SAAG ALOO
Traditional Punjabi cooking includes many vegetarian dishes. Saag aloo is made with saag (a variety of greens, including mustard greens), potatoes and spices. This vegan recipe uses frozen spinach: it could also be called palak aloo (palak meaning spinach). It makes a simple and inexpensive midweek meal, served with a bowl of dal and some chapatis or rice. Each serving provides 200 kcal, 5g protein, 20g carbohydrates (of which 4g sugars), 10g fat (of which 1g saturates), 5.5g fibre and 0.9g salt.

Steps:
- Heat the oil in a large saucepan or wok over a medium heat. Add the cumin seeds and, as they begin to sizzle, add the garlic and chillies. Fry for a minute, then add the onion and continue to fry for 7-8 minutes, stirring well.
- Add the coriander and turmeric and stir well. Add the frozen spinach, put a lid on the pan and cook over a medium heat for 5 minutes. Season with salt. As the spinach begins to release its moisture, turn the heat to low and cook for a further 5 minutes.
- Add the cubed potato and ginger and cook for 5 minutes: the potato will absorb any residual moisture. Serve with chapatis or rice.

Steps:
- In microwave safe bowl add peeled potatoes, 1 teaspoons of curry powder, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 1/2 teaspoons dried thyme, 1 1/2 teaspoons kosher salt.
- Coat potatoes with spices, and cover with saran wrap. Microwave until potatoes are soft (since microwaves vary upon wattage 7-9 minutes should do).
- I like to microwave the frozen spinach in the box that it comes in 7-9 minutes (thats if you forgot to thaw it out). In a doubled paper towel (if it's not Bounty you'll need 4) squeeze the water out from the spinach.
- In a saucepan add potatoes and the water that was made from being NUKED in the microwave, add heavy cream or the milk/cornstarch mixture. Add the diced onion and stir. Add drained spinach, 2 teaspoons curry powder, 1 teaspoon minced garlic, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried thyme, 1 teaspoon crushed red pepper, 1 teaspoon powdered ginger, 1 teaspoon kosher salt and 1 teaspoon cumin. Stir & Simmer for 5 minutes.
- DONE!

- Finely chop the spinach leaves using the pulse function of a food processor*. You can do this in advance and store it, covered, in the refrigerator. Set aside.
- Meanwhile, heat oil and ghee in a large pan over medium-high heat and add the cumin seeds. Give them a few seconds to sizzle. Add the onion and cook, stirring often, until slightly golden, about 5-7 minutes. Add the slit green chili pepper, garlic, and ginger and cook until the raw smell disappears, about 20 seconds. Add the chopped tomato, spice powders (except garam masala), and salt. Cook until the tomato becomes soft and the oil starts to leave the sides, about 3 minutes.
- Raise the heat to high and add the spinach. Stir-fry it until it loses its moisture, about 10 minutes. Add water as needed to prevent the spinach from sticking to the bottom. If you feel that it still isn't cooked, add 1/4 cup of water, cover, and cook on low-medium heat for an additional 5 minutes. When the spinach is cooked, add the boiled potatoes and stir to coat the potatoes with the spinach. Add garam masala and more salt, if needed. Turn off the heat and sprinkle lime or lemon juice.
