Ingredients

1/2 pound unsalted butter, at room temperature
1/2 cup granulated sugar
2 cups flour
1/8 teaspoon kosher salt
6 extra-large eggs at room temperature
3 cups granulated sugar
2 tablespoons grated lemon zest (4 to 6 lemons)
1 cup freshly squeezed lemon juice
1 cup flour
Confectioners' sugar, for dusting

Steps:

Preheat the oven to 350 degrees F.
For the crust, cream the butter and sugar until light in the bowl of an electric mixer fitted with the paddle attachment. Combine the flour and salt and, with the mixer on low, add to the butter until just mixed. Dump the dough onto a well-floured board and gather into a ball. Flatten the dough with floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 1/2-inch edge on all sides. Chill.
Bake the crust for 15 to 20 minutes, until very lightly browned. Let cool on a wire rack. Leave the oven on.
For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30 to 35 minutes, until the filling is set. Let cool to room temperature.
Cut into triangles and dust with confectioners' sugar.

1 1/2 cups graham cracker crumbs (10 to 12 whole crackers)
1/4 cup packed light or dark brown sugar
Pinch of salt
6 tablespoons unsalted butter, melted
8 oz cream cheese, softened
1 can (14 oz) sweetened condensed milk
1/2 cup freshly squeezed lemon juice
1 tablespoon grated lemon peel

Steps:

In medium bowl, mix Crust ingredients. Press evenly into ungreased 9-inch pie plate. Refrigerate 1 hour.
In large bowl, beat Filling ingredients until smooth. Spread evenly in crust. Refrigerate 6 hours or until set.
Serve with whipped cream if desired.

Preheat oven to 350°. Line a 9"x 13"x 2" baking pan with aluminum foil so that foil overhangs about 2 inches on short sides.
Using an electric mixer on medium speed, beat butter, confectioners' sugar, and vanilla until creamily. Reduce mixer speed to low. Add flour, hazelnuts, ginger, and salt. Mix well. Mix in egg yolk.
Press crust mixture evenly into bottom of prepared pan. Bake 10-15 minutes, or until lightly browned. Allow to cool completely on wire rack.
Using an electric mixer on medium-high speed, beat cream cheese until creamy. Add mascarpone, beating until combined. Add condensed milk, beating until smooth. Add eggs, one at a time, beating well after each addition. Add lemon zest and lemon juice. Beat until thick and smooth.
