CRANBERRY ORANGE ICED TEA SPARKLER

For a fun play on bubble tea, cut some jellied cranberry sauce into "caviar," then put a spoonful into this seasonal mocktail. The carbonation from the Italian soda will give it a lava-lamp effect.

4 black tea bags
2 cups cranberry juice cocktail
Six 15-ounce cans Italian orange soda
One 14-ounce can jellied cranberry sauce, cut into small cubes
Orange zest curls, for garnish

Steps:

  • Bring 1 quart water to a boil, then remove from the heat and add the tea bags. Steep the tea, dunking the bags occasionally, 10 minutes. Remove the tea bags. Add the cranberry juice and stir. Refrigerate until chilled completely, about 1 hour.
  • Fill a tall glass a third of the way with the cranberry tea, then fill the rest of the way with the Italian orange soda. Add a heaping tablespoon of the cranberry cubes. Garnish with an orange zest curl and serve. Repeat with 11 more glasses and the remaining ingredients.

1 cup orange juice
1/2 cup sugar
2 cups water
7 black tea bags (recommended: Red Rose)
3 cups sparkling water, chilled
1/2 small orange, thinly sliced
Ice
Fresh mint or basil sprigs, to garnish

Steps:

  • Special equipment: a 60-ounce (7 1/2 cups) pitcher
  • For the syrup: In a small saucepan, bring the orange juice and sugar to a boil over medium-high heat. Simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove from the heat and cool for 20 minutes.
  • For the tea: In a small saucepan, bring the water to a boil. Add the tea bags and remove the pan from the heat. Allow the tea to steep and cool to room temperature, about 20 minutes. Remove the tea bags and discard. Pour the tea and syrup into a pitcher and refrigerate until ready to serve.
  • To serve: Pour the sparkling water into the pitcher and add the orange slices. Pour the tea into 4 ice-filled glasses. Garnish with fresh mint, or basil, and serve.

This is a recipe I found in my cookbook called Favorite Brand Name Classic Recipe Collection. It's really easy to make and the oranges offer a really refreshing citrus boost to the iced tea. I didn't include chilling time in the preparation time.

2 oranges
4 cups boiling water
5 tea bags
ice cube
honey or brown sugar, to sweeten

Steps:

  • With a vegetable peeler, peel each orange in a continuous spiral, removing only the outer colored layer of peel.
  • In a large pitcher, pour boiling water over the tea bags and orange peel. Cover and steep 5 minutes. Remove tea bags. Chill tea mixture with peel in a covered container.
  • To serve, remove the peel and pour iced tea over ice cubes in tall glasses.
  • Sweeten to taste with honey (or brown sugar). Garnish with orange slices and fresh mint leaves, if desired.

This is the everyday tea that you will find being served in all the households in Kuwait. It is refreshing & with a delicate flavour & aroma.

1 cup water
2 whole green cardamom pods, crushed
1/4 teaspoon saffron strand (pinch)
1 tea bag
1 teaspoon sugar (to taste)

Steps:

  • Put the tea bags, saffron & cardamon into a pan & add the water. Cover & bring to the boil. (if you do not like your tea strong, you can add the tea bag just after the water has boiled).
  • Turn off heat then allow to steep for 1-2 minutes.
  • Pour into cup (use tea strainer!) and add sugar to taste.

8 cups water
8 tea bags (I use a basic decaf black tea)
1/2 cup water
1/4 cup freshly squeezed orange juice
1/2 cup granulated sugar
2 cinnamon sticks
1 orange, zest of

Steps:

  • In a medium pot, bring 8 cups of water to a boil.
  • Once the water boils, add the tea bags and remove from heat.
  • Let the tea steep for 4 minutes.
  • Remove tea bags and let the brewed tea cool.
  • Once the tea is cooled, add the orange-cinnamon syrup. Mix thoroughly. Transfer to a serving pitcher and add ice.
  • Serve and enjoy!
  • To Make the Syrup:.
  • In a small saucepan, mix the water, orange juice and sugar. Add the cinnamon sticks and orange zest.
  • Turn heat to medium-high. Stir mixture frequently until it comes to a boil.
  • Once the mixture boils and the sugar has dissolved, remove saucepan from the heat.
  • Allow the sugar mixture to cool. It will thicken a bit once cooled.
  • Strain mixture to remove cinnamon sticks and any large pieces of orange zest.
  • Add cooled sweetener to brewed tea.

  • For the tea: Combine 8 cups of water, the orange peel and cinnamon sticks in a large saucepan. Place over low heat and bring to a boil. Add the tea bags and shut off the heat. Let the tea steep for about 5 minutes (no more or else it will be bitter), then remove the tea bags and chill the tea (don't remove the cinnamon sticks or the orange peel yet).
  • For the syrup: Add 1 cup of water, the sugar and the ginger to a small saucepan, and bring to a boil without stirring, over low heat. Once the contents of the pot come to a boil, shut the heat off. Tear the mint leaves and stalks into small pieces and drop into the syrup. Allow the syrup to come to room temperature, about 20 minutes. Strain and discard the solids.
  • Strain the tea into a pitcher. Add the ginger-mint syrup according to your taste buds, stir and serve in a tall glass over ice, garnishing with some fresh mint if you like. Sip languorously.
