2 cups reduced-fat plain Greek yogurt
1/4 cup agave nectar or honey
2 tablespoons lemon juice
2 teaspoons grated lemon zest
2 tablespoons chia seeds or ground flaxseed
1 teaspoon vanilla extract
1 cup fresh raspberries
1 cup fresh blueberries

Steps:

  • Combine the first 6 ingredients. Layer half of the yogurt mixture into 4 small parfait glasses or custard cups. Top with half of the berries. Repeat layers.,

Steps:

  • Mix 2 cups flour, 1/2 cup sugar, 1 1/2 teaspoons baking powder, 1 teaspoon chia seeds and 1/2 teaspoon each baking soda and salt. In a separate bowl, whisk 3/4 cup each milk and vegetable oil, 2 eggs, 1 tablespoon lemon zest and 1 teaspoon vanilla; fold into the flour mixture. Line 12 muffin cups with paper liners; coat with cooking spray. Add the batter; bake at 350 degrees F until a toothpick comes out clean, 20 to 25 minutes.

1 tablespoon baking powder
1/4 cup sugar or 1/4 cup coconut sugar
1/4 cup maple syrup
1 1/2 tablespoons chia seeds
1/2 teaspoon salt
3/4 cup almond milk
1/2 cup oil or 1/2 cup applesauce
2 lemons

Steps:

  • Preheat oven to 350 degrees.
  • Place muffin liners in muffin tin. Makes approximately 12 muffins.
  • In a large bowl combine the flour, baking powder, salt and sugar.
  • In a smaller bowl combine the maple syrup, milk, lemon juice and zest and the oil or applesauce.
  • Stir the wet ingredients into the dry. Fold in the Chia seeds.
  • Fill muffin tins with the batter.
  • Bake for 18 minutes.
