15-MINUTE MEATLOAF MELTS
Satisfy your meat loaf craving in just 15 minutes by making thin patties and broiling them. These quick and comforting sandwiches have all the elements of a blue plate special-meat loaf, potatoes (in the form of a potato bun) and green beans. They're terrific just the way they are, but adding a couple strips of leftover bacon to each sandwich would be great too!

- Preheat the broiler.
- Grate the shallot over a large bowl. Add the meat loaf mix, breadcrumbs, half the ketchup, egg, Worcestershire sauce, 1 teaspoon salt and several grinds of pepper. Use your hands to thoroughly combine the mixture, then divide it into 4 equal balls and shape each into a patty a little less than 1/2 inch thick. Arrange on a baking sheet and broil until the tops of the patties begin to firm up and brown, 3 to 4 minutes. Flip the patties with a metal spatula and continue to broil until cooked through, 2 to 3 minutes more.
- Brush each patty with some of the remaining ketchup and top each with a slice of cheese. Continue to broil until the cheese melts, about 30 seconds more.
- While the patties broil, put the green beans, butter, 1 tablespoon water, 1/2 teaspoon salt and a few grinds of pepper in a medium microwave-safe bowl. Cover and microwave until hot, 4 to 5 minutes.
- Open the buns and spread the cut sides with mayonnaise. Place a lettuce leaf and patty in each. Serve each sandwich with a small bowl of green beans.

Steps:
- Mix egg, bread crumbs, salt, and black pepper together in a large bowl. Break ground beef into small pieces and add to the bowl; mix well with your hands until beef is evenly moistened. Shape the beef mixture into four patties.
- Heat a skillet over medium heat. Cook patties in hot skillet until completely browned, 2 to 3 minutes per side; remove to a platter and drain grease from skillet.
- Return skillet to medium heat. Stir tomato sauce, green onions, brown sugar, Worcestershire sauce, and yellow mustard together in the skillet. Gently lie the patties into the sauce; bring liquid to a boil, reduce heat to medium-low, and simmer until the patties are very firm, hot, and grey in the center, about 10 minutes more. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

LEFTOVER MEATLOAF PATTY MELT
Steps:
- Butter one side of each piece of bread and set aside. In a small frying pan, saute onion slice until soft and golden. It is best to heat the meatloaf in the microwave for about 30 seconds before making your sandwich.
- Take bread and place one slice, butter side down, in a frying pan. Sprinkle with parmesan cheese, top with thinly sliced meatloaf and then onion (onion is optional if you are cooking for kids, try tomato slices instead). Sprinkle a little more parmesan cheese on top and then place the other slice of bread, butter side up, on top.
- Cook on medium heat in frying pan until golden brown and cheese is melted. Flip and cook other side the same way. Slice and enjoy!!
