2 tablespoons lemon-pepper
1 tablespoon dried basil
1 tablespoon poultry seasoning
2 tablespoons olive oil
6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

Crispy, golden skin and moist, flavorful meat make these Roasted Cornish Game Hens a total showstopper!

4 Cornish game hens (,patted dry with paper towels)
8 thin slices of butter
4 sprigs each of fresh rosemary and thyme (or herbs of choice plus some extra leaves of each)
4 large cloves garlic (,peeled)
1 lemon (,scrubbed well and cut into quarters)
Extra virgin olive oil
Salt and freshly ground black pepper
1/2 cup dry white wine
1/2 cup chicken broth

Steps:

  • Preheat oven to 450 degrees F.
  • Pat the hens dry with a paper towel. Use your index finger to loosen the skin on the top of the hen and slip a thin slice of butter under the skin on top of each breast. Add a few rosemary and thyme leaves (or herb of choice). Repeat for each hen. Put a quarter of a lemon in the cavity of each hen along with a clove of garlic and a sprig of fresh rosemary and thyme (or herb of choice). Truss the hens by tying the wings and legs.
  • Rub each hen all over with some extra virgin olive oil, then sprinkle with salt and freshly ground black pepper. Place then hens on the rack of a roasting pan lined with aluminum foil, spacing them out so they are as far apart from each other as possible. This will enable their skins to get browned and crispy.
  • Place the hens in the preheated oven and roast for 25 minutes.
  • While the hens are roasting, combine the chicken broth and wine in a bowl.
  • After the hens have been roasting for 25 minutes, reduce the oven temperature to 350 degrees F. Pour the broth/wine mixture over the hens and continue to roast for 30 minutes, basting the hens with the juices at the bottom of the pan every 10 minutes or less. The hens are done when an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. If you prefer darker skins, turn up the temperature to broil for a couple more minutes, watching closely to prevent burning.
  • Carefully remove the hens and pour the juices from their cavities into the roasting pan. Transfer the hens to a warmed platter, remove the trussing string, and tent with aluminum foil to keep warm. Pour the juices from the roasting pan into a saucepan and boil for about 5 minutes until the liquid is a thin sauce-like consistency. Serve the hens whole per guest or cut in half lengthwise and place cavity-down on each serving plate. Drizzle the sauce over the hens and garnish with fresh herb sprigs and a slice of lemon. Serve immediately.

A deliciously simple summer recipe, lemon pepper cornish game hens are dry-brined in lemon pepper seasoning and then roasted with a pile of veggies for a quick dinner!

1 Lemon (Zested)
1 tsp Black Pepper
1 tsp Garlic Powder
1 tbsp Salt
2 Cornish Game Hens
2 tbsp Olive Oil
1/4 tsp Salt
1/2 tsp Pepper
2 wedges Lemon
1 cup Baby Potatoes (halved)
1 Zucchini (sliced into 1/2 inch rounds)
1 Onion (sliced into wedges)
1/2 cup Mushrooms

Steps:

  • Combine the zest of 1 lemon, black pepper, garlic powder, and salt.
  • Wash both Cornish Hens and pat dry. Separate the skin from the flesh using your fingers. Make sure you leave pockets over the breasts, legs, and thighs. (*Do NOT remove the skin! Just make a pocket between skin and meat.)
  • Scooping small finger-fulls of brine, rub the brine in your pockets directly over the flesh of your birds. Remember to also rub brine on the outside skin of your birds and into the cavity.
  • Place in a plastic bag and rest in the fridge breast-side up for 24 hours.
  • Flip breast-side down for 24 hours.
  • Remove from the bag, set on a plate breast-side up, and return to the fridge for the last 12 hours.
  • OPTIONAL: Remove chicken from the fridge 2 hours before cooking and rest on the counter.
  • Preheat oven to 450°F. Line a sheetpan with parchment paper.
  • Slice potatoes, onions, and zucchini. If there are large mushrooms, slice as well.
  • Toss veggies in olive oil, fresh squeezed lemon juice, pepper and salt. Spread over the parchment paper, leaving room for the two hens.
  • Place the hens amongst the vegetables on the sheetpan.
  • OPTIONAL: You can choose to truss them or at least tie their legs together for modesty. (Kidding, but it does stop them from spreading and tearing that crispy skin!)
  • Roast in the oven for 45-50 minutes.
  • Remove and let cool for 10 minutes before serving!

4 tablespoons olive oil
4 (1-pound each) Cornish game hens, spatchcocked*
4 tablespoons butter
1 tablespoon, plus 1 teaspoon chopped fresh thyme leaves
5 lemons, 4 juiced, 1 thinly sliced
1/3 cup honey
1 tablespoon, plus 1 teaspoon soy sauce
4 teaspoons salt
1 teaspoon freshly ground black pepper
Fresh thyme sprigs, for garnish

Steps:

  • Position an oven rack in the center of the oven and preheat the oven to 375 degrees F.
  • Rinse the hens well under cool running water. Pat them dry with paper towels.
  • Melt the butter with the chopped fresh thyme in a small saucepan. In a small bowl, combine the juice of 4 lemons, honey, and soy sauce. Add the melted thyme butter and mix to combine. Reserve.
  • Heat a large cast iron pan on medium heat. Coat the bottom of the pan with olive oil.
  • Generously salt and pepper the hens and lay them skin-side down in the hot pan. Sear 4 minutes each side.
  • Pour 1/3 of the glaze on the bottom of a 9 by 13 baking dish. Transfer the hens, and their pan drippings, to the baking dish. Pour the remaining glaze over the hens and place in the oven for 30 minutes or until a thermometer reaches an internal temperature of 165 degrees F. Remove the dish from the oven and let them rest for about 5 minutes. Garnish with the sliced lemon and fresh thyme sprigs, and serve.

I saw this in a magazine and thought it looked absolutely delicious. It would make a very fancy romantic meal or even be great for a dinner party with friends. I love the idea of using Cornish hens because of the combo of dark and white meat. The hens are baked, but I want to try them on the grill when it gets warm.

4 (1 1/2 lb) rock cornish game hens, 6 lbs total
2 tablespoons oil
2 tablespoons lemon juice
2 tablespoons honey
2 teaspoons fresh thyme, chopped

1/8 teaspoon pepper

Steps:

  • Rinse and pat dry hens. Cut out the backbone and split through the breastbone. Trim any excess skin or fat.
  • Place oil in a shallow pan and heat oven to 400 degrees.
  • In a small bowl, whisk together lemon juice, honey, thyme, and oregano. Season hens with salt and pepper.
  • Once pan is heated, place hens skin side down and brush with half of the honey mixture.

1 bunch fresh thyme (about 1/2 ounce), plus more for garnish
2 lemons, halved, plus wedges for serving

3 tablespoons unsalted butter
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 450 degrees. Place hens in a roasting pan, breast sides up. Place 2 thyme sprigs and 1 lemon half in cavity of each hen. 1 lemon, quartered
4 sprigs fresh rosemary

  • Preheat oven to 450 degrees F (230 degrees C).

Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve.
