This is the best lasagna ever!! The noodles are so nice and thin and there is NO PREBOILING!! I will never purchase any other lasagna other than Barilla. I've been making this now for 3 years and everyone agrees--the recipe makes the very best! The instructions are right on the back of the lasagna box. I usually make multiple batches and freeze them. Its a great housewarming or "new baby" meal for a friend!

1 (9 ounce) box barilla no-boil lasagna noodles
2 eggs
1 (15 ounce) container ricotta cheese
4 cups shredded mozzarella cheese
1/2 cup parmesan cheese (optional)
1 lb ground beef or 1 lb sausage, browned
2 (24 ounce) jars spaghetti sauce or 2 (24 ounce) jars pasta sauce
parsley (to garnish)

Steps:

  • Preheat oven to 375.
  • In bowl, combine beaten eggs, ricotta cheese and TWO cups of the mozzarella cheese and parmesan.
  • If you choose not to use the parmesan, just add more mozzarella.
  • Set aside.
  • In a 13X9X3 pan, spread 1 cup of sauce on bottom of pan.
  • Layer in the order, 4 uncooked lasagna noodles (they will overlap), then 1/3 part of the ricotta cheese mixture, half the browned meat, 1 cup mozzarella cheese, and 1 cup of spaghetti sauce.
  • Next layer, 4 uncooked lasagna noodles, 1/3 part of the ricotta cheese mixture, and 1 1/2 Cups sauce.
  • Next layer, 4 uncooked lasagna noodles, remaining ricotta mixture and remained meat, 1 cup of sauce.
  • For top layer, 4 uncooked lasagna noodles, remaining sauce, and remaining 1 cup mozzarella.
  • Bake covered with foil for 50-60 minutes.
  • Uncover and continue cooking until all the cheese is melted on the top (about 5 minutes).
  • Let stand 15 minutes before serving.
  • If you are using a 13X9X2 pan---just make 3 layers to avoid boiling over.

This is a really good basic lasagna recipe. It's based on one I found somewhere, but I've tweaked it quite a bit to suit my own tastes. I like it as written with italian sausage, but you can substitute ground beef if you must.

1 1/4 lbs Italian sausage, casings removed (I use spicy)
1 (28 ounce) jar spaghetti sauce, of your choice
1 (14 1/2 ounce) can diced tomatoes
1 1/2 cups water
1 garlic clove, chopped
1 teaspoon italian seasoning
12 ounces ricotta cheese (about 3/4 small container)
3 cups grated mozzarella cheese
1/2 cup grated parmesan cheese
2 eggs
1 tablespoon parsley
1/2 teaspoon ground black pepper
1 (8 ounce) package lasagna noodles, uncooked

Steps:

  • Heat oven to 350.
  • In large pan, brown italian sausage; drain.
  • Add spaghetti sauce, diced tomatoes, water, garlic and italian seasoning. Cover and simmer for 10-15 minutes.
  • In medium bowl, combine ricotta, 2 cups of the mozzarella, parmesan, eggs, parsley and pepper. Mix well.
  • Pour about 1 cup of the sauce on bottom of 9x13 pan.
  • Arrange 3 uncooked lasagna noodles over sauce; cover with about 1 cup sauce.
  • Spread 1/2 the cheese filling over sauce.
  • Repeat layers of lasagna, sauce and cheese filling.
  • Top with layer of lasagna and remaining sauce; sprinkle with remaining 1 cup mozzarella cheese.
  • Cover with foil and bake at 350 for 45 minutes.
  • Remove foil; bake an additional 15 minutes.
  • Let stand 10 minutes before cutting.

8 -10 regular lasagna noodles (not the no boil noodles!)
40 ounces spaghetti sauce
24 ounces small curd cottage cheese
2 eggs
4 cups mozzarella cheese
1 lb hamburger

Steps:

  • Preheat oven to 350°F.
  • Brown hamburger and drain.
  • Mix hamburger with spaghetti sauce.
  • Beat eggs and mix into cottage cheese.
  • Spray 9x13 pan with non-stick spray.
  • Spoon 1/4 cup meat mixture on bottom of pan and spread around.
  • Place four (or 5) lasagna noodles (uncooked) on top of sauce.
  • Layer half of cottage cheese mixture on noodles, then half of meat mixture and half of cheese.
  • Place remaining noodles on top of cheese.
  • Layer remaining cottage cheese, meat mixture and cheese.
  • Cover lasagna with foil and place in oven.
  • Bake for 60 minutes.
  • Remove foil and bake for 15-20 minutes more, until cheese is melted and bubbly.
  • Let sit for about 10 minutes before serving.

