Four 6-ounce boneless, skinless chicken breasts
Kosher salt
1/2 cup all-purpose flour
2 cups panko
1 cup freshly grated Parmesan
3 large eggs, beaten
1/4 cup olive oil, plus more as needed
1 lemon, cut in to wedges for serving

Steps:

  • Cover the chicken breasts with plastic wrap and gently pound the chicken out to 1/4-inch thickness. Sprinkle the chicken with salt.
  • Heat a large skillet over medium-high heat to 360 degrees F.
  • Season the flour with salt in a small bowl. Combine the panko and Parmesan in a small bowl. Begin breading the chicken by dredging it in the flour, then the beaten eggs, then the panko mixture, shaking off any excess in between. Let sit at room temperature for up to 30 minutes.
  • Add the oil to the hot skillet, followed by 2 pieces of chicken. Cook until golden brown and crisp on both sides and the chicken is cooked through, 2 to 3 minutes per side. Remove the chicken to a wire rack and season it lightly with salt. Repeat with the remaining chicken, adding more oil to the pan as necessary.
  • Serve with a lemon wedge on top of each piece of chicken.

1 large egg
2 tablespoons lemon juice ((or juice of 1/2 a lemon))
2 teaspoons minced garlic
1/2 tablespoon fresh chopped parsley
1/2 teaspoon each salt and pepper (, to season)
1/2 cup breadcrumbs
1/3 cup fresh grated parmesan cheese
4 skinless (, boneless chicken breasts (or thighs))
8-10 (1 pound | 500 g) baby potatoes, quartered
1/2 cup butter (, melted)
2 teaspoons minced garlic
salt to taste
1 pound | 500 g green beans (, cut into thirds)

Steps:

  • Preheat oven to 200°C | 400°F. Lightly grease a baking tray / sheet with cooking oil spray, or a light coating of oil. Set aside.
  • In a large bowl, whisk together the egg, lemon juice, 2 teaspoons garlic, parsley, salt and pepper.
  • Dip chicken into egg mixture, cover and allow to marinade in the refrigerator for 30 minutes to an hour (if time allows).*
  • In another bowl, combine the breadcrumbs with the parmesan cheese.
  • Dredge the egg coated chicken in the breadcrumb/parmesan mixture, lightly pressing to evenly coat.
  • Place chicken onto the baking sheet / tray and lightly spray with cooking oil spray. Arrange the potatoes around the chicken in a single layer. Mix together the butter, 2 teaspoons garlic and salt to taste, and pour half of the butter mixture over the potatoes. Toss to evenly coat.
  • Bake in preheated oven for 15 minutes.
  • Remove baking tray from the oven and carefully flip each chicken breast. Move the potatoes to one side and place the green beans around the chicken on the other side of the baking sheet. Pour over the remaining garlic butter and return to the oven to broil (or grill) on medium-high heat for a further 10 minutes, or until chicken is golden and crisp, and potatoes are cooked through.
  • Sprinkle with fresh chopped parsley (optional), and serve immediately.

6 tablespoons cold unsalted butter, cut into tablespoons
2 medium shallots, minced
1 cup heavy cream
1 cup dry white wine
1 cup chicken stock or 1 cup low-sodium broth
2 tablespoons chopped fresh sage
2 teaspoons fresh lemon juice
1 pinch cayenne pepper
salt and fresh ground white pepper
1 cup seasoned dry bread crumb
1/2 cup panko breadcrumbs
1/4 cup freshly grated parmigiano-reggiano cheese
1 finely grated lemon, zest of
1 1/2 teaspoons dried thyme
2 large eggs
8 (6 ounce) boneless skinless chicken breasts, pounded 1/4 inch thick
salt & freshly ground black pepper
vegetable oil, for frying
1/4 cup chopped parsley

Steps:

  • To prepare the sauce: In a medium saucepan, melt 1 tablespoon of the butter. Add the shallots and cook over moderate heat until softened, 4 minutes. Add the cream, wine and stock and bring to a boil. Simmer over moderate heat until reduced to 1 1/2 cups, 20 minutes. Remove from the heat and whisk in the remaining 5 tablespoons of butter, 1 tablespoon at a time. Add the sage, lemon juice and cayenne. Season with salt and white pepper and cover.
  • Meanwhile prepare the chicken: In a shallow bowl, combine the bread crumbs, panko, cheese, lemon zest and thyme. In another shallow bowl, beat the eggs. Season the eggs and chicken cutlets with salt and black pepper. Dip each cutlet in the egg mixture and let the excess drip off, then dredge in the bread crumbs. Transfer the breaded cutlets to a baking sheet lined with parchment paper.
  • Preheat the oven to 325°. In each of 2 large skillets, heat 1/4 inch of oil until shimmering. Working in batches, add the breaded cutlets and cook over moderately high heat for 1 minute. Lower the heat to moderate and fry, turning once, until the cutlets are browned and crisp, about 4 minutes. Transfer to paper towels to drain, then keep warm in the oven on another baking sheet while you fry the rest.
  • Rewarm the sauce over moderate heat, stirring constantly. Arrange the cutlets on plates, sprinkle with the parsley and serve with the sauce.

4 chicken boneless skinless chicken breasts
peanut oil or canola oil, for frying
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup all-purpose flour
2 eggs, beaten with 1 tablespoon of water
1 cup breadcrumbs
1/2 cup parmigiano-reggiano cheese or 1/2 cup asiago cheese, grated
1/2 cup extra virgin olive oil
2 tablespoons lemon juice
2 anchovy fillets, patted dry
1/4 teaspoon ground black pepper
1/8 teaspoon salt
2 tablespoons capers, drained

Steps:

  • Lemon Caper Sauce: In a blender, blend olive oil, lemon juice, anchovies, pepper and salt. Pour into a serving bowl and set aside.
  • Chicken: Cover chicken with food-grade plastic wrap and beat with a mallet until breasts are thin, about 1/4 inch thick. Season with salt and pepper.
  • Place flour in a dish, eggs in a separate dish and the breadcrumbs mixed with cheese in another dish. Dredge each chicken breast in flour, then eggs, then breadcrumb-cheese mixture. Press to coat. .
  • In a large frying pan, pour enough oil to reach 1/4 inch deep in the pan and heat over high heat to 350 degrees.
  • Working in batches so not to over crowd the pan, fry each breast 3 to 4 minutes a side until golden and cooked through. Place chicken in a 225-degree oven until ready to serve.
  • Drizzle prepared sauce over chicken when serving.
