LEMON BUTTER TILAPIA
This is my take on a James Beard recipe. So simple and quick, very few ingredients. This is the dish that turned me into a fish lover. Trick is to have everything ready to go when you start. It's fast from start to table.

Steps:
- Chop parsley and put aside. Juice lemon and put aside.
- Melt 2 tbs. butter and the olive oil in non-stick skillet
- Lightly dust fish fillets in flour, season if desired with salt and pepper.
- When butter stops bubbling, add fish and saute 3-4 min on first side.
- Turn and finish second side 3-4 min, until done and flaky. Remove to plate and keep warm.
- Add remaining 2tbs. butter to skillet and melt.
- Stir in lemon juice and parsley quickly and pour immediately over fish.
- Serve and enjoy.

- Heat oven to 325°F.
- Juice 1/2 of the lemon, and cut the other half into thin slices.
- Place fillets in a glass baking dish. Season with salt and pepper.
- Top each fillet with 1 tablespoon butter.
- Sprinkle lemon juice and dill on top of each fillet.
- Spread lemon slices over top.
- Bake for 10-15 minutes.

- Coat fish on both sides with flour. Shake off excess.

- . Preheat oven to 375°. Sprinkle fillets with salt and pepper.
- Cut parchment paper into 4 (13- x 9-inch) rectangles. Place 3 lemon slices crosswise in center of 1 parchment rectangle. Top with 1 fillet. Repeat with remaining lemon slices, fillets, and parchment paper rectangles.
- Sprinkle fillets evenly with carrot, dill, and parsley. Top each fillet with 1/2 tablespoons butter. Fold 1 side of parchment paper over fillets; tuck excess parchment under fillets, pressing folds to form a crease.

DILL BUTTER TILAPIA
Really simple recipe with very few ingredients, but the combination of butter, garlic and dill works really well.

- Over medium heat in a small sauce pan, melt butter.
- Add garlic, simmer for 2-3 minutes.
- Add dill, mix well, let cook another 2 minutes.
- Meanwhile, preheat oven to 375F.
- Rince tilapia under cold water, pat dry with a paper towel.
- Place tilapia in a deep baking dish.
- Pour dill butter mixture over filets.
- Cook for 15-20 minutes, or until fish flakes easily.
