I can't believe Thanksgiving is tomorrow. Well, let me back up: I can't believe it's November.

Number Of Ingredients 8

1 1/2 c. Leftover Turkey, Shredded
1/2 c. Leftover Cranberry Sauce
1/4 c. Chopped Pecans
2 tbsp. Fig Or Apricot Jam
4 tbsp. Dijon Mustard
8 slices (thick) Swiss Cheese
8 slices Sourdough Or Other Bread
8 tbsp. Butter

Steps:

  • Spread all bread slices on one side with fig spread and Dijon. Top four slices with turkey.Mix together cranberry sauce and pecans and spread over the turkey. Top with slices of Swiss cheese. Top with other four slices of bread with the jam/Dijon side down.Spread both sides generously with softened butter and toast in the panini press (or in a heavy skillet, pressing with a spatula as they cook.) Slice in half and serve.

2 tablespoons Dijon mustard
2 slices sourdough sandwich bread
2 slices Swiss cheese
1/3 cup shredded leftover roast turkey
3 tablespoons leftover cranberry sauce
1/3 cup leftover dressing
2 tablespoons leftover giblet gravy
2 tablespoons butter, at room temperature

Steps:

  • Spread the mustard on both slices of bread, then lay a slice of cheese on each piece. On one slice, arrange the turkey and the cranberry sauce. On the other slice, lay on the dressing and spoon the gravy over the top.
  • Carefully unite the two halves into one sandwich, then spread the top side of the bread with 1 tablespoon of the butter.
  • Invert the sandwich, butter-side down, onto a hot panini maker (or a grill pan or skillet over medium-low heat; see Cook's Note). Spread the top with the remaining 1 tablespoon butter.
  • Close the panini maker and grill until the bread is crusty and golden, the fillings are hot, and the cheese is melted. (If using a grill pan or skillet, flip the sandwich halfway through to grill on the other side.)
  • Pull the sandwich off the heat and slice it in half--this sandwich is to die for!

4 slices sourdough bread
2 slices swiss cheese
1/2 lb deli turkey
1 bunch arugula or 1 bunch Baby Spinach, stems trimmed
2 tablespoons raspberry jam

Steps:

  • Brush one side of 2 bread slice with butter.
  • Place slices, butter sides down on panini grill; top with turkey, cheese and arugula. Spread 2 bread slices with jam and top sandwiches, jam side down. Brush remaining bread slices with butter.
  • Close grill and cook sandwiches over medium heat 4 to 5 minutes, until bread is crisp and cheese is melted.

I found the recipe in our local newspaper, and it is really good for the leftover turkey at holiday time, it makes something just a little different to use up the leftovers -

4 slices aged cheddar cheese
4 slices whole grain bread
1 mcintosh apple, peeled, cored and thinly sliced
4 slices smoked turkey breast or 4 slices leftover turkey breast, will do
2 teaspoons honey mustard
1/2 cup Baby Spinach

Steps:

  • Heat a panini press or a cast iron pan over medium-high heat. Divide cheddar evenly between two slices of whole grain bread, followed by 2 slices apple and 2 slices of smoked turkey.
  • Spread remaining two slices of bread with honey mustard and place on top of the turkey (mustard side down).
  • Place sandwiches in heated panini press or cast iron pan and grill for 4-5 minutes, turning as necessary to evenly brown the bread on both sides of the sandwich.
  • Once cheese is melted and bread is golden brown, remove sandwiches from the heat. Remove tops of sandwiches, add spinach. replace tops and serve immediately.

¾ cup chopped red onion
1 tablespoon dried thyme
½ cup mayonnaise
¼ cup coarse-grain brown mustard
8 slices country style French Bread
6 tablespoons butter, softened
1 pound thinly sliced roast turkey
8 slices tomato
8 slices Swiss cheese

Steps:

  • In a small bowl, stir together the red onion, thyme, mayonnaise and mustard. Spread some of this mixture onto one side of each slice of bread. Spread butter onto the other side of the slices of bread.
  • Heat a large skillet over medium heat. Place 4 slices of the bread into the skillet with the butter side down. On each slice of bread, layer 1/4 of the sliced turkey, then 2 slices of tomato, and top with 2 slices of Swiss cheese. Place remaining slices of bread over the top with the butter side up. When the bottoms of the sandwiches are golden brown, flip over, and cook until golden on the other side.
