PAN SEARED LAMB LOIN CHOPS

Made with rosemary, garlic, and butter to compliment the natural richness of the lamb, these Pan Seared Lamb Loin Chops are simple to prepare with in a cast iron pan and have the wonderful crust you get at a nice restaurant!

Number Of Ingredients 8

8-9 bone-in lamb loin chops (about 1-inch thick)
2 teaspoons kosher salt (adjust as needed)
1 teaspoon freshly ground black pepper
2 Tablespoons olive oil (for the pan)
4 Tablespoons salted butter
4 cloves garlic minced
1 Tablespoon chopped fresh rosemary
1 Tablespoon chopped fresh thyme

Steps:

  • Let the lamb chops sit at room temperature for 20 minutes. Pat dry and season the lamb chops with salt and pepper on all sides.
  • Heat a large cast iron skillet or other heavy pan on medium-high heat until very hot. Add the olive oil and heat for a minute, then carefully place the lamb chops in the pan, leaving a little space between them.
  • Cook for 3-4 minutes until seared on the bottom side, then flip with tongs and cook another 3-4 minutes on the other side to sear.
  • Reduce the heat to medium-low and add the butter, garlic, rosemary and thyme. Spoon the melted butter, garlic, and herbs over the lamb chops while continuing to cook for about 5 more minutes or until the temperature on a digital meat thermometer inserted into the meaty part of the lamb chops reaches 125 degrees F for medium-rare.   • Remove from the lamb chops from the heat, cover with a piece of foil, then let the meat rest for 10 minutes before serving.

1/3 cup prepared mustard
1/8 teaspoon onion salt
1/8 teaspoon pepper

Steps:

  • In a small saucepan, combine the honey, mustard, onion salt and pepper. Cook and stir over medium-low heat for 2-3 minutes or until heated through., Brush sauce over both sides of lamb. 1 cup molasses
1/4 cup Dijon mustard
1/4 cup balsamic vinegar
1 teaspoon ancho chile powder
2 cloves garlic, finely chopped
Eight lamb chops, (8 ounces each, 3/4 inch thick)
Olive oil
Salt and freshly ground black pepper

Steps:

  • For Mustard-Molasses Glaze: Mix together until combined.
  • For the lamb chops: Preheat the grill to medium heat. Brush each lamb chop on both sides with olive oil and season with salt and pepper to taste. Cook the chops on one side for 3 to 4 minutes, or until golden brown. Turn over and cook for 6 to 7 minutes for medium-rare doneness. During the last 2 minutes of cooking, brush the chops with the glaze on both sides.

2 teaspoons dried tarragon
1 teaspoon ground cinnamon

6 large garlic cloves
1/3 cup julienned fresh mint leaves
1 1/2 tablespoons ground turmeric
1 tablespoon whole coriander seeds
1 tablespoon ground cumin
1 tablespoon grated lemon zest (2 lemons)
Kosher salt
5 tablespoons good olive oil, plus extra for the grill
3 racks of lamb (6 to 7 ribs each), cut into chops
1 1/2 cups plain whole-milk Greek yogurt (12 ounces)
1 1/2 teaspoons Sriracha
3 tablespoons freshly squeezed lemon juice
Couscous with Pine Nuts and Mint, for serving, recipe follows
2 tablespoons good olive oil
1 tablespoon unsalted butter
1 cup chopped yellow onion
3 cups chicken stock, preferably homemade
1 1/2 cups couscous
Kosher salt and freshly ground black pepper
1/2 cup julienned fresh mint leaves, loosely packed
1/3 cup pine nuts, toasted

Steps:

