A healthy one pot dish with summer vegetables and chicken. Serve this lazy chicken right from the pan!

1 lb chicken breasts, cut into one-inch cubes
2 red potatoes, sliced thinly
1 small white onion, thinly sliced
1 small zucchini, thinly sliced into disks
1 -2 teaspoons steak seasoning
1/2 cup chicken broth
1 can (14.5 oz) Muir Glen™ Organic Crushed Tomatoes Fire Roasted
10 basil leaves, coarsely chopped
1 teaspoon dried oregano
1/2 cup shredded mozzarella
Salt and pepper

Steps:

  • In an oven safe skillet, sprinkle chicken with salt and pepper and brown on medium high heat for a couple of minutes. Remove the chicken from the pan and set aside.
  • Add olive oil to the pan. Layer the sliced potatoes and onions in the pan and sprinkle with half of the steak seasoning. Cook potatoes and onions in a thin layer until brown, turning as little as possible to get a nice sear.
  • Add chicken broth to the pan. Spread zucchini in a thin layer on top of the potatoes and onion. Sprinkle zucchini with the remaining steak seasoning.
  • Place chicken in an even layer over the zucchini. Pour tomatoes evenly over the chicken. Sprinkle tomatoes with the oregano and basil. Cover and cook until the veggies and chicken are completely done.
  • Sprinkle with cheese and place under the broiler until cheese melts or starts to brown. You could also just cover the pan with a lid on the stove to melt the cheese.
  • Serve right away.

2 -3 lbs chicken pieces (legs, thighs and breasts)
1 tablespoon sugar
1/4 cup white vinegar
1/2 cup soy sauce (low sodium works well)
4 garlic cloves, minced1 tsp garlic powder
3/4 teaspoon pepper

Steps:

  • Mix sugar, vinegar, soy sauce, garlic and pepper in a skillet.
  • Add chicken and simmer covered until chicken is cooked through and tender. About 30-45 minutes.
  • Serve over rice and enjoy.
  • **If making this to freeze, put the ingredients from step one into a ziploc bag and mix well. Add chicken and freeze. When ready to cook, dump frozen ingredients into a pan and simmer on low to med heat until cooked through. It will take a little longer to cook this way but it is still a quick and easy.

2 -3 lbs chicken pieces, whatever you like, I prefer thighs
1 1/2 cups flour
1 tablespoon seasoning salt
2 teaspoons garlic powder
2 teaspoons paprika
1 teaspoon ground red pepper

Steps:

  • Preheat oven to 425.
  • spray a 9x13 inch metal pan with no stick spray. Rinse chicken and drain but do not dry. Put flour and seasonings in a paper or plastic bag and shake to blend. put 2-3 pieces of chicken in bag and shake. arrange chicken in pan. Bake 30 min then turn chicken over for another 20 minute.
  • If using white meat reduce cooking time to not over cook and dry out.

My husband loves anything with mushrooms, and this is no exception. I threw this together one night before work (waking up at 5pm and in the shower by 5:45 doesn't leave much time for cooking) and it turned out surprisingly well. It's ridiculously easy!

1 lb chicken tenderloins
1/2 teaspoon salt
3 cups mushrooms, sliced
2 tablespoons olive oil, garlic-infused
1 (10 3/4 ounce) can Campbell's Golden Mushroom soup (NOT cream of mushroom!)
1/2 cup marsala wine
9 ounces pasta, whatever type you desire

Steps:

  • Heat oven to 375 degrees.
  • Spray small casserole dish with cooking spray.
  • Place chicken tenderloins on bottom and season with salt.
  • Scatter mushroom on top of chicken.
  • Drizzle garlic-infused olive oil on top of chicken and mushrooms.
  • Spoon undiluted soup on top. Don't feel the need to spread it evenly -- it will thin and settle as it heats.
  • Pour Marsala wine on top of everything.
  • Cover with aluminum foil, pierced to vent. Bake at 375 degrees on lower rack for 35 minutes. (This is when I jump in the shower!).
  • As end of baking time nears, boil 9 ounces of the pasta of your choice. Once chicken is done, blend chicken mixture and pasta and serve.

  • Place chicken pieces in crock pot.
  • Mix soup with water and add to crock pot.

  • Remove chicken and keep warm.
  • Add peas to crock pot
  • Mix flour with equal parts of water stirring to a smooth paste and enter into crock pot.
  • Cover and cook on HIGH until gravy thickens.
  • Serve with baby potatoes or fluffy rice.
