4 whole chicken breasts, (skinless and boneless (cut into 1 inch pieces))
5 cloves garlic, (minced)
1 tablespoon fresh ginger, (grated)
1 tablespoon lemon zest
2 tablespoons lemon juice
1 tablespoon low sodium soy sauce
1 tablespoon vinegar
1 tablespoon corn starch
2/3 cup honey
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon olive oil
2 tablespoons parsley, (fresh, chopped for garnish (optional))
1 teaspoon sesame seeds, (for garnish (optional))
1-2 whole Thai red chilies, (thinly sliced, for garnish (optional))

Steps:

  • In a large skillet, over medium heat, add a little olive oil and saute the chicken until cooked through. Keeping the chicken pieces in a single layer and not overcrowding the pan is a great way to cook the chicken quickly and evenly. This should take about 5-7 minutes total. Season with salt and pepper.
  • While the chicken is cooking, whisk together all other ingredients until well combined.
  • Remove the cooked chicken from the skillet and set aside.
  • Pour the sauce mixture into the skillet, turn the heat to high, and whisk sauce while cooking until thickened. (The sauce should thicken to the consistency of cold maple syrup.)
  • Add the chicken back to the skillet and stir to combine and coat with the sauce. Keeping the heat high, and the chicken in a single layer - at least as much as possible - stir the chicken, cooking on all sides. The sauce will stick to the chicken and caramelize. This will take about 3-4 minutes.
  • Remove from skillet to serving plate. Garnish with sesame seeds, and freshly sliced Thai chilies. (Optional) Serve immediately.

8 chicken thighs
1 large onion, diced
3 cloves garlic, minced or 3 cubes Gefen Frozen Garlic
3 tablespoons walnut oil
salt, to taste
pepper, to taste
Gefen Paprika, to taste
4 tablespoons fresh lemon juice
1 tablespoon freshly grated ginger
2 tablespoons Manischewitz Honey

Steps:

  • Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • Clean chicken pieces and set aside.
  • Combine onion, garlic, walnut oil, salt, pepper, and paprika in a small bowl. Pour one-third of the mixture on the bottom of a large Pyrex pan. Lay chicken pieces on top.
  • Pour the remaining two-thirds of the mixture on top of the chicken, covering each piece.
  • Cover well with foil, place in the oven, and bake for one and 1/2 hours.
  • Meanwhile, mix together the lemon juice, ginger, and honey in a small saucepan. Stir over low heat until warm but not boiling. (Alternatively, microwave in a small bowl for 30 seconds, stir, and microwave for another 30 seconds.)
  • Spoon over chicken pieces and bake uncovered for half an hour, basting once or twice in the middle.
  • Remove from oven, cover, and let sit a few minutes before serving.

4 chicken breasts, halfs boneless, skinless
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper, freshly ground
2 teaspoons olive oil
1/2 cup chicken broth
1/4 cup lemnon juice
2 tablespoons brown sugar
1 tablespoon soy sauce
2 teaspoons fresh ginger, finely grated
1 teaspoon lemon zest
1/4 teaspoon dry mustard (I use 1/2 teaspoon)
1/4 cup chicken broth
1 1/2 teaspoons cornstarch
parsley (to garnish)

Steps:

  • Place chicken between two sheets of plastic wrap and pound with mallet or rolling pin to 1/4 inch thickness; combine the next 3 ingredients on a plate; press both sides of chicken breasts into flour mixture until well coated.
  • Heat olive oil in a large frypan on medium high; add chicken, cook for 2 to 4 minutes per side until no longer pink inside; transfer to plate, cover and keep warm.
  • Reduce heat to medium, add next 7 ingredients to same frypan; heat and stir scraping any brown bits from bottom until simmering.
  • Stir second amount of broth into cornstarch in a small bowl; add to lemon juice mixture; heat and stir until simmering and thickened; reduce heat to medium low, return chicken to frypan; turn to coat both sides, cook for 1 to 2 minutes until heated through.
  • Garnish with parsley and serve.

800 g chicken breasts
2 cups cooked rice
4 tablespoons olive oil
8 baby onions, peeled (shallots)
2 carrots, finely sliced
5 garlic cloves, crushed
1 inch fresh ginger, chopped
1 teaspoon lemon rind, grated
1 tablespoon Dijon mustard
1 teaspoon salt
6 tablespoons orange juice
2 tablespoons lemon juice
4 tablespoons honey
1/2 teaspoon pepper
1/2 teaspoon chili flakes
6 spinach leaves
1/2 yellow capsicum, diced
1/2 red capsicum, diced
1/2 green capsicum, diced
2 tablespoons butter
4 sprigs parsley

Steps:

