1 stewing chicken (about 5 pounds), cut up
10 cups water
1 large onion, chopped
2 medium carrots, sliced
3 celery ribs, chopped
4 garlic cloves, minced
1 teaspoon salt
1/4 cup butter
6 tablespoons all-purpose flour
1/8 teaspoon paprika
1/8 teaspoon pepper
1/2 cup half-and-half cream
DUMPLINGS:
2 cups all-purpose flour
4 teaspoons baking powder
4 teaspoons sugar
1 teaspoon salt
2 large eggs, room temperature
1/2 cup buttermilk
1/4 cup butter, melted

Steps:

  • In a stockpot or Dutch oven, combine first seven ingredients. Bring to a boil; skim foam from broth. Reduce heat; cover and simmer until chicken is tender, about 1-1/2 hours. Remove chicken; when cool enough to handle, debone and dice. Strain broth, reserving broth and vegetables. , In the same pot, melt butter. Stir in flour, paprika and pepper until smooth. Gradually stir in 6 cups reserved broth (save remaining broth for another use). Bring to a boil; boil and stir for 2 minutes. Reduce heat; stir in the cream, reserved vegetables and chicken. Cover and bring to a boil; reduce the heat to simmer. , For dumplings, combine flour, baking powder, sugar and salt in a bowl. Combine eggs, buttermilk and butter; stir into dry ingredients to form a stiff batter. , Drop by tablespoonfuls onto simmering mixture. Cover and simmer until a toothpick inserted in a dumpling comes out clean (do not lift cover while simmering), about 20 minutes. Serve immediately.

1 large onion, minced
2 roughly chopped celery stalks, plus 2 stalks, diced
2 roughly chopped small carrots, plus 1, diced
3 cloves garlic, minced
1 cup dry white wine
6 cups chicken stock or canned chicken broth, heated
2 sprigs fresh rosemary or 1 1/2 teaspoons dried, crumbled
1 bay leaf
Salt and freshly ground pepper
3 to 4 pound chicken, cut into 8 pieces and backbone removed
2 tablespoons cornstarch
1/2 cup heavy cream or half-and-half
Fresh lemon juice
Buttermilk dumplings, recipe follows
Minced fresh chives or parsley, as a garnish
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons minced parsley or dill
Freshly ground pepper
3 tablespoons cold unsalted butter, cut into bits
1/2 cup buttermilk, or more, if necessary

Steps:

  • Melt the butter in a large, heavy casserole, add the onion, chopped celery, and chopped carrot, and cook the vegetables, stirring occasionally, for 5 minutes. Add the garlic and cook, stirring, 1 minute. Add the wine and reduce 1 minute. Add the chicken stock, rosemary, bay leaf, salt, and pepper, to taste. Add the chicken to the pot and bring liquid to a boil.
  • Reduce the heat to low, cover and simmer, skimming and stirring occasionally, for about 30 minutes.
  • Remove the chicken from the pot and transfer to a cutting board. When cool enough to handle, remove meat from bones. Cut chicken into bite-side pieces. Skim surface of cooking liquid and strain it through a sieve into a large saucepan. Add the diced vegetables, bring to a boil and simmer for 5 to 7 minutes, or until vegetables are tender.
  • In a small bowl, whisk together the cornstarch and the cream. Add the cream mixture to the boiling stock, stirring, and simmer until lightly thickened. Add chicken to saucepan and correct the seasoning adding the lemon juice and salt and pepper to taste. Bring to a simmer and top with the dumplings, spacing them evenly. Cover, reduce heat to moderate and simmer until dumplings are firm to the touch and cooked through, about 20 minutes. Sprinkle with chives or parsley.;
  • Into a bowl, sift the flour, baking soda, and salt. Add parsley, the pepper, and the butter and blend until mixture resembles coarse meal. Stir in just enough buttermilk to form a soft dough.
  • Gently pat the dough into a 1/2-inch thickness and stamp or cut into 1 1/2-inch pieces.

