SIMPLE PERFECT ENCHILADAS



Simple Perfect Enchiladas image

2 tablespoons canola oil
2 tablespoons all-purpose flour
One 28-ounce can enchilada or Mexican red sauce
2 cups chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1 pound ground beef
1 medium onion, finely chopped
1/2 teaspoon salt
Canola oil, for frying
10 to 14 corn tortillas
Two 4-ounce cans diced green chilies
1 cup chopped green onions
1/2 cup chopped black olives
3 cups grated sharp Cheddar cheese
Cilantro, for garnish

Steps:

  • In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
  • While the sauce is simmering, brown the ground beef with the onions in a large skillet over medium-high heat. Drain the fat, add the salt and stir to combine. Turn off the heat and set aside.
  • In a small skillet over medium heat, heat some canola oil. Lightly fry the tortillas just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
  • Preheat the oven to 350 degrees F.
  • Spread 1/2 cup of the sauce in the bottom of a 9- by 13-inch baking dish. Next, one at a time, dip each tortilla into the sauce. Set the sauce-soaked tortilla on a plate. Place on some of the meat mixture, chilies, green onions and black olives. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
  • Place the tortilla seam side down in the baking dish. Repeat with the rest of the tortillas and pour the remaining sauce over the top. End with a generous sprinkling of cheese and any other bits of chiles, green onions or olives you have left over from the filling.
  • Bake the enchiladas for 20 minutes, or until bubbly. Sprinkle chopped cilantro over the top and serve.

3 large lemons, juice of
2 tablespoons Dijon mustard
2 tablespoons garlic
1 teaspoon cajun seasoning
1 teaspoon thyme
1 teaspoon sage
1 teaspoon rosemary

Steps:

  • Combine the above ingredients and marinate the chicken breast in it for 1-3 hours.
  • Toss on the NuWave rack and cook until tender and juicy. (About 6-8 minutes per side).

This is a great meal for your Nuwave/Flavorwave oven from frozen! Your house will smell yummy! Note: depending on your size of Turkey Breast you might want to check after 1:15 to your liking. I normally like mine "Well done".

4 lbs turkey breast, Frozen
3 tablespoons rosemary
3 tablespoons thyme
2 1/2 tablespoons garlic salt (or regular salt if you like)

Steps:

  • Mix Rosemary, Thyme & garlic salt together. Dunk Turkey Breast in warm water for a minute or two. This will make the skin able to take rub.
  • Place rub all over Turkey.
  • Place in your Nuwave for 1 1/2 to 1 3/4 hours on high.
  • Note, if Turkey starts to get brown, you can "flip it over" 3/4 of the way though cooking time. This will brown both sides of the Turkey.
  • If you wish to cook one side, cover with foil if getting to brown.
  • Check Turkey with therm. It should read 180 for well done, if lower cook an additional 10 minute Check again. Depending on how frozen, this is a guidline. Check after 1 hour to 1 1/2 hours.

1 small onion
4 flour tortillas
12 ounces olives
1 (12 ounce) can refried beans
12 ounces enchilada sauce
1 1/2 cups cheese

Steps:

  • Brown meat with onion and seasonings. Drain grease.
  • Layer each tortilla with beans, meat, spoonful of sauce, a couple olives and cheese.
  • Roll tortillas and lay seam side down on liner pan.
  • Pour Remaining sauce and olives on top. Bake 25-30 minutes.
  • Place remaining cheese on top the last 2 minutes.

This is my sister recipe that everyone loves. It fills the house with a wonderful aroma. My Dogs were checking the tables to see if we had left anything on the coffee tables. Once I opened up the oven, I could not get them out of the kitchen.

1 1/2 lbs ground turkey (can use one pound if that is all that is avail)
1 onion (med-chopped)
16 ounces olives (whole or sliced)
16 ounces light sour cream
6 -8 flour tortillas (burrito size)
2 -3 cups cheese (shredded)
1 (20 ounce) can red enchilada sauce (med or mild)
1 (10 3/4 ounce) can campbell's tomato soup (undiluted)
1 (1 1/4 ounce) package taco seasoning

Steps:

  • Brown ground turkey & onions in pan (in oil).
  • Sprinkle contentions of pkg. over meat. Add 1 ½ cup water and simmer for 5 minutes.
  • Keep warm.
  • To assemble: mixed tomato soup and enchilada cause together in a bowl.
  • 1 tortilla on a plate, take a tbsp of sauce and spread over tortilla.
  • Take meat and put ½ cup meat down middle. On top of that put cheese on top. Then add olives on top of that. 2 tablespoons sour cream on pile. Roll up and put seam face down in 9 x 13 pan. Make sure you put sauce down on bottom of pan first. Then add enchiladas. Continue until full approx 7-8. Make sure you have enough sauce & cheese at the end.
  • Cook on HI heat for 15 - 20 minutes or until Cheese if melted and looks done.
