This is a traditional sauce to be served with Plum Pudding. Yummy served later on hot raisin toast.

Steps:
- In a shallow bowl, combine flour, salt and pepper. Dredge chicken breasts in flour mixture and shake off excess.
- In a large frying pan, heat butter and oil over medium heat.
- Add chicken and cook, turning, until opaque throughout, about 6 minutes.
- Remove and set aside. Add shallots to the pan and cook until just soft, about 2 minutes.
- Return chicken to pan along with any juices that have collected.
- Increase heat to medium high; add lemon juice and brandy. Ignite carefully with a match.
- After flames subside, transfer chicken and sauce to a serving platter. Sprinkle with chopped parsley and serve.

- Gather the ingredients.
- With a standing or hand-held mixer , beat the softened butter until creamy.
- Add the powdered sugar and mix while scraping the sides of the bowl, so the sugar and butter come together evenly.
- Add the vanilla extract, brandy, rum, or whiskey, and spices.
- Mix, scraping the sides again, to combine.
- Spoon the sauce into a bowl.
- Serve immediately and enjoy.

- 1. Start by heating your pan up on medium. Add wine and bring it to a boil. Add heavy cream and return to a boil. SLOWLY add butter in chunks while whisking. Reduce the sauce by 1/3 or so. Add lemon juice. Turn off heat and whisk and let rest for 5-10 minutes.

- Zest 1 lemon into large pieces using a knife. Place lemon zest in a saucepan; top with 1 cup water and sugar. Bring lemon zest mixture to a boil, stirring occasionally, until sugar dissolves and liquid is syrupy, 5 to 10 minutes. Remove saucepan from heat and cool; remove and discard lemon zest.
- Stir lemon juice and vodka together in a pitcher; pour in lemon syrup. Stir in enough water to fill the pitcher.

LAURIE COLWIN'S GINGERBREAD
The writer Laurie Colwin had an obsession with gingerbread, publishing a few different essays and recipes exploring its charms. In the essay that precedes this moist, cakelike rendition, from her book "Home Cooking," she writes that it is "home food" - not fancy restaurant food, that is, but soothing cold-weather food that is simple to make, ideal for an afternoon spent holed up indoors. The essay is also a paean to Steen's cane syrup, from Louisiana, which comes in cheerful yellow cans. Steen's is easy to find online, if not at your local supermarket, but the recipe does not suffer if you use another brand of light molasses instead. - Heat oven to 350 degrees. Butter a 9-inch cake pan and set aside. Cream remaining 4 ounces butter with the brown sugar. Beat until fluffy, add molasses, then beat in eggs.
- Add flour, baking soda, ground ginger, cinnamon, cloves and allspice.
- Add lemon brandy or vanilla extract and buttermilk and turn batter into pan.
- Bake for 20 to 30 minutes (check after 20 minutes). Cool on a rack.
