Steps:
- 1. Heat oil in a non-stick skillet over medium heat. Add mushrooms and leeks and cook about 4 minutes, stirring, until the leeks are tender.
- 2. In a small bowl, stir together chicken broth and cornstarch. Stir the mixture into the mushrooms and leeks. Bring to a simmer and cook until thickened.
- 3. Stir in sour cream, lemon juice and tarragon, and heat just until warmed. Do not let boil or sour cream will separate.
- 4. Season with salt and pepper, to taste.

- Heat oil in a large skillet over medium-high heat. Add chicken; cook until well browned and no longer pink in the center, 4 to 5 minutes per side. Transfer to a plate, cover, and keep warm.
- Add mushrooms and leeks to the skillet. Cook over medium heat, stirring often, until most of the moisture has evaporated and mushrooms begin to brown, 4 to 6 minutes. Add wine; cook for about 1 minute. Mix broth and cornstarch together in a small bowl; add to the skillet and cook until thickened, 2 to 3 minutes. Stir in sour cream and mustard; cook and stir until combined, about 1 minute. Season sauce with salt and pepper.
- Nestle chicken thighs into the sauce. Cook until an instant-read thermometer inserted into the thickest part of a thigh reads 165 degrees F (74 degrees C), 8 to 10 minutes more.

Steps:
- Heat oil in a non stick frying pan over medium heat.
- Add garlic, chili and leek.
- Cook, stirring for 3 to 4 minutes or until soft.
- Add flour and cook for 1 minute.
- Increase heat to high and add mushrooms.
- Cook, stirring for 3 minutes or until tender.
- Add evaporated milk gradually, stirring.
- Bring to the boil.
- Reduce heat to medium and simmer for 4 minutes or until thickened.
- Stir in parsley.
- Season with salt and pepper.
- Enjoy!
CREAMY MUSHROOM AND LEEK PASTA
Deliciously creamy this leek and mushroom pasta dish is perfect comfort food. With buttery leeks, meaty shiitake mushrooms and a creamy white wine and thyme sauce, this is proper tasty!

- Heat 1 tbsp of olive oil and melt 1 tbsp of butter in a large sautè pan.Add the sliced leeks with a pinch of salt and cook gently over a low to medium heat for about 20 minutes stirring regularly. The leeks should be very soft.
- Add 2 or 3 cloves of minced garlic, a pinch of salt, cracked black pepper, 1 tbsp of thyme leaves and 3 cups of sliced mushrooms to the pan and cook for about 3 minutes.Turn up the heat and pour in the wine, the wine should sizzle when it hits the pan. Turn the heat down and let the leeks and mushrooms soak up the wine.
- Bring a large pan of salted water to the boil and cook the pasta according to the packet instructions. Reserve 1 cup of the pasta water.
- Add 1 heaped tbsp of plain/all-purpose flour, 1 heaped tsp of Dijon mustard and 1 heaped tbsp of creme fraiche to the leeks and mushrooms and stir well. Stir in the grated cheese and stir until melted.
- Now slowly start to add about 1 cup of water from the pasta to the leek and mushrooms.Add about 1/4 of the water and keep stirring until it is a thick sauce. Continue this until you have added all the water and you have a creamy, silky sauce. Check the seasoning now, add more salt or pepper if needed.
- Add the cooked pasta to the sauce and toss until all the pasta is covered in sauce.
- Serve immediately with shavings of pecorino cheese, some chopped parsley and cracked black pepper.

- Heat the oil in a large saucepan. Stir in the leeks, 2 tbsp water and some seasoning, cover, then cook for 5 mins over a medium heat until softened. Add the mushrooms and garlic, then cook for 3 mins more. Meanwhile, cook the spaghetti according to pack instructions, then drain, reserving a little of the cooking liquid.

GOTTA BE THE BEST LOW FAT MUSHROOM SAUCE EVER!!
This sauce is so simple and tastes absolutely divine! It can be used in so many ways! I stumbled over it when I didn't have the ingredients I wanted in the kitchen and thought I would be adventurous. Well good on me!!! This is a definite regular in our house over a big fat T-bone with chips and salad but we also have it with chicken and mashed potatoes. I truly love making this sauce because you really can't go wrong! The only wrong thing you can do...is not try it!!! It is LOW FAT too!!!

- This sauce is really quick and only takes about 5 minutes to make once everything is prepared!
- White mushrooms are fine to use if you don't have Portabelo and you can chop them or slice them - whatever you prefer.
- Put the oil or butter in a medium sized fry pan with the mushrooms and cook them on a medium heat until they start to soften slightly. Add 3/4 can of evaporated milk and the tablespoon of balsamic vinegar and keep it at a medium heat.
- While the mushrooms are cooking in the milk (this won't take long!) quickly mix a little of the milk with the cornflour to form a paste. Add this to the sauce and keep stirring and it will start to thicken. Don't be afraid to bring it to the boil, it won't go funny.
- This is where it is up to you how thick you want the sauce! If it becomes too thick just add more Evaporated Milk till you get the desired consistency. If it is not thick enough just make up some more cornflour paste and add it a little at a time until it is just right. You really can't fail to get it the way you want. The best advice I can give is don't have the pan too hot and make sure you keep stirring!
- Also taste it before you add any salt and pepper as the Balsamic gives it such a nice flavour you don't want to overpower the sauce with too much salt and pepper. If it doesn't have enough flavour, add another dash of Balsamic Vinegar. It really is that simple!
- Pour it over steak and chips or any meat that takes your fancy! Or you can cook up some cubed chicken breast and add them to the sauce and serve with mashed potatoes and greens for a healthy delicious meal! This recipe can easily be doubled.
- One tip to give it your sauce more flavour is after you have cooked your steaks use the same pan and leave the juice. It saves on washing and adds that richness. Get saucy!