2 bay leaves
6 sprigs thyme
4 to 5 black peppercorns
1 head garlic, split through the equator

3/4 to 1 cup buttermilk
2 bay leaves
2 tablespoons butter
2 tablespoons oil
2 carrots, diced

6 cups chicken stock
1 cup frozen peas
1 cup frozen pearl onions
1/4 cup heavy cream

Steps:

  • For the stock:
  • Place the chicken and all stock ingredients in a large Dutch oven and cover with water. Set over medium-high heat and bring to a boil. Reduce heat to a simmer and cook for 1 hour until the chicken is tender. Skim the surface of fat and scum as it cooks.
  • When done remove the chicken to a cutting board. Strain the stock and shred the meat into big pieces - the stock will be used for the sauce and the chicken will be folded into it.
  • For the dumplings:
  • Sift the dry ingredients together in a large bowl. In a small bowl, using a whisk, lightly beat the eggs, chives and buttermilk together; pour the liquid ingredients into the dry ingredients and gently fold. Mix just until the dough comes together; the batter should be thick and cake-like.
  • To prepare sauce: In a Dutch oven, over medium heat, add the butter and oil. Add the carrot, celery, garlic, and bay leaves and saute until the vegetables are soft, about 5 minutes. Stir in the flour to make a roux. Continue to stir and cook for 2 minutes to coat the flour and remove the starchy taste. Slowly pour in the chicken stock, 1 cup at a time, stirring well after each addition. Add frozen peas and pearl onions.
  • Let sauce simmer until it is thick enough to coat the back of a spoon, about 15 minutes. Stir in heavy cream.
  • Fold the reserved shredded chicken into the sauce and bring up to a simmer. Using 2 spoons, carefully drop heaping tablespoonfuls of the dumpling batter into the hot mixture. The dumplings should cover the top of the sauce, but should not be touching or crowded. Let the dumplings poach for 10 to 15 minutes until they are firm and puffy. Remove and discard the bay leaves. Season with freshly cracked black pepper and garnish with chopped chives before serving.

Homemade buttermilk dumplings, made from scratch.. oh so good! Soup will be good, even if you use boneless, skinless chicken, but flavor is BETTER using bone-in/skin-on for cooking the stock. Use a wide covered stock pot to make cooking the dumplings easier (I use the Farberware 6 qt). I prefer to add in extra cooking time and chilling time, so I actually start this soup the day ahead in the morning, but it's still delicious without the extra cooking/chilling steps.

1 whole chicken
2 -3 teaspoons salt
1 large onion
4 stalks celery, with leafy tops
4 carrots
1 garlic clove (optional)
1 teaspoon poultry seasoning (optional)
2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
8 ounces buttermilk
4 tablespoons fat (butter, chicken fat, shortening or olive oil)

Steps:

  • Place chicken in wide stock pot with salt. Add water to cover by at least 1". Bring to a boil, then immediately turn down to a gently rolling simmer. Simmer, uncovered, for 30 minutes (30-40 minutes total if you're skipping the cooling stage, in which case you'll add the veggies and dumplings to cook during the final 20 minutes).
  • While chicken is cooking, wash and slice veggies and prepare dumpling dough.
  • Remove chicken; debone and remove skin, shred. (you can skip this, but for more favorful broth, add the bones and skin back in and simmer all day.).
  • Strain broth, chill overnight in same pot (to make skimming the fat easier). If skipping the overnight chilling, simply spoon the fat from the top of the warm broth.
  • Reheat broth, add in seasoning, shredded chicken, and veggies (including celery leafs). Bring heat to a moderate simmer.
  • Drop spoonfuls of dumpling dough into the pot (easier with two spoons), not too big because they'll double in size as they cook.
  • Simmer, covered, for 10 minutes, then uncovered an additional 10 minutes. As the dumplings get closer to being cooked, they get fluffy and float up.

7 small boneless skinless chicken thighs (about 3oz each) or 7 small chicken breasts (about 3oz each)

3 cups home-made chicken broth or 3 cups low sodium organic chicken broth

10 1/4 ounces refrigerated buttermilk biscuits (5 large biscuits)

Steps:

  • Heat oil in large pot over medium-high heat.
  • Cook chicken 6 minutes on each side or until lightly browned.
  • (Chicken may not completely cook through but will finish cooking when returned to broth.).
  • Transfer chicken to cutting board; cut into bite size pieces; set aside. (Keep warm).
  • Melt butter in pot over medium heat.
  • Add onion, celery, and carrot and saute for 3 minutes.
  • Stir in broth,, thyme, sea salt, & pepper.
  • Bring to a boil, reduce heat and simmer, covered 5 minutes.
  • Whisk together cream and cornstarch in a small bowl; stir in simmering broth.
  • Cut each biscuit into quarters and dredge pieces in flour, shaking off excess.
  • Add biscuits to broth and cook partially covered or until biscuits are firm to the touch. (Biscuits will continue to cook.).
  • Add chicken, lemon juice and chives to broth, simmer until chicken is heated throguh.
  • Season with additional sea salt & freshly ground black pepper, if desired.

