1-1/4 cups whole wheat flour
3/4 cup old-fashioned oats
1/4 cup packed brown sugar
2 tablespoons ground flaxseed
4 teaspoons baking powder
2 teaspoons ground cinnamon
1/4 teaspoon salt, divided
2 large eggs, room temperature
1-1/2 cups 2% milk
1/3 cup butter, melted
1 teaspoon vanilla extract
1-3/4 cups fresh or frozen thawed cranberries, divided
1/3 cup chopped walnuts, toasted
1/2 cup maple syrup
1/4 cup granulated sugar
1/4 cup water
1 tablespoon lemon juice

Steps:

  • Grease a Belgian waffle iron with cooking spray; preheat to medium-high. Whisk together first six ingredients and 1/8 teaspoon salt. In a separate bowl, whisk together eggs, milk, butter and vanilla. Add to flour mixture; stir until just combined. Fold in 3/4 cup cranberries and walnuts., Pour 1/3 cup batter into each quarter of waffle iron, spreading batter to edges. Close; cook until waffle iron stops steaming and waffle is golden brown, about 4 minutes. Repeat with remaining batter., Meanwhile, in a small saucepan, combine maple syrup, granulated sugar, water, remaining cranberries and remaining salt. Bring to a boil; reduce heat, and simmer, 6-8 minutes. Remove from heat; stir in lemon juice. Serve with waffles.

I love anything with lemon cranberry and when I finally got the plain waffle recipe down right, I thought I'd try making waffles with my favourite flavour. These turned out pretty well and I'm happy with them. They make great healthy snacks because they are yummy even without the syrup.

1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
3 eggs
7 tablespoons vegetable oil
1 1/2 cups milk
1 teaspoon vanilla extract
1/2 tablespoon fresh lemon juice
1/2 tablespoon lemon rind, 1 whole lemon
1/4 cup dried cranberries, cutt into smaller bits

Steps:

  • Separate the eggs. Beat the egg whites until frothy. Add 1 tbsp of sugar and beat until peaks starts forming. Set aside.
  • Spray Pam on waffle iron. Preheat waffle iron.
  • Sift the dry ingredients into a medium sized bowl. Add the egg yolks and the rest of the ingredients to the bowl. Beat until no lumps. Fold the stiff egg whites into the batter using a spatula.
  • When the waffle iron is hot, add ½ cup (about 2 soup laddles) of batter to the center of the waffle iron, quickly spread batter horizontally. Close the top and cook for 2-2'15 minutes.
  • Leftover waffles can be frozen. When you want to eat them later on, just pop them quickly into the toaster oven for a few minutes and they'll taste just like fresh waffles!

4 cups all-purpose flour
1 tablespoon baking powder
1/4 cup sugar, divided
1 teaspoon salt
6 eggs, separated
3 1/2 cups milk
1/2 cup vegetable oil
1 teaspoon lemon extract
1 lemon, zested
Oil, for waffle iron
1 cup chopped walnuts
Maple syrup, for serving

Steps:

  • Preheat the oven to 225 degrees F.
  • In a large bowl sift to combine the flour, baking powder, 2 tablespoons of the sugar and salt. In small bowl whisk the egg yolks until smooth, then add the milk, vegetable oil, lemon extract, and lemon zest. Make a well in the center of the dry ingredients. Pour in the liquid ingredients and gently stir the batter, with a wooden spoon, until just combined. Be careful not to overmix. You can use a hand beater or a stand mixer on low speed, if desired.
  • In a very clean bowl, whisk the egg whites until foamy. Add the remaining sugar and beat until soft peaks form. Gently fold the whites into the batter. Pour about 1/4 cup to 1/2 cup batter into an oiled waffle iron, sprinkle with walnuts, then close the iron. Cook until golden brown, about 5 minutes, depending on waffle iron settings. Transfer to a serving platter and keep warm in a low oven. Repeat with remaining batter. Serve warm with maple syrup.

3/4 cup all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup cranberries, rough chopped
1 cup low-fat plain yogurt
1/2 cup oil
1/2 cup brown sugar
Egg Beaters egg substitute (enough for two eggs worth)
2 teaspoons finely grated lemon peel
1 teaspoon cinnamon
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees F.
  • Mix oats, flour, baking powder, salt and chopped cranberries in one bowl; set aside.
  • In second bowl mix yogurt, oil, brown sugar, Egg Beaters, lemon peel, cinnamon and vanilla together. Fold all ingredients together in one bowl. Place batter into muffin tins (nonstick or lined with paper liners).
  • Bake at 350 degrees F for 35 minutes.
  • Allow to cool on wire rack out of the tins.

1/2 cup lemon curd
1/2 cup fresh raspberries
1/2 cup fresh blackberries
Powdered sugar

Steps:

  • Heat waffle maker; grease with vegetable oil or shortening. In large bowl, stir together Bisquick mix, egg, milk, lemon peel, lemon juice, 2 tablespoons oil and the granulated sugar until smooth.
  • Pour batter onto center of hot waffle maker. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops. Carefully remove waffle; cover to keep warm. Repeat with remaining batter.
  • To serve, place each waffle on a plate; spread with 1 tablespoon lemon curd. Sprinkle berries evenly on half of each waffle; fold other half of waffle over berries. Sprinkle with powdered sugar.

1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup sugar
1 lemon, zest of
1 lemon, juice of
1 cup fresh cranberries, halved
1 cup milk
1 egg
1/4 cup oil

Steps:

  • Preheat oven to 400ºF.
  • Stir flour, baking powder and salt together.
  • In a separate bowl, stir the sugar and the lemon zest together, and stir into the flour mixture.
  • In a measuring jug, mix the lemon juice with the milk and let sit for a few minutes before whisking in the egg and oil.
  • Make a well in the dry ingredients and pour in the wet ingredients. Stir until ingredients are moistened, then fold in the cranberries.
  • Scoop into greased 6-cup jumbo muffin pan and bake 23 minutes, making sure that finished muffins pass the toothpick test.
  • I have no idea how long these take in a 12-cup pan.

2 teaspoons baking powder
1/2 teaspoon baking soda

1 1/2 cups low fat cottage cheese (or 1 1/2 cups soft tofu)
1 1/2 cups low-fat buttermilk
1 tablespoon pure vanilla extract
2 cups unbleached flour
1 tablespoon baking powder
3 egg whites
1/2 cup sugar
1 cup fresh cranberries, chopped finely (or 1 cup leftover sweet cranberry relish from Thanksgiving)
2/3 cup slivered almonds, roasted and chopped (optional-can substitute pecans or walnuts)
3 tablespoons butter
1 cup honey
3 tablespoons freshly squeezed orange juice
2 tablespoons finely grated orange zest

Steps:

  • Preheat the waffle iron until very hot. Grease with cooking oil. If using the optional chopped nuts, lightly roast in dry skillet and set aside.
  • Chop the fresh cranberries finely and mix with the sugar.
  • Place the nonfat yogurt and cottage cheese in a blender and puree. Place in mixing bowl and stir in the buttermilk and vanilla extract.
  • Sift the flour and baking powder together. Whip the flour mixture into the buttermilk mixture. Stir in the sugared cranberries.
  • Beat egg whites to soft peaks and fold into batter gently.
  • To make the orange butter sauce, cook the butter, honey, and fresh orange juice over medium-high heat for 15 minutes. DO NOT boil. Stir in fresh orange zest.
  • Garnish waffles with nuts if desired. Serve warm.
