LAMB TAGINE WITH PEARS
Sweet pears make an unexpectedly delicious foil for tender braised lamb shoulder in this stew-like dish. A trio of spices -- ginger, cinnamon, and saffron -- impart a wonderful aroma as the tagine simmers.

Steps:
- In a large skillet, heat 3 tablespoons oil over medium heat. Add shallots, and saute until lightly browned. Add lamb, and cook until browned all over. Add just enough water to cover (about 3 cups). Season with salt, pepper, ginger, cinnamon, and saffron. Simmer, covered, over low heat until lamb is very tender, about 1 hour. If the sauce needs to thicken, uncover, and cook for 15 minutes more.
- Meanwhile, quarter and core pears, but do not peel them. In a large skillet, heat butter and remaining tablespoon of oil over medium heat. Add pears, and cook until cut sides have caramelized. Place pears, skin-side up, on top of meat in the skillet. Continue to cook, covered, until pears are very tender, about 30 minutes. Be sure not to overcook pears or they will fall apart. Serve immediately.
LAMB WITH PEARS
This is a very yummy Jewish/Middle Eastern dish. Its the only way I like to eat lamb because it dosent taste like lamb.

Steps:
- In a large saucepan, brown the scallions in the grape seed oil. Add the Lamb steaks and brown on both sides. Put enough water in the sauce pan to half cover the meat and scallions.
- Sprinkle in the spices, stir until well mixed, and simmer.
- In another pan combine the butter with the remaining grape seed oil. Make sure the butter doesn't burn or brown. Add the sliced pear and caramelize the fleshy parts, NOT the skin. Add this to the Lamb and scallions. Cover and simmer until done to your liking.
- Serve with roti, paratha, or boiled potatoes. Goes well greek salad, tabouli, or chick-pea salad on the side.

MINTED LAMB & PEA STEW

- Toss the lamb in the flour. Heat half the oil in a large pan, then brown the lamb over a high heat for 2 mins. Transfer to a plate, then add the rest of the oil, shallots, leeks, carrot and potatoes to the pan. Fry for a few mins until starting to soften.
- Pour over the stock, scraping up any meaty bits, then simmer for 10 mins until the veg are almost cooked. Tip the lamb into the pan with the peas, then simmer for 4 mins or until the lamb is just cooked and the veg are tender.
- Scatter with mint to serve.

Steps:
- Cut lamb meat into 30gr cubes.
- Pan-fry lamb over high heat for 2 minutes.
- Add beef stock (or buillion), white wine and seasoning.
- Cover and simmer for 40 minutes.
- Add turnips and pearl onions and simmer until tender, about 5 minutes.
- Add cornstarch (diluted with a little water) to thicken the sauce.
- Add about a pinch of saffron, then the cream, then adjust seasoning (salt and pepper) to taste.
- Garnish with chopped parsley.

- preheat oven to 325.
- heat 2 tsp olive oil in a dutch oven on stovetop.
- season lamb with salt and pepper and add to brown on all sides, in batches.
- remove from pan.
- heat 1 tbsp oil, add onionsand saute until softened.
- add parsnips, cumin, garam masala, cook 3 mminutes, stirring.
- return lamb and juices to pan.
- add port, figs, chile paste, and broth to pan and bring to a boil.
- cover and place in oven, bake for 1 hour until lamb is tender.
- combine water and cornstarch with a whisk, add to lamb stirring until thickend and bring to boil on stovetop.
- season with salt and pepper.

LAMB WITH PEAR TAGINE
Tagine are Moroccan slow-cooked meat, fruit and vegetable dishes which are almost invariably made with lamb, but beef makes a nice alternative. I happened upon this recipe on the Berber Trading Company site while shopping for tagines. I love lamb and Moroccan food and this one looked interesting. This has a really nice flavor and goes well served with a flat bread or rice. Smells heavenly while cooking.

- In a large sauce pan gently fry the onion in the olive oil until soft.
- Add lamb, ginger, and coriander to the pan and cook until it changes color.
- Add cumin, black pepper, cinnamon, and water to just cover the meat.
- Salt to taste.
- Cover and simmer gently until the meat is tender, about 1.5-2 hours.
- If there seems to be a bit too much liquid, displace the lid after an hour of cooking.
- Add the pears to the meat together with almonds. Cook for a further 5 minutes or until the pears are soft.
- NOTE:.
- For a different twist on this, you can substitute mixed vegetables of your choice, instead of pear. It would make it more savory than sweet.

LAMB AND YELLOW SPLIT PEA STEW
Steps:
- Heat butter in a 2- to 3-quart heavy saucepan over moderate heat until foam subsides, then cook meat, onion, salt, pepper, and spices, uncovered, stirring occasionally, until meat is no longer pink, about 10 minutes. Add lime juice and water and simmer, covered, stirring occasionally, 30 minutes.
- Add split peas and simmer, covered, until peas are falling apart and meat is tender, 40 to 45 minutes. Keep warm, partially covered.
- Peel potato and cut into 1/4-inch dice. Heat 1/2 inch oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then fry potato in 2 batches, stirring occasionally, until crisp and golden brown, about 7 minutes. Transfer potato with a slotted spoon to paper towels to drain and season with salt.
- Fold fried potato into stew just before serving, or serve it on top.
LAMB AND RED PEPPER STEW
A lip-smacking lamb stew in a wine sauce, served with meltingly sweet red and yellow peppers. Serve with creamy mash and seasonal veggies.

- Heat 2 tablespoons of the olive oil in a large high-sided frying pan over medium heat. Add about three quarters of the onion and all of the garlic. Gently fry for about 5 minutes until soft.
- Meanwhile, lightly dust the lamb with flour. Heat a little more olive oil in another pan over high heat. Add the lamb chunks in batches and cook, turning, until evenly browned. Season with salt and pepper and set aside.
- Using the pan in which you've just cooked the lamb, turn up the heat, add one third of the wine, stirring and scraping the meat residue from the bottom of the pan. Allow to reduce for a minute or two.
- Stir the lamb and the reduced wine into the onions. Cook over medium heat for 20 minutes.
- Add the remaining wine to the lamb pan and allow the alcohol to evaporate. Then add the chicken broth and bring to a simmer.
- Cover the pan and gently braise the lamb over very low heat for 1 hour 30 minutes, stirring every 30 minutes or so.
- When the lamb has been cooking for about an hour, heat a little more oil in a pan over medium heat. Add the peppers and the remaining onion. Cover and cook over low heat for 15-20 minutes until soft.
- Check the lamb seasoning before serving.
- Place the peppers on individual serving plates and spoon the lamb on top. Finish with the cooking sauce and a touch of olive oil.
