- Combine 8 ounces lump crabmeat (picked over) with 1/2 cup fresh corn kernels, 1 tablespoon each mayonnaise and fresh lemon juice, 2 teaspoons chopped chives, 1/4 teaspoon Old Bay and a pinch of salt. Spoon onto thick-cut potato chips and sprinkle with more Old Bay and chives.

Steps:
- Cook potatoes in boiling water for 6-7 minutes, until tender; drain, then scatter potatoes across a large, flat surface to cool and dry for 5 minutes; then transfer to a mixing bowl.
- Make a paste with the garlic and salt; add it to the potatoes along with the parsley, thyme, lemon zest, and red pepper flakes.
- Add crab and Old Bay seasoning to potatoes; combine the mixture gently.
- Form 4 super-size 4-5 inch killer crab cakes.
- Place the bread crumbs on a plate; coat the crab cakes on both sides with crumbs to set them.
- Heat oil in a nonstick skillet over medium to med-high heat; add the cakes and cook for 3-4 minutes on each side, until deeply golden; serve immediately.
GREEK LAYERED DIP WITH PITA CHIPS

- Preheat the oven to 375 degrees F. Line 1 or 2 baking sheets with foil. Cut the pita rounds into eighths. Split each piece in two and place on the prepared baking sheet(s), with the inside of the bread facing up. Spray with the olive oil cooking spray and sprinkle with 2 teaspoons of the Greek seasoning. Bake 7 to 10 minutes, or until golden.
- Meanwhile, in a large skillet, brown the ground lamb with the garlic salt and the remaining 2 teaspoons Greek seasoning. Drain and set aside. In a shallow 1 1/2-quart dish, spread the hummus on the bottom. Top with a layer of ground lamb, then the tzatziki. Layer with the lettuce, tomatoes, onion, olives and feta. Serve the dip at room temperature with pita chips.
"CRABBY" POTATO CHIPS

- Preheat the oven to 200 degrees F.
- Spread the potato chips onto a baking sheet or ovenproof serving platter and bake to warm the chips, about 5 minutes. Sprinkle a light layer of the crab boil seasoning evenly over the chips. Serve warm.

- Peel and finely slice the potatoes using a mandoline or a sharp knife. Brush the base and sides of a tin or dish about 20cm square with the butter, and line with parchment.
- Heat the oven to 180C/160C fan/ gas 4. Add the potatoes, overlapping slightly in layers, and drizzle over the extra butter and some seasoning every few layers until all of the potatoes and butter are used up. You should have seven or eight layers. Cover tightly with foil. Cook for 40-50 mins until a sharp knife goes easily through the layers. Leave to cool, then put a plate that fits in the tin on top of the foil with some cans or a chopping board on top to weigh it down, and chill for at least 6 hrs or overnight. About 30 mins before frying, transfer the tin to the freezer to firm up even more.
- Put the oil in a heavy-based deep pan so it's no more than half-full, and heat to 180C on a cooking thermometer or until a cube of bread sizzles immediately and browns in 30 secs when lowered in.
- Tip the potato block from the freezer out onto a board and remove the parchment. Cut into thick chips and lower into the hot oil in three or four batches and cook for 4-5 mins until golden and crisp. Try not to move the chips around in the pan too much. Scoop out onto kitchen paper and season. Set aside while you cook the rest (don't keep uncooked chips next to the hot pan or the butter will melt).
- Mix the chilli mayo and crab dips, if serving both, or dollop a little soured cream on each chip, and top with a little apple sauce and dill.

CRISPY LAYERED THYME POTATOES

- Heat oven to 200C/180C fan/gas 6. Slice the peeled potatoes as finely as possible on a mandolin, with the fine slicing blade of a food processor, or with a very sharp knife. (The more finely you slice them, the quicker and more evenly they will cook.)
- Pat the potatoes dry with a clean tea towel and tip into a large bowl. Pour over the melted butter, sprinkle over the thyme and some salt (preferably sea salt or rock salt), and toss until each slice is coated in butter.
- In a roasting tin, measuring about 20 x 20cm, assemble the potato slices vertically, tightly packed together like a deck of cards, until the dish is full and you've used all the potatoes. Sprinkle with a little more salt and place in the oven for 45-50 mins until crisp and cooked. Use a skewer or small sharp knife to check that the potatoes are completely soft and cooked in the centre. Serve from the tin alongside the lamb.

- Preheat oven to 350°F.
- Melt butter in sauté pan.
- Add celery, onions, peppers, seasonings and spices and cook for about 4 minutes; set aside.
- Trim crust from bread slices and line bottom of a 20¾-inch by 12½-inch pan.
- Cover with a layer of crabmeat, followed by a layer of vegetable mixture and a layer of cheese.
- Top with remaining bread slices.
- Whisk eggs and combine with milk, pour over bread.

- Mix softened cream cheese and miracle whip together until smooth.
- Spread into a deep serving dish (at least 2 inches deep).
- Mix the drained crabmeat and the cocktail sauce together and then spread over cream cheese layer.
- Sprinkle chopped green pepper, green onion and tomato over crab layer.
- Cover vegetable layer with grated cheese, cover and refrigerate.
- Serve with crackers or tortilla chips for dipping.
- Can be made 1 day ahead and stored in refrigerator.

- Microwave potatoes as directed on package; place in large bowl. (Do not mash.) Cool slightly.
- Meanwhile, heat 1 Tbsp. oil in large skillet on medium heat. Add yellow onions, peppers and celery; cook 8 to 10 min. or until tender and lightly browned, stirring frequently. Add Worcestershire sauce and seafood seasoning; cook and stir 1 min. Remove from heat.
- Add mayo, parsley, mustard, garlic powder and 1 egg to potatoes; mash until potato mixture is smooth and well blended. Add cooked onion mixture, crabmeat and green onions; mix well. Refrigerate 1 hour.
- Shape crabmeat mixture into 20 patties. Place flour and bread crumbs in separate shallow bowls. Whisk remaining eggs in third shallow bowl until blended. Dip crab patties, 1 at a time, in flour, then eggs, then bread crumbs, turning to evenly coat both sides of each patty with each ingredient. Place on waxed paper-covered baking sheet.
- Melt 1-1/2 Tbsp. butter with 1 Tbsp. of the remaining oil in large skillet on medium heat. Add 5 crab patties; cook 3 min. on each side or until firm and golden brown on both sides. Drain on paper towels. Repeat with remaining butter, oil and crab patties.