1 lb ground chuck
1/2 cup yellow onion, diced (about 1/2 onion)
2 tablespoons butter
2 minced garlic cloves
1 (14 ounce) can petite diced tomatoes
1 (6 ounce) can tomato paste
1 (6 ounce) can tomato sauce
1 teaspoon sugar
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon thyme
1 teaspoon garlic pepper seasoning
1/2 teaspoon garlic sea salt (salt or garlic salt can be used instead)
1 1/2 cups water
1 (15 ounce) ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup parmesan cheese
1 egg
9 lasagna noodles
1 cup shredded mozzarella cheese

Steps:

  • In 9 X 13 inch pan, place 9 lasagna noodles and fill with cold water until noodles are covered. Set aside.
  • Melt butter for sauce in deep skillet and add minced garlic and diced onion. Cook until onions are transparent.
  • Add ground chuck to onions and cook, breaking up into small pieces with spatula.
  • While ground chuck is cooking, mix all Cheese mixture together, adding egg last. Set aside.
  • After ground chuck mixture is cooked, add remaining sauce ingredients: First add diced tomatoes, paste and sauce; then sugar and spices; then combine water into the mixture and stir well. Turn off burner.
  • Using a 9 X 13 inch glass baking dish, spread a small amount of sauce onto the bottom of the dish.
  • Place three of the lasagna noodles in a line in the bottom of the dish. Add approximately 1/3 of the cheese mixture and smooth over the lasagna noodles. Add approximately 1/4 of the sauce mix on top of the cheese mixture and lightly spread it to even it out.
  • Add a layer of lasagna noodles and repeat cheese and sauce layers. Repeat once again for the top layer.
  • With the last 1/4 of the sauce mixture, use it to spread around the edges and make sure all noodles are covered with sauce. (If not, the noodle will be hard when cooked).
  • Cover with foil and bake at 350 degrees for 1 hour.
  • Remove from oven, remove foil and add remaining 1 cup of mozeralla. Bake for an additional 10 minutes, cheese will melt.
  • Remove from oven and cut into 12 squares.

1/2 lb Italian sausage (mild)
1 medium onion (chopped)
3 garlic cloves (minced)
1 (24 ounce) jar marinara sauce
1 cup water
1 (15 ounce) package ricotta cheese
1/2 cup parmesan cheese (grated)
1 teaspoon basil
1 (8 ounce) package lasagna noodles (extra wide)
3 cups mozzarella cheese (shredded)

Steps:

  • Preheat oven to 375°.
  • In a sauce pan, heat oil to medium high heat. Add garlic and onions, and reduce the heat to medium low to sweat until translucent.
  • Return pan to medium high heat. Brown beef and sausage. Drain and return to skillet.
  • Stir in marinara sauce and water. Remove meat mixture from heat.
  • In a small bowl, combine ricotta, parmesan and basil.
  • In 9x13-inch baking dish, layer one-third of the meat mixture, half of the uncooked lasagna pieces, half the ricotta mixture, and half the mozzarella cheese. Repeat layers once, ending with meat mixture.
  • Cover tightly with foil. Bake 1 hour and 30 minutes.
  • Uncover. Sprinkle with additional parmesan cheese, if desired.

1 lb ground beef or 1 lb Italian sausage
1/2 cup onion, chopped
1 garlic clove, minced
1 (28 ounce) jar spaghetti sauce or 3 1/2 cups spaghetti sauce
3/4 cup water
8 wide lasagna noodles
2 cups ricotta cheese or 2 cups cottage cheese
1/2 cup parmesan cheese
1 tablespoon chopped parsley
3 cups shredded mozzarella cheese
2 tablespoons parmesan cheese (for sprinkling on top)

Steps:

  • Heat oven to 375°.
  • Use a 9x13 GLASS pan.
  • Brown ground beef or sausage with onion and garlic.
  • Drain off fat.
  • Return beef mixture to skillet.
  • Stir in spaghetti sauce and water.
  • In a small bowl, combine ricotta, Parmesan and parsley; set aside.
  • In 13x9" glass pan, layer 1/3 of sauce.

  • Layer one half of ricotta mixture and half of mozzarella.
  • Cover with 1/3 sauce.
  • Repeat layers, ending with sauce mixture.
  • Cover tightly with foil.
  • Bake 1 hour,.
  • Uncover, sprinkle with extra parmesan . Let stand 10 minutes before serving.
  • For Florentine, omit meat and parsley. Stir onion, garlic and one 10 oz. package frozen chopped spinach that has been thawed and drained and 1/8 teaspoons nutmeg into cheese mixture. Layer as above. I often use steamed, chopped fresh spinach.
  • Microwave directions: ( I have never used these) Prepare as above except use plastic wrap and vent corner. Microwave on high for 10 minute or until sauce boils. Microwave at 50% power for 30-35 minute or until pasta is tender, rotating dish after 15 minute Uncover: top with parmesan cheese. Let stand 10 minute before serving. These directions were for older microwaves, so be careful with the times.

28 ounces prepared spaghetti sauce
6 ounces tomato paste
1 (10 3/4 ounce) can condensed tomato soup
32 ounces tomato juice
1 1/2 lbs ground beef, browned and drained
italian seasoning, to taste
9 ounces lasagna noodles, uncooked
32 ounces cottage cheese
16 ounces shredded mozzarella cheese
1 cup parmesan cheese
2 eggs, lightly beaten

Steps:

  • Mix all the sauce ingredients together.
  • Mix all the filling ingredients together.
  • Layer the dry noodles, sauce and filling (three layers) in a greased baking dish (9"x13") starting and ending with sauce and leaving space around the edges of the noodles for expansion and for the remaining sauce (the sauce should be very soupy because the excess liquid will be absorbed by the noodles).
  • Top with additional Parmesan cheese and bake about ninety (90) minutes (I bake it for one hour covered and the last half hour uncovered) at 325°F or until bubbly in the center.
