LAYERED BABY PEA SALAD
I'm not a fan of traditional pea salad, but this is layered with all things I love. I first tasted it at my sister-in-law's at Christmas dinner. It is great picnic food, too. Easy and yummy!

- Layer the butter lettuce in the bottom of a 9x11-inch deep casserole dish. Follow with separate layers of green bell pepper, red onion, celery, and baby peas.
- Whisk mayonnaise with seasoned salt in a bowl and spread in a layer over the peas; sprinkle the mozzarella cheese over the salad and serve immediately or chill.

Steps:
- Break salad and put in bowl.
- Chop green onion, celery, bell pepper.
- Dethaw green peas.
- Cook bacon and crumble.
- Mix Mayo, Sour cream and sugar together (this is your "mayo mixture" referenced below.).
- Grate the cheddar cheese.
- Layer ingredients in this order: (bottom to top).
- -Lettuce.
- -Green onion.
- --Celery.
- -Green peas.
- -Green pepper.
- -Mayo mixture.
- -Turkey bacon.
- -Cheddar cheese.
- -Sprinkle the top with Parmesean cheese.

LAYERED SALAD

- For the salad: In a clear glass bowl, layer the salad ingredients in the order they appear above, concentrating the ingredients around the perimeter of the bowl and filling in any gaps in the center with lettuce as needed. Start with a good layer of iceberg on the bottom, followed by the tomato wedges, spinach and Perfect Hard Boiled Eggs. Sprinkle the egg layer generously with salt and pepper. Layer on the bacon, green onions and Cheddar, and end with the peas.
- For the dressing: Combine the mayonnaise, sour cream and sugar in a small bowl and mix well.
- Pour the dressing over the top of the peas and spread evenly, bringing the dressing all the way out to the edges of the bowl. Sprinkle with the dill and parsley. Cover and refrigerate until serving.
- Place the eggs in a saucepan, cover with water and bring to a boil. Turn off the heat and allow the eggs to sit in the water for 20 minutes. Drain off the water and add ice to the pan on top of the eggs. Set aside to chill.

- 1. MAKING THE SALAD: Combine the sour cream, mayonnaise, sugar and salt and pepper to taste, whisk and set aside. Note: This recipe may be cut in half and put in an 8 X 8 glass baking dish. You will make two layers.
- 2. In a casserole or lasagna dish, put the first layer of spinach.
- 3. Add cheese, onions, eggs, ham, peas.
- 4. Cover with 1/2 of the dressing. Repeat layers of ingredients, finishing with the rest of the dressing on top.
- 5. REFRIGERATE: Cover and refrigerate overnight to blend the flavors. Just before serving sprinkle the crisp bacon on top. Cut in squares to serve.
