1 (10.75 ounce) can condensed cream of chicken soup
8 ounces sour cream
1 teaspoon seasoned salt
½ teaspoon black pepper
8 ounces frozen mixed vegetables
½ cup chopped onion
1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
1 ½ pounds leftover meatloaf, sliced
1 ½ cups shredded sharp Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine the cream of mushroom soup, cream of chicken soup, sour cream, seasoned salt, and pepper. Stir in the mixed vegetables and onion. Add the tater tots and stir until they are coated with the mixture. Pour into the prepared baking dish. Press the meatloaf slices into the top of the tater tot mixture.
  • Bake in preheated oven 15 minutes; sprinkle the Cheddar cheese over the top, and bake 35 minutes until the cheese browns. Remove from the oven and let stand 10 minutes before serving.

4 slices leftover meatloaf, or to taste
1 cup frozen corn
1 (15 ounce) can tomato sauce
1 dash Italian seasoning
1 dash dried basil
1 dash dried oregano
1 dash onion powder
1 dash garlic powder
salt
1 dash ground black pepper
1 tablespoon white sugar
¼ cup grated Parmesan cheese
⅓ cup Italian bread crumbs
½ cup shredded Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • While pasta cooks, mash meatloaf in a 2 1/2-quart casserole dish. Add corn and mix.
  • Combine tomato sauce, Italian seasoning, basil, oregano, onion powder, garlic powder, salt, pepper, and sugar in a bowl. Stir well.

1 1/2 cups refrigerated shredded hash brown potatoes
1 onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
3 eggs, lightly beaten
2/3 cup Italian seasoned breadcrumbs
1/3 cup ketchup
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs lean ground beef
1/3 cup ketchup

Steps:

  • Preheat oven to 375 degrees F. Place potatoes in a large bowl and set aside.
  • In heavy skillet over medium heat, saute onion and garlic in olive oil until tender, about 5 minutes. Add to potatoes along with eggs, bread crumbs, 1/3 cup of the ketchup, salt and pepper and mix well until thoroughly combined. Add ground beef and mix gently just until combined.
  • On a broiler pan, shape meatloaf mixture into an 8 x 4-inch loaf. Spread remaining 1/3 cup ketchup over top of loaf. Bake in preheated oven for 70 to 75 minutes or until center is no longer pink and instant read thermometer reads 160 degrees when inserted in center of loaf.
  • Let stand, covered, 15 minutes before slicing to allow juices to settle.

1 onion (chopped)
4 cloves garlic (minced)
1 cup carrots (frozen, sliced)
2-3 cups meatloaf (leftover, crumbled)
2 tablespoons flour
1 cup beef broth
1/2 cup ketchup
2 tablespoons mustard
1 tablespoon Worcestershire sauce
1 teaspoon marjoram leaves (dried)
Salt and pepper (to taste)
1 (20-ounce) package mashed potatoes (refrigerated)
1 cup peas (frozen)
1/3 cup sour cream
1/3 cup Parmesan cheese (grated)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 375 F. In a large skillet, melt the butter over medium heat.
  • Add the onion and garlic and sauté for 4 to 5 minutes, or until the onions are turning translucent.
  • Add the carrots and sauté for 4 minutes, or until the carrots thaw.
  • Add the crumbled meatloaf and sauté for 4 to 5 minutes longer until the mixture is hot and combined.
  • Add the flour and sauté for 3 more minutes.
  • Add the broth, ketchup, mustard, Worcestershire sauce, marjoram, and salt and pepper to taste. Stir. Simmer the mixture for 10 minutes, stirring occasionally.
  • Meanwhile, heat the refrigerated potatoes as directed on the package, or use leftover mashed potatoes, if available.
  • Add the peas and sour cream to the beef mixture in the skillet and stir to combine.
  • Pour into a 2 1/2-quart casserole dish and spread the mixture level.
  • Top with the mashed potatoes and spread to cover, then run a fork over the potatoes to make small peaks that will brown in the oven. Sprinkle with the Parmesan cheese.
  • Bake the shepherd's pie for 25 to 35 minutes or until the filling is bubbly and the potatoes are golden brown on top. Let cool for 10 minutes before serving.

Steps:

  • Cook potatoes in boiling salted water until tender. Drain, mash roughly with a fork or hand device so that you leave lumps of unmashed potato.
  • In a frying pan, brown the bacon & the onion in the olive oil.
  • Add potato, parsley and the leftover meatloaf chopped into bite-sized pieces. Fry over a medium heat until the bottom layer of potatoes browns.
