Easy, delicious chili with a bit of a spicy bite. A friend served this to me one day and I fell in love with it.

1 lb boneless skinless chicken breast, cut into 1/2 inch cubes
1 medium onion
1 1/2 teaspoons garlic powder
1 tablespoon vegetable oil
2 (15 1/2 ounce) cans great northern beans, rinsed and drained
1 (14 1/2 ounce) can chicken broth
1 teaspoon salt
1 teaspoon oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup sour cream
1/2 cup whipping cream
2 (4 ounce) cans diced green chilies

Steps:

  • In large saucepan, saute chicken, onion and garlic powder in oil til chicken is no longer pink.
  • Add beans, chilies and seasonings and chicken broth.
  • Bring to a boil.
  • Reduce heat and simmer (uncovered) for 30 minutes.
  • Remove from heat, stir in sour cream and whipping cream.
  • Serve immediately.

1 tablespoon olive oil
3/4 lb boneless skinless chicken breast, cubed
1 large onion, minced
2 cloves garlic, minced
1 cup dry white wine or 1 cup chicken broth
2 cans great northern beans, rinsed and drained
1 teaspoon mustard powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/8 teaspoon ground black pepper
4 cups baked corn tortilla chips (optional)
1/2 cup shredded reduced-fat sharp cheddar cheese
sour cream (optional)

Steps:

  • Heat oil in large skillet over medium-high heat.
  • Add chicken and cook until no longer pink.
  • Remove chicken and set aside.
  • Add onion and garlic to skillet and cook until tender.
  • Place chicken, onion, and garlic in crockpot.
  • Add wine, beans, mustard powder, cumin, salt and pepper.
  • Cook on low 5 to 6 hours.
  • Place servings into bowl (If using tortilla chips put them in bowl first).
  • Sprinkle with cheese and add sour cream.

A thick and rich stew that got all thumbs up from my diners! This is a Pampered Chef recipe that I've submitted as it appeared in my cookbook. For visual appeal, next time I'll use cannelini beans rather than pintos. I didn't even attempt to grate the tortillas, I just chopped them up finely; you need them small enough to dissolve & thicken the stew. The poblano peppers add lots of flavor but not much heat. The opportunity to adjust the heat level to your taste will be in your choice of salsa verde. I used a medium-heat salsa and it was just right for us. I also opted not to use the remaining tortillas for chips - I just warmed them & served on the side. Let your tastebuds guide you in your choices!

8 (6 inch) corn tortillas, divided
2 teaspoons vegetable oil, divided
1 lb boneless skinless chicken breast, cut into 3/4 inch pieces
1 teaspoon ground cumin
1 cup chopped poblano pepper (1-2 medium)
1/2 cup chopped onion
1 garlic clove, finely minced
2 (14 ounce) cans reduced-fat chicken broth
2 (15 ounce) cans pinto beans, drained and rinsed
1 1/4 cups salsa verde (green salsa) or 1 (10 ounce) can green enchilada sauce
2 tablespoons minced cilantro

Steps:

  • Preheat oven to 400°F.
  • Cut 4 tortillas in half and stack them one on top of the other. Cut into 1/2-inch strips & toss with 1 teaspoon oil.
  • Spread tortilla strips in a single layer in a baking pan. Bake 10-12 minutes or until crisp, stirring once. Remove from oven and set aside.
  • Fold each of the remaining 4 tortillas into quarters & and coarsely grate using a box grater or your favorite method. Set aside. (Cook's note - I opted to just finely chop the tortillas rather than grating).
  • Toss chicken pieces with cumin.
  • Heat remaining 1 teaspoon of oil in a large soup pan, add chicken and cook 5 minutes. Remove chicken.
  • Add poblano peppers, onion and garlic to pan. Cook and stir 3 minutes.
  • Stir in chicken, broth, beans, salsa and grated tortillas.
  • Bring to a boil then reduce heat to simmer, uncovered, 15 minutes.
  • Stir in cilantro, ladle into soup bowls and top with baked tortilla strips.

