- Put the bulgur in a medium bowl and add the boiling water. Cover with plastic wrap and let stand until the bulgur is tender, 45 minutes to 1 hour.
- Meanwhile, in a medium bowl whisk the vinegar and sugar with a generous seasoning of salt and pepper until dissolved. Add the cucumber and onion, toss well and set aside to marinate for about 30 minutes.
- In a separate small bowl combine the yogurt and chili garlic sauce. Season with salt and pepper and set aside.
- Drain the bulgur and put into a large bowl. Add the turkey, hoisin, scallions, ginger, garlic and chopped cilantro and mix until just combined. Form into 4 equal sized patties.
- Heat a large nonstick skillet over medium heat until very hot. Lightly brush both sides of each patty with oil and place in the skillet. Cook, turning once, until just cooked through, 3 to 4 minutes per side.
- Drain the pickled vegetables and toss with the whole cilantro. Spread some spicy yogurt sauce on the top and bottom of each bun and top with a burger patty and some pickles.

- For the Meyer lemon-honey mustard: Whisk together in a small bowl the mustard, honey, orange juice, lemon zest, lemon juice and season with salt and pepper. Cover and refrigerate for at least 30 minutes and up to 24 hours to allow the flavors to meld.
- For the burgers: Preheat the grill to high. Form the meat into four 6-ounce burgers. If you are not going to cook right away, keep the burgers cold in the refrigerator. Sprinkle the burgers on both sides with salt and pepper. Grill until cooked through, 3 to 4 minutes on each side. During the last minutes of cooking, add 2 slices of cheese to each burger, cover the grill and let the cheese soften slightly, about 1 minute. Put the burgers on the buns, drizzle with some of the Meyer lemon-honey mustard and top with a few sprigs of watercress. Serve with extra mustard on the side.

MOIST TURKEY BURGERS
I changed the recipe to make these delicious burgers for more people. I caramelized the onions to give it more depth of flavor. I also added Dijon mustard and real garlic instead of garlic powder. I also cut down on the amount of bread crumbs and made them out of whole wheat to make them a little healthier. I also omitted the soy sauce for the same reason. They came out great. The only thing I would do different next time is to give them just a little heat. Enjoy.

- Heat olive oil in a small skillet over medium heat. Cook and stir onions in the hot oil until tender and lightly browned, about 15 minutes; transfer to a large bowl.
- Mix bread crumbs, Worcestershire sauce, Dijon mustard, garlic, poultry seasoning, ground mustard, pepper, and salt with the onion. Break the turkey into small pieces into the bowl; mix with the bread crumb mixture until evenly combined. Shape the turkey mixture into 12 patties; wrap in plastic wrap and refrigerate at least 20 minutes.
- Coat a nonstick skillet with cooking spray; heat over medium heat.
- Cook the patties in the hot skillet until no longer pink in the center and the juices run clear, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

LEAN TURKEY BURGERS
An easy high protein and low fat turkey burger recipe!

- Line a baking sheet or large plate with parchment paper or foil. Set to the side.
- In a large bowl, using your hands, combine the ground turkey, onions, olive oil, onion powder, garlic powder, smoked paprika, cumin, poultry seasoning, black pepper, and sea salt.
- You can split the ground turkey mixture into four 5 ounce patties or five 4 ounce patties. (I usually make four 5 oz. patties)
- Lightly spray a large frying pan with cooking spray and heat the pan over medium high heat.
- Once the pan is hot gently place one burger patty in the pan at a time. (You don't want to overcrowd and slow down the cooking)
- Cooking the patty one each side for 3-4 minutes or until it's the golden brown color your desire. Place the patty to the side on a clean board or dish and allow to sit while you cook the others.
- Repeat steps 4-7 for each burger patty until you're finished. After you've cooked each lean turkey burger put your patty together with any other desired ingredients on a lower carb bun and enjoy!
LEAN TURKEY BURGER WITH SWEET POTATO WEDGES

- Heat oven to 180C/160C fan/gas 4. Zap the sweet potato wedges in the microwave for about 6 mins on full power until just turning soft. Leave to rest for 30 secs.
- While the sweet potato is spinning in the microwave, mix the mince in a bowl with the onion, garlic, egg and apple. Get your hands stuck in and work the ingredients together with a good pinch of salt and pepper, the oregano and paprika. Shape the mixture into two burgers about 3cm thick. Place on a lined baking tray in the oven for 20-25 mins, turning half way through cooking, until cooked through.
- Heat the coconut oil in a large frying pan over a high heat. Add the sweet potato wedges and shallow-fry for about 3 mins each side until they are nicely browned all over and cooked through to the centre. (Alternatively, toss in the oil and roast in the oven for 15-20 mins.) Drain on kitchen paper, then season with a good pinch of salt.
- Serve the burgers with the sweet potato wedges and a portion of green veg either steamed, blanched or boiled.

- Mix all together. Squish down a little in the bowl that you mixed it in and draw two lines intersecting. These are your 4 burgers.
- Pull out each pie shaped wedge and make little balls. Squish down a little to make a patty.
- Grill on preheated grill on the top rack with the lid closed for 6 minutes. Flip once and grill the same way for another 6 minutes.
- Check with thermometer. Don't squish with spatula or you lose juices. It's a very squishy burger and doesn't like to be flipped a lot either.
- I sprayed the burgers to help make sure they don't stick, but not 100% sure that's necessary.
