Lemon Curd Tartlets image

These Lemon Curd Tartlets are a delicious and fancy little dessert to serve for a party or afternoon tea. Buttery, crunchy and oh so tangy, these Mini Lemon Tarts combine a homemade shortcrust pastry and creamy lemon curd into a delicious bite!

250 gr (1 2/3 cup) AP / Plain Flour
50 gr (1/2 cup) Icing Sugar (sifted)
1 pinch Fine Salt
120 gr (1/2 cup) Unsalted Butter (cold)
1 Egg (at room temperature)
4 Egg Yolks
100 gr (1/2 cup) Caster Sugar (or fine white granulated sugar)
125 ml (1/2 cup) Lemon Juice (about 3 large lemons)
75 gr (5 tbsp) Unsalted Butter (at room temperature)
1 Lemon Zest (optional)

Steps:

  • Place the Flour, Icing Sugar and Salt in the bowl of your Food Processor and pulse to mix (see note 1 if making by hands). Add the cold Butter cut into small cubes, then mix to get very small crumbs.
  • Whisk the egg in a separate bowl and add it to the food processor. Slowly pusle until a dough starts to come together (see note 2).
  • Bring the dough together into a ball and roll between two sheets of baking paper to be about 3mm or 1/8inch thick. Place on a flat tray and leave in the fridge to chill and rest for at least 1 hour, or up to 24 hours.
  • Remove the baking paper and cut out small rounds of pastry using a round or fluted cookie cutter (see note 3). Gently slide each piece of dough into a muffin pan, pressing on the bottom and the edges to remove any air bubbles that could be trapped under the pastry. Prick the bottom with a fork and place back in the fridge to rest and chill for at least 1 hour, or up to 24 hours.
  • Preheat your oven on 160'C/325'F and place the muffin pan in the freezer while the oven is preheating.
  • Line each tartlet shells with a small piece of baking paper and fill with baking beads, rice or beans. Bake for 15 minutes, then remove the weights and baking paper and bake for another 15 minutes, or until golden and dry to the touch. Set aside to cool down completely.
  • Place the Egg Yolks, Sugar and Lemon Juice in a small pot. Whisk to combine then turn on very low to low heat. Whisk for a few minutes or until the liquid looks like it is starting to thicken - about 3 to 5 minutes.
  • Cut the butter into small cubes and slowly add them to the pot. Whisk until melted and combined each time before adding more. Add the Lemon Zest
  • Cook on low heat for 5 to 15 minutes or until the curd has thickened. Continuously whisk to avoid lumps (see note 4).
  • To check if the curd is cooked, dip the back of a spoon into the curd then draw a line in the curd with your fingers (be careful, it will be hot). Tip the spoon down and check if any of the curd is dripping down over the clear line. If the line stays clear, the curd is ready. If the curd pours over the line, it needs to cook for longer.
  • While still warm, pour the curd into the tartlet shells. Gently tap each tartlet against a hard surface to remove any air bubbles, then place in the fridge to set for at least 2 to 3 hours (see note 5).

Good things come in small packages - like these delicate little lemon tartlets. Tea, please! Equipment and preparation: for this recipe you will need 12 x 7.5cm/3in fluted mini tartlet tins, a 10cm/4in round cutter and a piping bag fitted with a plain writing nozzle.

175g/6oz plain flour
100g/3½oz cold butter, cut into small cubes
25g/1oz icing sugar
1 free-range egg yolk
4 large free-range eggs
100ml/3½fl oz double cream
150g/5½oz caster sugar
3 lemons, juice and zest
icing sugar, for dusting
100g/3½oz plain chocolate (36% cocoa solids), chopped

Steps:

  • For the pastry, place the flour, butter and icing sugar into a food processor. Pulse briefly until the mixture resembles breadcrumbs, then add the egg yolk and one tablespoon of cold water.
  • Pulse again until the mixture sticks together in clumps then tip onto a work surface and gather it into a ball with your hands. Knead the pastry just two or three times to make it into a smooth ball. Wrap it in cling film and place in the refrigerator for 15 minutes.
  • Grease 12 x 7.5cm/3in fluted tart tins.
  • Roll out the pastry to a thickness of 5mm/¼in. Cut out circles with a 10cm/4in round cutter and use to line the tins, re-rolling the pastry as necessary. Place the tart cases in the fridge to chill.
  • Preheat the oven to 200C(180C fan)/400F/Gas 6.
  • Cover the base of the tartlets with baking parchment or foil and fill with a few baking beans.
  • Bake blind for seven minutes then remove the parchment and beans.
  • Return the pastry cases to the oven for another 4-5 minutes or until they are light golden-brown and completely dry. Set aside to cool while you make the filling. Reduce the oven temperature to 170C(150 fan)/325F/Gas 3.
  • For the filling, break the eggs into a large bowl and whisk together with a wire whisk. Add the rest of the filling ingredients and whisk again until they are all well-combined. Pour the filling mixture into a jug, then into the cooled baked pastry cases. To prevent it spilling as they go into the oven, pour in most of the filling so it almost fills the tarts, carefully sit the baking sheet and tarts on the oven shelf, then top up with the rest of the filling to completely fill the tarst.
  • Bake for about seven minutes, or until just set but with a slight wobble in the centre.
  • Leave to cool slightly then carefully ease the tartlets from their tins an place on a wire rack to cool completely.
  • For the decoration, melt the chocolate in a bowl set over a pan of simmering water. (Do not allow the bottom of the bowl to touch the surface of the water.)
  • Spoon the melted chocolate into a small disposable piping bag. Snip off the end and pipe the word 'citron' or a decoration of your choice on top of the tarts.

