1 tbsp groundnut oil
2 skinless duck breasts (250g), sliced
4 pak choi , quartered
1 onion , sliced
1 carrot , peeled, halved lengthways and finely sliced
1 celery stick, finely sliced
2 tsp sherry vinegar or rice vinegar
pinch of Chinese five spice
3 tbsp hoisin sauce
1 tbsp cornflour
3 spring onions , shredded
400g cooked rice or egg noodles
1 lime , cut into wedges

Steps:

  • Heat a wok or a large frying pan over a high heat. Drizzle in 1/2 tbsp of the oil and stir-fry the duck for 5 mins until cooked through and golden. Set aside on a plate. Heat the remaining 1/2 tbsp oil and add the pak choi, onion, carrot and celery. Fry for another 5 mins until golden but still crunchy.
  • Mix the vinegar, five spice, hoisin, 6 tbsp water, and cornflour together in a small bowl. Add to the wok with the veg along with the cooked duck. Stir well and simmer for 2-3 mins until the sauce thickens and coats the veg. Scatter with the spring onions and serve with noodles or rice and the lemon wedges for squeezing over.

A great way to use up left over roast duck. Alternatively use fresh cubed duck breasts and cook in the wok first. I've added the veggies I think works best, but you can substitute it to whatever you fancy really. Please note the cooking times given are just for guidance, not set in stone.

1 tablespoon peanut oil
5 medium mushrooms (sliced thinly)
350 g duck (in small pieces)
1 garlic clove (chopped)
1 teaspoon fresh gingerroot (chopped)
1 chile (deseeded and chopped)
3 spring onions (chopped finely)
100 g sweetcorn (use baby sweetcorn, cut into chunks)
100 g mange-touts peas (whole or in chunks)
1 tablespoon soy sauce
1 tablespoon rice wine (Chinese cooking wine)
1 1/2 tablespoons hoisin sauce
35 g unsalted cashews

Steps:

  • Heat a large wok and add oil.
  • Add mushrooms, cook for 3 minutes until they start to soften and brown.
  • Add duck, cook for 1 minute.
  • Add garlic, ginger, and chilie, stir well, cook for a further 2 minutes.
  • Add sweetcorn, mange tout, cook for 2 minutes.
  • Add soy sauce, cooking wine, and hoisin sauce. cook for a few minutes until thickened and heated through.
  • Add cashews, stir well to heat through.
  • Serve with boiled or egg fried basmati rice.

4small red onions
1 celeriac , weighing about 850g/1lb 14oz
3medium parsnips
4medium salsify (total weight about 400g/14oz) or baby turnips
125ml olive oil
2sprigs fresh rosemary
2large bay leaves
2 star anise
400ml red wine
2 tsp tomato purée
2 tsp truffle oil (optional, but nice)
1l chicken stock , preferably homemade
250g wild mushroom in season or baby chestnut button mushrooms
8 duck breasts , about 140-175g/5-6oz each
about 2 tbsp chopped fresh coriander
Basmati pilaff to serve

Steps:

  • Peel and quarter the onions. Peel the celeriac, parsnips and salsify, then cut into 2cm dice or lengths (they needn't be exact).
  • Heat half the oil in a large sauté pan or wok and stir fry the vegetables (except the mushrooms) for 15-20 minutes until softened and slightly caramelised. Add the rosemary, bay, star anise and wine and boil hard over a high heat until reduced by half. Stir in the tomato purée, truffle oil, if using, stock and seasoning and continue to boil hard, uncovered, until reduced by half again. Drain the vegetables into a colander over a large bowl, then pass the sauce through a sieve into a medium saucepan. Reserve vegetables and sauce separately.
  • Heat the remaining oil in a frying pan and stir fry the mushrooms over a high heat for 5 minutes until nicely browned. Season and drain on paper towels.
  • Wipe out the pan, leaving it with a light oily film. Heat until very hot, then add the duck breasts, skin-side down. Add seasoning and leave them for 3-4 minutes over a medium heat so they brown. Turn them over and cook the other side for 3-4 more minutes until lightly springy to the touch. If you like your duck cooked more than this, you can leave the breasts for longer, but it will become tough if overcooked - so watch it.
  • Remove from the heat and leave to stand for 5 minutes before slicing each breast into bite-size pieces. Reheat the vegetables by tossing them in the pan with 1 tablespoon duck fat, adding coriander and seasoning at the last moment. At the same time, simmer the sauce and taste for seasoning.
  • To serve, pile the vegetables in the centre of a warmed large platter, surround with the duck and top with mushrooms. Drizzle the sauce over and serve any extra separately.