From America's Test Kitchen. A very thick, filling chili. If you like yours more soup-like, I would suggest adding a little more chicken broth. We like our soups thick, so this was perfect for our tastes. Adjust the heat in this dish by adding the minced ribs and seeds from the jalapeño at the end of cooking time. If Anaheim chiles cannot be found, add an additional poblano and jalapeño to the chili. This dish can also be successfully made by substituting chicken thighs for the chicken breasts. If using thighs, increase the cooking time to about 40 minutes. Serve chili with sour cream, tortilla chips, and lime wedges.

3 lbs chicken breast halves, bone-in, skin-on, trimmed of excess fat and skin
table salt & fresh ground pepper
1 tablespoon vegetable oil
3 medium jalapeno chiles
3 poblano chiles, stemmed, seeded, and cut into large pieces (medium)
3 anaheim chilies, stemmed, seeded, and cut into large pieces (medium)
2 medium onions, cut into large pieces (2 cups)
6 medium garlic cloves, minced (about 2 tablespoons)
1 tablespoon ground cumin
1 1/2 teaspoons ground coriander
2 (14 1/2 ounce) cans cannellini beans, drained and rinsed
3 cups low sodium chicken broth
3 tablespoons fresh lime juice (from 2 to 3 limes)
1/4 cup minced fresh cilantro leaves
4 scallions, white and light green parts sliced thin

Steps:

  • Season chicken liberally with salt and pepper. Heat oil in large Dutch oven over medium-high heat until just smoking. Add chicken, skin side down, and cook without moving until skin is golden brown, about 4 minutes. Using tongs, turn chicken and lightly brown on other side, about 2 minutes. Transfer chicken to plate; remove and discard skin.
  • While chicken is browning, remove and discard ribs and seeds from 2 jalapeños; mince flesh.
  • In food processor, process half of poblano chiles, Anaheim chiles, and onions until consistency of chunky salsa, ten to twelve 1-second pulses, scraping down sides of workbowl halfway through.
  • Transfer mixture to medium bowl. Repeat with remaining poblano chiles, Anaheim chiles, and onions; combine with first batch (do not wash food processor blade or workbowl).
  • Pour off all but 1 tablespoon fat from Dutch oven (adding additional vegetable oil if necessary) and reduce heat to medium. Add minced jalapeños, chile-onion mixture, garlic, cumin, coriander, and 1/4 teaspoon salt. Cover and cook, stirring occasionally, until vegetables soften, about 10 minutes. Remove pot from heat.
  • Transfer 1 cup cooked vegetable mixture to now-empty food processor workbowl. Add 1 cup beans and 1 cup broth and process until smooth, about 20 seconds.
  • Add vegetable-bean mixture, remaining 2 cups broth, and chicken breasts to Dutch oven and bring to boil over medium-high heat.
  • Reduce heat to medium-low and simmer, covered, stirring occasionally, until chicken registers 160 degrees (175 degrees if using thighs) on instant-read thermometer, 15 to 20 minutes (40 minutes if using thighs).
  • Using tongs, transfer chicken to large plate.
  • Stir in remaining beans and continue to simmer, uncovered, until beans are heated through and chili has thickened slightly, about 10 minutes.
  • Mince remaining jalapeño, reserving and mincing ribs and seeds (see note above), and set aside.
  • When cool enough to handle, shred chicken into bite-sized pieces, discarding bones. Stir shredded chicken, lime juice, cilantro, scallions, and remaining minced jalapeño (with seeds if desired) into chili and return to simmer.
  • Adjust seasonings with salt and pepper and serve.

This is the first recipe I ever tried for white chili, and it is the best one I have ever found. I found it in a cookbook called So Fat, Low Fat, No Fat, but don't let that fool you. The chili may be low on fat but it has a fantastic flavor and always gets raves every time I make it. This is not the exact recipe in the book, as I have made a few minor adjustments to make it a little easier.