  • Place the garlic, mint, turmeric, coriander, cumin, lemon zest, and 2 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade and process until finely ground. Add the olive oil and pulse to combine.
  • Place the chops in one or two non-metal dishes large enough to hold them in one layer. Spread the garlic and herb mixture evenly on both sides. In a small bowl, whisk together the yogurt, Sriracha, and lemon juice, and spread it evenly on the lamb chops. Cover, refrigerate, and allow to marinate for 6 to 24 hours.
  • Prepare a charcoal grill with hot coals and oil the cooking grate. Sprinkle the lamb with salt and grill 5 to 6 inches above the coals, first with the yogurt side up (marinade and all) for 4 to 5 minutes, then turn and grill for 3 to 4 minutes, until medium rare. Transfer to a clean plate, cover the plate tightly with aluminum foil, and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the couscous.
  • Heat the oil and butter in a large saucepan over medium heat. Add the onion and cook over medium-low heat for 6 to 8 minutes, stirring occasionally, until tender but not browned. Add the stock and bring to a boil. Stir in the couscous, 1 teaspoon salt, and 1/2 teaspoon pepper and remove from the heat. Cover the pot tightly and allow the couscous to steam for 10 minutes. Fluff the couscous with a fork and stir in the mint and pine nuts. Taste for seasonings and add about 1 teaspoon salt, depending on the saltiness of the stock, and 1/2 teaspoon pepper. Serve hot.

DH said next time we will use rib chops as he didn't think the loin chops needed all of the dressing up, though he agreed the glaze was very nice.

1 cup dark molasses
3 tablespoons Dijon mustard
2 tablespoons balsamic vinegar
1 tablespoon ancho chile powder
2 cloves garlic, finely chopped
8 rib lamb chops (each about 8 oz, 3/4 inch thick, can also use loin chops)
olive oil, for brushing the chops
kosher salt, to taste
freshly ground pepper, to taste
molasses-mustard glaze

Steps:

  • For the glaze: In a small bowl, mix all of the glaze ingredients together until combined.
  • For the lamb chops: Preheat a gas or charcoal grill to medium.
  • Brush each lamb chop on both sides with olive oil and season with salt and pepper. Cook until golden brown, 3 to 4 minutes. Turn over and cook an additional 3 to 4 minutes for medium rare. During the last 2 minutes of cooking, brush the chops on both sides with the Molasses-Mustard Glaze.

Lamb Loin Chops with Molasses Tarragon Glaze image

8 loin lamb chops 1 inch thick
salt and pepper
1 cup molasses
5 tablespoons Dijon style mustard
2 tablespoons cider vinegar
4 cloves garlic minced
2 teaspoons white pepper
1 tablespoon chopped fresh tarragon or 1 tsp dried

Steps:

  • Sprinkle chops with salt and pepper. Combine molasses, Dijon mustard, cider vinegar, garlic, white pepper, and tarragon. Put chops in a large container or bowl, cover with glaze and gently toss to coat them completely. Cover tightly and put in refrigerator to marinate 1 hour, or more if you have the time. You can actually marinate them up to 24 hours. When ready to cook, heat broiler on high. Line broiling pan with tinfoil and put in chops. Spoon some of remaining glaze over them, so they're all nicely covered (reserving a little). Cook about 4 minutes until crispy, remove from oven, turn chops and spoon more glaze over them. Return to oven and broil about 4 or 5 more minutes for medium rare, longer if you like them more well done. Test by cutting a small slit in the center of one of the chops to look for pinkness. Chops keep cooking once removed from oven, so it's better they be a hair underdone than over. Serve with salad, Tarragon Roast Potatoes, or Wild Rice Pilaf with Cherries, Zucchini, and Carrots, and a light dessert. Variation For a spicier chop, omit tarragon and white pepper and add 1 tsp. ground chili pepper (chipotle, ancho, cayenne, etc.).

I use Cortas Pomegranate juice which is very thick like molasses but no sugar is added in the cooking of it. It's just concentrated Pomegranate juice. I purchased it in a Greek store but also seen it on line. It gives the lamb a slightly sweet tangy taste.

  • Rub the rack of lamb with the salt, pepper, and rosemary leaves.
  • Combine the molasses, garlic, shallot and oil in a zip lock storage bag add the lamb chops, turning over a few times to coat thoroughly.
