Lazy because there's little effort in preparing this... Especially delicious on salads with berries or tropical fruits. From a vision on a busy Easter morning.

Number Of Ingredients 9

1/2-1 teaspoon dried lavender blossoms, slightly crushed to release flavor
1/2 teaspoon orange zest, grated
1/4 cup fresh orange juice (honey tangerine juice is also good)
2 tablespoons champagne vinegar or 2 tablespoons white balsamic vinegar
2 tablespoons extra virgin olive oil or 2 tablespoons grapeseed oil
2 tablespoons heavy cream
1/4 teaspoon fresh ground black pepper
1/4 teaspoon salt
1/2 tablespoon honey, softened

Steps:

  • In small non-reactive bowl using an immersion blender, puree ingredients until smooth. (Salad dressing can also be prepared using a standard blender.) For best results, prepare at least 1 hour in advance to allow dressing to marinate.
  • Refrigerate until ready to serve. Adjust seasoning if necessary. Whisk well before pouring.

SIMPLE BALSAMIC VINAIGRETTE

1/4 cup balsamic vinegar
2 teaspoons dark brown sugar, optional* (See Cook's Note)
1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup olive oil
Mesclun salad mix or favorite greens, for accompaniment
Assortment of salad ingredients, such as cherry tomatoes, chopped carrots, sliced red onion, chopped celery, diced cucumbers, walnuts
Blue cheese, for garnish
1/4 cup balsamic vinegar
2 teaspoons dark brown sugar, optional* (See Cook's Note)
1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup olive oil

Steps:

  • Beat the vinegar in a bowl with the optional sugar, garlic, salt and pepper until sugar and salt dissolves. Then beat in the oil by droplets, whisking constantly. (Or place all the ingredients in a screw-top jar and shake to combine.) Taste and adjust the seasonings.
  • Toss a few tablespoons of the dressing with the salad mix and desired salad ingredients, top with blue cheese and serve immediately.
  • If not using dressing right away, cover and refrigerate, whisking or shaking again before use.

4 large egg yolks
4 teaspoons sugar
4 teaspoons Dijon mustard
600 ml olive oil
200 ml white wine vinegar
3 lemons, juice of
1 tablespoon dried lavender, finely chopped
1/8 teaspoon dried lavender
salt and pepper

Steps:

  • beat the egg yolks in a blender.
  • add the sugar, seasoning and mustard and combine.
  • with the blender on, slowly add the oil and with motor still running add the vinegar.
  • finally add lemon juice and chopped lavender.
  • this dressing should be pourable not too thick.
  • pour over whatever salad you choose and decorate with dried lavender seeds.
