GRILLED HALIBUT
This is an easy and delicious grilled halibut recipe with honey and lemon will have you falling in love with fish all over again! Enjoy a healthy and delicious meal ready in just minutes whether you prepare it on an outdoor grill or on your stovetop.

- In a small mixing bowl, combine the butter, honey, lemon juice, soy sauce, pepper, and garlic.
- Portion your halibut by cutting it with a sharp knife into 3 or 4 pieces. A serving size of fish is 3 to 6 oz so portion it depending on the particular size of your filet. Brush both sides of each with the liquid mixture.
- Heat pan until it is sizzling hot (a drop of water sizzles and immediately evaporates when it hits the pan. Sear the halibut for 90 seconds on each side. Reduce the heat to medium and cook each side for an additional 2-3 minutes, until the fish can be easily flaked with a fork.

LEMON PEPPER GRILLED HALIBUT

- Place the lemon juice and garlic clove in a baking dish, and allow the garlic to infuse the lemon juice (about 10 to 15 minutes). Add the halibut and turn to coat. Refrigerate for 30 minutes to 1 hour.
- Preheat the grill to medium-high heat, making sure the cooking grates are clean. Brush the halibut with olive oil, then rub the fillet with the minced lemon peel. Season generously with pepper, then with salt to taste.
- Grill the halibut until cooked through, turning once, about 8 minutes total. The fillet should begin to flake at the touch of a fork. Remove from the grill, divide into serving-size portions, transfer to serving plates, and serve with lemon wedges.

Remove fish from marinade and season with salt and pepper to taste. Grill the steaks for 3 to 4 minutes on each side or to desired doneness.
GRILLED LEMON-BASIL HALIBUT
We love this dish, I serve it with baby carrots, steamed, mashed Gorgonzola cheese mashed potatoes and a small garden salad.

Steps:
- Mix lemon juice, olive oil, garlic, lemon peel and sun-dried tomatoes in blender or food processor.
- Stir in 2 tbsp fresh basil and the capers.
- Season to taste with salt and pepper.
- Pour half of vinaigrette over fish and marinate 15 to 30 minutes.
- When ready to grill fish, remove from marinade.
- Discard that marinade.
- Prepare the grill and spray with oil to keep fish from sticking.
- Grill fish until just cooked through 2 to 4 minutes per side.
- Divide fish among 4 plates.
- Stir remaining vinaigrette and drizzle over fish.

GRILLED HALIBUT WITH LEMON-HERB CRUST
I was looking for recipes to cook halibut seeing as I caught 2 from a deep sea fishing trip off of Vancouver Island. The first one I caught was 46 lb and the second one was 27 lb. I found this recipe from a Hellman's pamphlet. I made a couple of changes to suit our taste. We love doing halibut this way. The topping keeps the fish moist. We had our halibut cut into 1 lb. servings so we bbq it in one piece and then cut it into portions. The recipe says it serves 4 but my husband and I split it ourselves.

- In a small bowl, combine bread crumbs, parmesan, lemon zest, salt and pepper.
- Add melted butter and toss with a fork to form a crumbly mixture.
- In another small bowl, combine mayonnaise, green onion and tomato. (The recipe says to add 1 tablespoons chopped fresh tarragon but I never have it so I omit it).
- Arrange fish, skin side down, on a platter. Spread each fillet with mayonnaise mixture. Press crumbs mixture onto each fillet.
- Preheat barbecue on high for 10 minutes. Reduce to medium-high and barbecue fish skin side down until fish flakes easily with a fork and topping is nicely brown - about 10-12 minutes.
- Drizzle lemon juice over fillets and serve immediately.

LEMON PEPPER GRILLED SCALLOPS

- Preheat grill to high. Blend the BBQ sauce with the lemon juice and dill. Reserve.
- Toss the pepper with the lemon zest.
- Pat the scallops dry with paper towels. Remove and discard the knob shaped muscle on the side of each scallop. Brush each scallop with butter and sprinkle evenly with salt. Place on the grate and cook for 1 minute or until the scallops release easily when lifted with the tongs.
- Brush each scallop all over with the reserved BBQ sauce mixture. Sprinkle the topside of each scallop with the reserved pepper mixture and grill 2 minutes longer or until the scallops remove easily from the grate.