2 duck breasts
2 tsp light brown soft sugar
3 tbsp red Thai or massaman curry paste
2 tsp fish sauce
1 aubergine, trimmed and cut into wedges
500g small potatoes, halved
400g can coconut milk
2 lime leaves (optional)
200g green beans, trimmed and halved
½ lime, juiced
sliced red chillies, coriander leaves and roasted peanuts or cashews, roughly chopped, to serve
cooked rice, to serve

Steps:

  • Heat a wok or frying pan over a low heat and lay the duck breasts in the pan skin-side down. Reduce the heat to low and sizzle gently for 10-15 mins until the skin is golden and the fat has rendered into the pan. Remove the breasts to a plate and leave to cool.
  • With the pan still on a low heat, scatter the sugar over the leftover duck fat and stir in the curry paste and fish sauce. Cook, stirring, for 3-4 mins until fragrant, then add the aubergine and potatoes, and stir to coat. Let the veg absorb some of the paste for a few minutes, then pour over the coconut milk and half a can of water, add the lime leaves (if using) and bring to a simmer.
  • Meanwhile, finely slice the duck breasts. Stir the meat and resting juices into the curry and simmer for 40 mins, stirring occasionally, until the potatoes are just cooked and the duck is tender. Stir in the green beans and simmer for 10 mins more until the beans are cooked. Remove from the heat. Stir in the lime juice, taste and add more lime, sugar or fish sauce if needed. Scatter over the chillies, coriander and peanuts. Serve with cooked rice.

The last time I was in Chinon, I had lunch at a charming restaurant, Au Plaisir Gourmand. The name is fitting: Chinon was the birthplace of Rabelais, who valued indulgence at the table. We began with andouilles (tripe sausages) and continued with lièvre à la royale (hare stuffed with foie gras), as we poured more than one bottle of Chinon. I have never made either dish. But with these wines I still want something bold, earthy and luscious. Did someone say Asian? Starting with duck breast, sliced thick enough to be succulent in a stir-fry, I added mushrooms, broccolini and musky oyster sauce. Unless you worship at the table of Rabelais, the recipe is more than ample for two.

1 magret duck breast
1/2 teaspoon cornstarch
1 teaspoon sugar
1 teaspoon rice vinegar
2 teaspoons soy sauce
1 teaspoon Chinese oyster sauce
1 tablespoon Asian sesame oil
1 1/2 tablespoons peanut oil
2 cloves garlic, peeled and slivered
1 1-inch piece ginger, peeled and slivered
1 1/2 teaspoons Sichuan peppercorns
6 ounces shiitake mushrooms, stemmed and sliced
Salt
6 ounces broccolini, in 1-inch pieces
Steamed brown rice, for serving

Steps:

  • Peel skin and fat from duck. Discard or reserve for another use. Slice duck across the grain, 1/2-inch thick. Mix cornstarch, half the sugar, rice vinegar and half the soy sauce in a medium-size bowl. Add duck and turn to coat. Set aside 15 minutes. Mix remaining sugar and soy sauce with oyster sauce and sesame oil.
  • Place wok or skillet on high heat, add peanut oil, then duck. Stir-fry one minute. Transfer to a dish. Reduce heat to medium. Add garlic, ginger and peppercorns and stir. Add mushrooms, sprinkle lightly with salt, and stir-fry until wilted and shiny. Add broccolini and stir-fry 2 to 3 minutes, until starting to soften.
  • Increase heat and return duck to pan. Stir-fry another minute or so, until duck starts to firm up. Add oyster sauce mixture and stir. Serve with brown rice alongside.

  • Get a wok or large frying pan very hot over a strong burner. Add the duck fat or peanut oil, and the moment it begins to smoke, add the garlic, chiles and the white part of the scallions. Stir fry about 30 seconds.
  • Add the duck meat, rice, carrots and peas and stir fry 2 minutes. Push everything to one side of the wok and pour in the beaten egg. Swirl it with a chopstick or somesuch until it sets, then stir fry it into the rest of the rice. This helps keep it in largish, recognizable pieces.
  • Let the stir fry sit for 1 minute without touching it. You want to develop some browning and crispiness on the bottom. After the minute has elapsed, pour the soy sauce in around the edges of the rice, then mix well. Turn off the heat and drizzle the sesame oil over it.