1 (32 ounce) carton chicken broth

Steps:

  • Pour chicken broth, cream of chicken soup, and pepper into large pot. Whisk until blended, then add drained Swanson chicken and carrots. Bring to a boil and simmer until carrots are tender (about 30-40 minutes).
  • Blend in shortening with fork until crumbly.
  • Mix baking soda into buttermilk.
  • Mix buttermilk mixture into flour mixture and blend until all ingredients are moist.
  • Set dough aside and add the frozen peas to the stew. Simmer for about 10 minutes. Add whipping cream to chicken stew and stir while bringing to boil.
  • After stew has reached a boil, drop spoonfuls of biscuit dough into stew.

Heartier than chicken soup, this classic comfort dish is decidedly more stewlike, thanks to a golden-brown roux, a densely flavored chicken broth, and, of course, the dumplings. Think of them as a biscuit meeting a matzo ball: fluffy little clouds made from a quick mixture of flour, baking powder, buttermilk, butter and an egg for springiness. They're cooked right on top of the chicken stew, partly poaching and partly steaming.

2 pounds bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
1 large yellow onion, diced
4 stalks celery, chopped
6 medium carrots (about 1 1/2 pounds), peeled and sliced 1/4-inch thick
4 sprigs thyme
1 tablespoon unsalted butter, plus more as needed
1/4 cup all-purpose flour
2 large leeks, white and light green parts thinly sliced
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
3/4 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
1/2 cup parsley, tender leaves and stems, finely chopped (optional)
1/4 cup chives, finely chopped (optional)

Steps:

  • Season chicken on both sides with salt and pepper. Heat oil in a large Dutch oven over medium-high heat. Working in batches if needed, sear chicken, skin-side down, until deeply golden brown, 8 to 10 minutes. Flip chicken and continue to cook until it is browned on the other side, another 5 to 8 minutes. Transfer chicken to a large plate, and pour off all fat into a measuring cup. (You should have about 5 tablespoons, depending on the fattiness of the chicken.)
  • Leaving all the browned bits in the pot, return 2 tablespoons of fat to the pot. Add onions, celery and half the carrots. Season with salt and pepper and cook on medium heat, stirring to scrape up all the bits on the bottom of the pot. Cook until vegetables start to soften, about 4 minutes or so. Return chicken to the pot along with thyme and 8 cups of water. Simmer, uncovered, until chicken is completely tender and liquid has reduced by about 1/4, about 30 to 40 minutes.
  • Transfer chicken to a plate or cutting board to cool. Strain the stock (you should have about 5 cups; if you have less, you can add water to make up the difference) and wipe out the pot.
  • Heat remaining 3 tablespoons chicken fat along with 1 tablespoon butter (if you don't have enough chicken fat, use enough butter to equal 4 tablespoons of fat) over medium heat. Sprinkle in flour and stir constantly until it's all a pale golden brown, about 2 to 3 minutes.
  • Slowly whisk in reserved chicken stock until no lumps remain (it will thicken considerably at first) and bring to a boil. Add leeks and remaining carrots, season with salt and pepper and lower the heat to simmer.
  • Remove and discard the skin and bones from the chicken. Shred the meat and add to the pot. Cook, stirring occasionally, until liquid is nicely thickened and carrots and leeks are tender, 10 to 12 minutes.
  • Make the dumplings: In a medium bowl, whisk together flour, baking powder, salt and pepper. In a small bowl, whisk together buttermilk and egg and add to dry ingredients, followed by melted butter. Using a wooden spoon or spatula, stir just to combine. (Do not overmix.)
  • Using a spoon, drop generous quarter-size dollops of the dumpling dough into the pot (they should just sit right on top; they will not sink), spacing them apart as much as possible (it's O.K. if they touch). Cover the pot and reduce heat to low. Cook, undisturbed, until the dumplings are puffed and totally cooked through, 18 to 22 minutes. (Test a dumpling by cutting it in half; it should look slightly biscuity, but with no raw bits of dough. If it needs more time, continue to cook.)
  • Remove lid and divide among bowls; sprinkle with parsley and chives, if using.
