LAVENDER TRUFFLES
These truffles are a slice of heaven. The lavender's flavor is earthy but really pops in the chocolate. The chocolate is so silky smooth and is like eating a cloud. Use up to 1/2 cup of cream for a softer lavender filling.

- Place the flower heads and cream into a small microwave safe glass bowl. Cook in the microwave on High until hot to the touch, 20 to 30 seconds. Once hot, stir the flowers with a spoon, and set aside to steep 5 minutes. Return to the microwave, and cook 10 to 20 seconds to reheat. Stir again, and set aside to steep 5 minutes more. Repeat the heating-stirring-steeping process two more times until the cream is strongly flavored with lavender.
- Combine the bittersweet chocolate with the semisweet chocolate in a microwave safe glass bowl. Divide the chocolate into equal portions, and set one portion aside. Cook the remaining chocolate in the microwave on High in 20 to 30 second increments until melted, stirring between each heating. Using a fine-mesh strainer, strain the cream into the melted chocolate; discard the flower heads and bits of lavender. Stir the cream and chocolate together until smooth. Chill in the refrigerator until somewhat firm, but not hard, about 1 hour.
- After the lavender chocolate mixture has chilled, place the remaining chocolate and butter into a microwave safe glass bowl. Cook in the microwave on High in 20 to 30 second increments until just melted, stirring between each heating; set aside.
- Line a baking sheet with a piece of waxed paper. Roll the lavender mixture into 1 tablespoon-sized balls, and dip into the melted chocolate mixture using a skewer or toothpick. Place onto the prepared baking sheet, and chill in the refrigerator at least 2 hours to harden.

- Bring cream and butter to a boil in a small heavy saucepan and stir in tea leaves. Remove from heat and let steep 5 minutes.
- Meanwhile, finely grind chocolate in a food processor and transfer to a bowl. Pour cream through a fine-mesh sieve onto chocolate, pressing on and discarding tea leaves, then whisk until smooth. Chill ganache, covered, until firm, about 2 hours.
- Spoon level teaspoons of ganache onto a baking sheet. Put cocoa in a bowl, then dust your palms lightly with it. Roll each piece of ganache into a ball (wash your hands and redust as they become sticky). Drop several balls at a time into bowl of cocoa and turn to coat. Transfer as coated to an airtight container, separating layers with wax paper.

- Preheat oven to 400 degrees F.
- Place bread slices on a baking sheet and bake until lightly toasted, approximately 5 to 6 minutes. Remove from oven.
- In a medium bowl or mini-processor, mash the olive paste (or chopped olives), truffle oil, and lavender flowers together.
- Spread olive mixture on the warm bread and serve immediately.
- Serve with a good red wine and enjoy!

- Heat the cream and butter for 40 seconds in the microwave, and add chocolate to it. Let it sit for a minute to two and whisk the chocolate till it melts. You may need to microwave it for another 30 seconds, so make sure you are using a microwave safe bowl. Once the chocolate is smooth, whisk in the lavender extract. Cover the bowl with cling film and refrigerate for at least 4-5 hours.
- 30 minutes before you are ready to roll out your truffles, place a baking tray covered with foil in the fridge to cool, along with two spoons and a fork.
- Fill a ziplock bag with ice and wrap it in a kitchen towel. You will need this to keep your hands cold.
- Use a spoon to scoop out roughly two teaspoons truffle mixture and place on the foil lined sheet, till you’ve used up all the mixture. You should get 10-12 parts.

- Place the fennel seeds in a small, heavy skillet over medium-high heat. Toast the seeds until fragrant, about 3 minutes (watch carefully, so they don't burn). Using a spice grinder or mini-food processor, grind to a fine powder, about 30 seconds. Set aside.
- In a food processor, grind the chocolate to a fine powder, about 10 seconds. Pour ground chocolate into a medium-sized, heatproof bowl, and set aside.
- Place the cream and butter in a small, heavy saucepan and bring to a boil over high heat, about 1-2 minutes. Once boiling, remove from heat and stir in the lavender and fennel seeds. Cover and steep for 10 minutes.
- Strain the infused cream into the bowl with the ground chocolate, pressing on the solids in the strainer with the back of a spoon. Discard solids remaining in the strainer. Add the granulated sugar to the chocolate-cream (ganache) mixture. Whisk the chocolate, cream, and sugar together until smooth. If not completely smooth, place the bowl over a pan of simmering water to help melt the chocolate a little more. Cover the bowl with plastic wrap and refrigerate for about 2 hours until the mixture is thick enough to scoop.

- To make the truffle center, heat the cream in a double boiler over simmering water until hot. Add the white chocolate, ground lavender, ground almonds, and vanilla extract and stir until the white chocolate melts and the mixture is smooth, then immediately remove from the heat. Allow to cool to room temperature, then place in the refrigerator to chill for 2 hours.
- At this point, the mixture should have hardened enough to scoop into a ball. Use a tablespoon to scoop a heaping mound of truffle onto a baking sheet lined with parchment paper. Continue to do this until all of the truffle mixture is on the baking sheet. Place the sheet in the freezer for 20 minutes to help it harden.
- While the sheet is in the freezer, make the white chocolate coating. In the double boiler, heat the milk and cream above simmering water until hot. Stir in the white chocolate until melted and smooth. Remove from heat and set aside.
- After 20 minutes have passed, remove the pan from the freezer, quickly roll each of the balls between your hands to smooth them out a bit and place them on a wire rack with a baking sheet underneath or a baking sheet lined with parchment paper. Then drizzle the melted white chocolate over the truffles until coated and sprinkle the top of each one with a pinch of lavender, pressing down on the lavender gently to help it stick to the melted white chocolate. Place the wire rack/baking sheet in the freezer for 30 minutes to help the white chocolate harden quickly. Store the truffles in the refrigerator until ready to serve.