1/2 cup confectioners' sugar
1-1/2 cups all-purpose flour
FILLING:
3/4 cup sugar
1 tablespoon grated lemon zest
3/4 cup lemon juice
3 large eggs, room temperature
3 large egg yolks, room temperature
4 ounces cream cheese, softened
1 tablespoon cornstarch
Sweetened whipped cream, optional

Steps:

  • Preheat oven to 325°. In a large bowl, cream butter and confectioners' sugar until smooth. Gradually beat in flour. Press dough onto bottom and up sides of an ungreased 11-in. fluted tart pan with removable bottom. Refrigerate 15 minutes., Line the unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake until edges are lightly browned, 18-22 minutes. Remove foil and weights; bake until bottom is golden brown, 5-7 minutes longer. Cool on a wire rack., In a large bowl, beat sugar, lemon zest, lemon juice, eggs, egg yolks, cream cheese and cornstarch until blended; pour into crust. Bake until filling is set, 18-22 minutes. Cool on a wire rack. If desired, serve with whipped cream. Refrigerate leftovers.

3 lemons, zest grated, juiced
3 large eggs
1/2 cup plus 1 tablespoon sugar
3 tablespoons unsalted butter, cut into 1/2-inch pieces
1 (9 1/2-inch) tart shell made from Sweet Tart Dough, prebaked, recipe follows
1 lemon
1/4 cup Apricot Glaze
Mint leaves
1 cup plus 1 tablespoon confectioners' sugar
1 3/4 cup all-purpose flour
Pinch salt
9 tablespoons unsalted butter, softened
1 large egg

Steps:

  • Preheat the oven to 325 degrees. Fill a medium saucepan one-third full with water and bring to a simmer. Put the zest and lemon juice in a medium bowl and whisk in the eggs. Add the sugar and butter and place the bowl over the simmering water; the water must not touch the bottom of the bowl. Cook, whisking constantly, until the butter is completely melted and the mixture is smooth. Remove the bowl from the pan of hot water and allow the mixture to cool for 15 minutes. Place the pre - baked tart shell on a baking sheet. Pour the filling into the shell and bake the tart for 8 to 10 minutes, or until the center is just set. Cool the tart completely on a wire rack. Make the garnish: Using a channel knife, cut 6 lengthwise grooves in the lemon, removing 6 strips of rind. Cut a crosswise slice from the center of the lemon and place it in the center of the tart. Slice the remaining lemon and place it in the center of the sections into half and then cut the sections into halfmoons. Arrange the slices around the edge of the tart with the cut sides out. If necessary, rewarm the apricot glaze over low heat or in the microwave. Using a pastry brush, lightly brush the top of the tart with the warm apricot glaze. Garnish with a few mint leaves.
  • Sift together the confectioners' sugar, flour, and salt into a bowl. Place the butter in a food processor and process until smooth, about 15 seconds. Scatter the flour mixture over the butter, add the egg, and process just until the dough forms a mass; do not overmix. Turn the dough out onto the counter and divide it into 2 pieces. Shape each half into a disc, wrap in plastic wrap, and refrigerate.

3 medium lemons, zested and juiced
3 tablespoons butter
1 pint raspberries
2 tablespoons sugar
12 frozen phyllo tart shells
1/2 cup heavy cream
Splash vanilla extract
12 small fresh mint leaves

Steps:

  • For the curd: Whisk together the sugar and eggs in a heatproof bowl until the sugar is completely dissolved. Reserve 1 teaspoon of the lemon zest for garnish, then stir the lemon juice and remaining zest into the sugar-egg mixture. Put the bowl over a double boiler and cook, whisking, until the mixture thickens, 6 to 8 minutes. Remove from the heat and whisk in the butter. Scrape into a clean bowl and press plastic wrap directly onto the surface of the curd. Refrigerate for at least 2 hours.
  • For the raspberry sauce: Reserve 12 raspberries for garnish and put the rest into a small pan. Add the sugar and cook over medium-low heat, breaking up the raspberries to release their juices. Do not let boil. Strain the juice into a bowl and let cool; discard the solids.
  • For the tarts: Preheat the oven to 350 degrees F. Put the phyllo shells on a baking sheet and bake until lightly browned, 3 to 5 minutes. Remove the shells to a rack to cool.
  • To assemble the tarts: Spoon a small amount of the raspberry sauce into each tart shell. Whisk the cream with a spoonful or 2 of the raspberry sauce and a splash of vanilla. Fill each shell with the lemon curd and then top with a dollop of whipped cream and a whole raspberry. Sprinkle with some of the reserved lemon zest and add a mint leaf.
