teaspoons lemon zest
4 large egg yolks
1 1/2 tablespoons butter, cold
2 teaspoons vanilla extract
4 large egg whites
For Garnishing:
Confectioners' sugar, for dusting
Fresh berries

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F. Butter a large soufflé dish and roll the granulated sugar throughout the dish, making sure to cover all the interior surfaces, especially the sides. Set aside.
  • In a medium saucepan set over low-medium heat, bring 1 cup of the milk to just steaming.
  • Stir together 5 tablespoons of the granulated sugar with the all-purpose flour, lemon zest, remaining 1/3 cup milk, and egg yolks until the mixture turns into a smooth batter.
  • Slowly whisk half of the hot milk into the batter, making sure to combine the ingredients well until they are completely smooth.
  • Add the tempered batter back into the hot milk in the pan and bring the mixture to a simmer, stirring constantly.
  • Stir and cook the mixture until it has thickened, or about 1 minute.
  • Stir the cold butter into the mixture and mix well. Allow it to cool at room temperature for 10 minutes.
  • Stir in the vanilla extract.
  • In a separate very clean bowl, beat the egg whites on medium-high speed until they become foamy and then add the remaining 2 tablespoons of sugar.
  • Continue beating the egg whites on high speed until they hold stiff glossy peaks.
  • Gently stir 1/3 of the egg whites into the vanilla mixture, then carefully fold in the remaining whipped egg whites.
  • The vanilla mixture should be evenly colored and light and bubbly, without egg white streaks or marbling.
  • Spoon the soufflé mixture into the prepared dish. Bake right away for 25 to 30 minutes, or slightly longer if at high altitude , until the soufflé has risen with a crusty exterior. If needed, cover it, and refrigerate it until ready for baking.
  • Serve the soufflé with a dusting of confectioners' sugar and a few berries, if desired.

2 family size black tea bags
4 cups boiling water
2 lemons, thinly sliced
1 cup sugar
1 tablespoon almond extract
2 teaspoons vanilla extract
1 (2 liter) bottle lemon-lime flavored carbonated beverage, chilled

Steps:

  • In a saucepan, brew tea bags in hot water for 15 minutes. While waiting for tea to brew, squeeze the lemon slices as you put them into a large pitcher. Pour in sugar.
  • Pour brewed tea into the pitcher with the sugar and lemons. You can let this sit in refrigerator for up to 1 day, or use it right away. When ready to serve, stir in almond extract, vanilla extract and lemon lime soda.

5 peach tea bags, such as Rishi
1 (13 1/2 ounce) can coconut milk, full fat
3 drops stevia extract, plus more to taste
2 teaspoons pure vanilla extract
2 cups ice, for serving
1 cup sweetened whipped cream, for serving (optional)

Steps:

  • In a small sauce pot bring 1 cup of water to a boil. Transfer to a medium heatproof bowl. Steep tea bags for 10 minutes. Add 1 cup of cold water to tea. Squeeze remaining tea from tea bags (into bowl) and discard, or save for later use.
  • In a blender, combine half of the brewed tea, the coconut milk, and vanilla; blend on low until smooth. Transfer to a large bowl. Stir in remaining tea. Stir in stevia extract, tasting for desired sweetness, add as many drops as needed to reach desired flavor. Chill tea until ready to serve. Up to two days. Reblend before serving, if mixture has separated.
  • To serve, pour Keto White Tea Drink over ice, top with whipped cream (if desired) serve immediately.

1 1/4 cups all-purpose flour (see Cook's Note)
1/8 teaspoon fine salt
1 stick unsalted butter (8 tablespoons), at room temperature
1/3 cup granulated sugar
1/3 cup confectioners' sugar
2 teaspoons finely grated lemon zest (about 1 large lemon)
1 large egg yolk
3/4 teaspoon pure vanilla extract
5 ounces white royal icing (marshmallow cream consistency for outlining and flooding, in piping bag with no tip)
5 ounces yellow royal icing (marshmallow cream consistency for outlining and flooding, in piping bag with no tip)

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Line a baking sheet with parchment paper.
  • Combine the flour and salt in a medium bowl and whisk to combine. Put the butter, granulated sugar, confectioners' sugar and lemon zest in a large bowl. Beat with an electric hand mixer on medium speed until light and fluffy, about 3 minutes. Add the egg yolk and vanilla and beat until well combined. Add the flour mixture in 2 batches and mix until just combined.
  • Scoop the dough with a 2-ounce cookie scoop, filling it fully with the dough. Then shape it into a straight-sided patty (like a hockey puck) that is 2 inches wide and 1/2 inch thick. Put the formed cookie on the prepared baking sheet. Repeat to make 7 to 8 more cookies and making sure there is at least 1 inch of space around each cookie on the baking sheet.
  • Bake until the cookies have spread out and flattened by about half and the bottoms are lightly browned, 10 to 12 minutes, rotating the pan once halfway through the cooking time. Let cool 10 minutes on the baking sheet, then transfer to a wire cooling rack to cool completely.
  • Flip your cookies upside down so the flattest side is up. Use the yellow icing to make a thin line around the edge of each cookie. Then make 2 loops around the interior of the yellow border with the white icing and use a toothpick to fill in any gaps between the two colors. Fill in the middle space with the yellow icing and then make a circle with the white directly in the center. Immediately use a scribe or toothpick to lightly drag from the edge of the cookie to the middle to create the segments of your lemon. Repeat with the remaining cookies.
  • Let the icing dry and crust over or serve immediately.

This is one of the many recipes I came up with on my own while experimenting with my various tea herbs. The funny thing about the name is that it doesn't contain any actual lemon at all. I use lemon verbena instead because I actually prefer the flavor to real lemons. Anyway, it's good hot or iced. Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.
