BOURBON CARAMEL POPCORN

Steps:

• Preheat oven to 250°. Place popcorn in a large bowl. In a large saucepan, bring bourbon to a boil. Reduce heat; simmer, uncovered, 2 minutes. Add butter; cook on low until melted. Stir in brown sugar, corn syrup, cream of tartar and salt. Bring to a boil; cook 5 minutes longer, stirring occasionally. Remove from heat; stir in baking soda. Quickly pour over popcorn and mix well., Transfer to two greased 15x10x1-in. baking pans. Bake 1 hour or until dry, stirring every 15 minutes. Remove from pans to waxed paper to cool. Store in airtight containers.

KY BOURBON POPCORN

Steps:

• Preheat oven to 300*.
• Spread popcorn on a foil lined baking sheet.
• In a medium saucepan, stir together over medium heat the corn syrup, cocoa powder, sugar and butter. Allow to simmer lightly, then remove from heat. Stir in bourbon and vanilla, then drizzle over popcorn evenly, stirring to coat evenly. Stir in pecans, then sprinkle lightly with kosher salt.
• Place in oven for about 5-7 minutes to dry mixture out slightly, transfer to bowl, breaking up clumps a bit, and serve!

KENTUCKY BUCK

Steps:

• Gently muddle the strawberries with the Simple Syrup in a cocktail shaker. Add the bourbon, lemon juice, and Angostura bitters, then fill with ice and shake vigorously for 10-15 seconds. Double strain into a highball glass filled with fresh ice and top with the ginger beer. Garnish with a fresh strawberry.