  • In a bowl mix together the ginger, lemon rind, salt, mustard, orange juice and pepper, half of the chilli flakes, half of the honey, and the lemon juice.
  • Place the chicken breasts in this mixture and marinate for 1 hour.
  • In the meantime heat half of the olive oil in a pan and sautee the onions, and carrots till just glazed. Add the garlic stir and cook for 3 minutes Remove from the heat.
  • Preheat oven to 200 c .
  • Transfer the onion mixture to a baking dish, spread the spinach leaves over the onions and place the chicken on top of the spinach. Pour the remaining honey over the chicken and bake in the oven till tender and golden.
  • Back to the sautee pan. Heat the remaining olive oil in the pan and sautee the capsicums for a few minutes Add the rice to the pan, season with salt and toss all together.
  • Plate the chicken on top of the vegetables and glaze with the cooking juices. Serve the rice in a bowl, Sprinkle the remaining chilli flakes over the chicken and rice, garnish with the parsley.
  • Serve hot.

2 teaspoons olive oil
1/2 teaspoon grated ginger
1 small garlic clove, grated
1/2 cup walnut halves
1 tablespoon honey
1/2 teaspoon coarse salt
1 1/2 lbs boneless skinless chicken breasts
coarse salt & freshly ground black pepper
1/2 cup all-purpose flour
4 tablespoons olive oil
1 teaspoon grated ginger
1 garlic clove, grated
1/4 cup fresh lemon juice
1/4 cup chicken broth
2 tablespoons honey
1 thinly sliced scallion (about1 tablespoon, green part only)

Steps:

  • To make Walnuts: Place the oil, ginger and garlic in a small skillet. Slowly heat over medium-low until the garlic sizzles. Add the walnuts and honey. Cook on medium heat for about 2 to 3 minutes, adjusting the temperature until the honey boils and sticks to the walnuts and the walnuts turn golden. Sprinkle with the salt, adjusting to taste. Transfer to a side dish or a sheet of aluminum foil. Do not put on paper towels because they will stick.
  • To make Chicken: With a sharp knife, fillet the chicken breasts through the thickest part to make 8 cutlets.
  • Place them on a large piece of plastic wrap, sprinkle with salt and pepper, cover with a second sheet of plastic wrap, and gently but firmly pound the chicken with a meat pounder or the underside of a small, heavy skillet to make fillets of even thickness of 1/4 to 1/3 inch.
  • Spread the flour on a large plate and lightly dredge the cutlets; shake off the excess flour.
  • Heat 3 tablespoons of the olive oil in a large, broad skillet until hot enough to sizzle.
  • Add the cutlets a few at a time and cook for 1 to 2 minutes per side, until lightly browned.
  • As the cutlets are cooked, transfer to a platter and cover with foil to keep warm.
  • Discard the oil in the skillet and let the skillet cool slightly. Add the remaining 1 tablespoon of oil, ginger and garlic to the skillet. Heat and stir over medium-low heat just until the garlic sizzles. Add the lemon juice, chicken broth and honey. Heat, stirring to loosen any browned bits in the skillet, for about 3 minutes, or until the mixture boils and thickens. Pour the sauce over the chicken and sprinkle with the walnuts and the scallions.

1 lemon
1 (5 lb) roasting chickens
1 lemon, zest of, grated (then cut lemon into quarters)
1 orange, zest of, grated (then cut orange into quarters)
3 tablespoons peeled and grated fresh gingerroot
salt & freshly ground black pepper
5 tablespoons olive oil
4 tablespoons fresh lemon juice
1/2 cup fresh orange juice
3 tablespoons honey
orange section (to garnish)

Steps:

  • Preheat an oven to 400°F
  • Cut the lemon into quarters.
  • Rub the outside of the chicken with one of the lemon quarters then discard.
  • In a small bowl, stir together the lemon and orange zests and 1 tablespoon of the grated ginger.
  • Rub this mixture evenly in the cavity and put the lemon and orange quarters inside the bird.
  • Place the chicken on a rack in a roasting pan.
  • Sprinkle it with salt and pepper.
  • In the now-empty small bowl, combine the melted olive oil, lemon and orange juices, honey, and the remaining 2 tablespoons ginger and mix well.
  • Place the chicken in the oven on its side and roast about ten minutes; turn on its other side and roast ten minutes more.
  • Turn oven down to 350°F and turn chicken so it is roasting breast side up and roast till done--about another 40 minutesuntil the juices run clear when the thigh is pierced with a knife, about 1 hour.
  • Baste with the citrus juice mixture at least 4 times during cooking.
  • Transfer to a serving platter and let rest for 10 to 15 minutes.
  • Variation: Use 4 tablespoons pomegranate juice in place of the lemon juice.