2 1/2 cups water
1 teaspoon lemon pepper seasoning
1 teaspoon ground cumin
1 tablespoon olive oil
4 boneless skinless chicken breast halves, trimmed of all excess fat
1 clove garlic, finely chopped
1 cup chopped onion
2 (8 ounce) cans white shoepeg corn, drained
2 (4 ounce) cans chopped green chilies, undrained
1 teaspoon ground cumin
2 -3 tablespoons lime juice
2 (14 ounce) cans great northern beans, undrained
shredded monterey jack cheese, to garnish

Steps:

  • In a 5-qt stockpot, combine water with the lemon pepper, 1 tsp ground cumin, and olive oil.
  • Bring to a boil.
  • Add the chicken breast halves and return to a low boil, then reduce the heat to low and simmer 20-30 minutes or until the chicken is fork tender and the juices are clear.
  • Remove the chicken from the broth and cut into bite-size pieces, then return it to the broth.
  • Add the garlic, onion, corn, green chiles, 1 tsp ground cumin, lime juice, and Great Northern beans to the broth.
  • Bring to a boil.
  • Simmer until thoroughly heated, about 45 minutes.
  • To serve, ladle into soup bowls and sprinkle cheese on top.
  • Refrigerate any leftovers; this chili is usually even better heated up the next day.

Steps:

  • In a large soup pan combine water, 1 tsp cumin, lemon pepper, and chicken breasts. Bring to a boil, then cover and simmer until chicken is cooked (30-45 minutes).
  • Remove chicken from pot and shred or cut into bite-sized pieces.
  • Remove fat from broth, then put broth and chicken back into soup pot.
  • Heat olive oil in a skillet. Add minced garlic and chopped onion and saute until onions are tender.
  • Add onions, corn, green chilis (undrained), 1 tsp cumin, and lime juice to the soup pot and bring the entire mixture to a boil.
  • Add beans (undrained) and cook until heated through.
  • To serve, put some crushed chips and shredded Monterey Jack cheese in a bowl, then spoon chili over top.

1 lb great northern bean
6 cups chicken broth
2 minced garlic cloves
2 medium onions, chopped (divided)
1 tablespoon oil
2 (4 ounce) cans green chilies (chopped)
2 teaspoons ground cumin
1 1/2 teaspoons dried oregano
1/4 teaspoon ground cloves
1/4 teaspoon cayenne pepper
2 lbs chicken breasts, cooked and chopped (about 4 cups)

Steps:

  • Soak beans overnight or at least 4 hours prior to cooking.
  • Combine beans, chicken broth, garlic and half of the onions in a large soup pot and bring to a boil. Reduce heat and simmer until beans are very soft, 3 hours or more.
  • Add more chicken broth if necessary. In a skillet, sauté remaining onions in oil until tender. Add chilies and seasonings and mix thoroughly. Add to bean mixture. Add the cooked chicken and continue to simmer 1 hour.
  • Serve topped with the cheese, tomatoes, guacamole, tortilla chips, etc -- .

2 boneless skinless chicken breasts
1 large finely chopped onion
2 (4 ounce) cans of chopped green chili peppers
2 (15 ounce) cans great northern beans
2 (14 1/2 ounce) cans chicken broth
2 (10 1/2 ounce) cans Campbell's Cream of Chicken Soup
3 minced garlic cloves
1/4 teaspoon ground cayenne pepper
1/4 teaspoon ground cloves

1 cup shredded monterey jack cheese

Steps:

  • Place chicken in very deep frying pan. Cover with water and bring to a boil over high heat. Reduce heat to medium and cook chicken for approximately 10 minutes until done.
  • Remove chicken and allow to cool. Drain water from frying pan.
  • In the same pan add olive oil and onion over medium high heat. Stir constantly, as not to brown for about two minutes. Add chili peppers, garlic, cayenne pepper, ground cloves, salt and oregano. Stir constantly as not to brown for about two minutes.
  • Add chicken broth, cream of chicken soup and beans. Mix well, until consistent.
  • Allow to simmer over medium-low heat for about 15 minutes.
  • While this is simmering, cut the chicken into cubes. After 15 minutes, add chicken. Continue to simmer for about 30 minutes to heat through. Prior to serving stir in Monterey Jack cheese and allow to thicken.
  • Serve with additional Monterey Jack if desired. Salt and pepper to taste.
