My Favorite Lemon Pudding image

3/4 cup sugar
1/4 cup cornstarch
2 1/2 cups milk
3 large egg yolks, lightly beaten
2 tablespoons finely grated lemon zest
Pinch salt
1/2 cup fresh lemon juice
2 tablespoons unsalted butter, at room temperature

Steps:

  • Whisk the sugar and the cornstarch together in a medium saucepan. Add the milk and whisk until smooth. Add the egg yolks, zest, and salt and cook, stirring frequently at first and constantly towards the end, over medium heat until thickened enough to thickly coat the back of a spoon.
  • Remove the pan from the heat and stir in the lemon juice and butter. Pour through a strainer into a large serving bowl or 4 individual serving dishes.
  • Let cool to room temperature. Chill, loosely covered, for at least 2 hours and up to 3 days, or until set and thoroughly chilled. Serve chilled.

2 cups white sugar
⅔ cup cornstarch
1 teaspoon salt
5 cups water
4 eggs
⅔ cup lemon juice
¼ cup butter

Steps:

  • Combine sugar, cornstarch, and salt in top of a double boiler over simmering water; stir well to prevent clumps. Gradually stir in 5 cups water. Cook, stirring frequently, until mixture is thickened to gravy consistency, 5 to 7 minutes. Remove from heat.
  • Beat eggs in a bowl until light and foamy. Pour in 1 cup of sugar mixture gradually, whisking vigorously to avoid curdling eggs. Whisk egg mixture into remaining sugar mixture gradually; return to double boiler. Cook, whisking constantly, until thickened to pudding consistency, 6 to 8 minutes. Whisk lemon juice and butter into pudding gradually. Cool in the refrigerator, 30 minutes to 1 hour.

This one of those desserts where the top of the pudding is a delicious, moist sponge and the bottom separates out into a thick, lemony custard.

100 g butter, plus
1 little extra butter, for greasing
175 g caster sugar
2 lemons, juice and zest of
4 eggs, separated
50 g plain flour
125 g fresh blueberries
500 ml milk

Steps:

  • Preheat the oven to 180°C.
  • Lightly butter a 2 Ltr ovenproof dish.
  • With an electric whisk, beat the butter and sugar until pale and fluffy.
  • Add the lemon juice and rind, following by the egg yolks, one at a time until well blended- if the mixture looks a bit curdled at this stage don't worry.
  • Sift over the flour and stir in .
  • Rinse of the beaters then whisk the egg whites until they form soft peaks; don't allow them to get to stiff or they will be difficult to fold into the mixture and you'll end up losing all the air you've just beaten inches.
  • With a large metal spoon gradually fold the egg whites into the blueberry mixture.
  • Pour into the dish, place on a baking sheet and bake for 40-45 minutes until is risen, golden and firm to touch.

50g butter , softened, plus extra for greasing
200g caster sugar
zest 2 lemons or 2 limes or 1 grapefruit
100ml lemon , lime or grapefruit juice, or a mixture
3 large eggs , separated
50g plain flour
250ml milk
icing sugar , for dusting (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a medium-sized oval baking dish (we used 22 x 18cm) with butter. Combine the butter, caster sugar and zest in a food processor and whizz until the mixture is pale. Add the citrus juice, egg yolks, flour and milk, and whizz until well mixed - it may look a little curdled. Scrape into a bowl. Boil the kettle.
  • In a large, clean bowl, whisk the egg whites until firm but not stiff, then gently fold into the zesty mixture. Scrape into the baking dish and put in a roasting tin half-filled with hot water from the kettle. Bake for 35-40 mins until the top is lightly browned and set, but the pudding is still soft-ish underneath. Serve dusted with icing sugar, if you like.

Light, luscious, magic lemon pudding. Very quick and easy to do. Delicious for adults and great fun for the kids to make.

100 g self raising flour
100 g butter, softened
100 g caster sugar
2 eggs
1 lemon rind, grated
75 g caster sugar
2 teaspoons cornflour
1 lemon, juice of

Steps:

  • Place the Flour, butter, 100g of sugar, lemon rind and the 2 eggs in a bowl or mixer.
  • Mix or hand whisk together, add a little milk if needed, to make a soft dropping consistency. Place in a greased dish.
  • Put the juice of a lemon in to a jug and make up to 200ml with boiling water add the sugar and corn flour.
  • Now this is the magic part. Gently pour ON TOP of the pudding mixture in the dish.
  • Bake for 25 - 35 mins depending on how deep the dish is on Gas mark 5.It will now be golden and firm on the top and the sauce will be on the bottom.
  • Serve with Yoghurt or Cream. Enjoy!
