Kielbasa gives this dish intense flavor. I like to serve it with wide egg noodles tossed with butter.

Steps:
- In 4 or 5-quart sauce pot, cook sliced kielbasa and onion over medium-high heat 5 minutes; stirring frequently or until browned.
- Add apples and cook stirring frequently about 1 minute.
- Stir in sauerkraut, chicken broth and caraway seeds.
- Reduce heat to low; cover and simmer for 20 minutes or until apples are tender and flavors blended.
GRANDPA'S SAUERKRAUT AND KIELBASA

Steps:
- Put the cold butter in a cold pan with the diced onion, and slowly bring to a simmer on medium heat.
- This brings out the sweetness of the onions.
- Simmer for about 10 minutes.
- Add minced garlic and simmer 2 more minutes.
- Add next 3 ingredients.
- Combine with the sauerkraut (undrained and not rinsed), kielbasa and potatoes.
- Bring to a simmer on the stove top.
- Cover loosely with foil and place in a preheated 225°F oven for 3 hours.

- Preheat the oven to 450 degrees F and line a rimmed baking sheet with parchment paper. Turn up four edges of a large piece of foil to make a rectangular tray (about 12 by 5 inches) for the sauerkraut; set aside
- On one side of the baking sheet, toss the potatoes with 1 tablespoon of the olive oil, and sprinkle with some salt and pepper; spread the potatoes into an even layer. Place the kielbasa on the other side of the baking sheet, leaving an empty place in the center for the foil tray. Brush the kielbasa with the remaining olive oil. Roast until the kielbasa begins to brown in spots and the potatoes are almost completely tender, about 15 minutes.
- Toss the sauerkraut with the caraway seeds and spread into an even layer in the prepared foil baking tray. Place the foil tray in the center of the baking sheet. Roast until the potatoes are completely tender and browned, the sauerkraut is warmed through and the kielbasa is browned in spots, 15 minutes more. Divide sausage and vegetables between two plates and enjoy.
KIELBASA WITH SAUERKRAUT

- Brown kielbasa on grill or in pan. Combine sauerkraut, kielbasa, apples and caraway seeds, if using, and enough beer to cover. Bring to a boil and reduce heat to simmer and let cook for 15 to 20 minutes or until cooked through. Serve with bread.
KIELBASA, KRAUT AND PORK DINNER
This is one of my Fathers favorite meals. Please make sure you get fresh, not smoked kielbasa for this. If you cannot find the Bavarian Kraut, just use the regular and up the brown sugar by 1 tablespoon and add 1/2 t. caraway seeds. It is savory, yet a tiny bit sweet. Very satisfying and filling. It makes ALOT. I often freeze the leftover cabbage mixture in small containers to use later as topping for sauages or hot dogs, even on a rueben sandwich.

- Preheat oven to 375.
- Coat a large roaster with non stick cooking spray.
- Cut kielbasa links into three pieces each, and place in prepared roaster.
- Add chopped cabbage, the sauerkrauts and juices, carrot, onion, garlic powder, brown sugar, wine and salt and pepper. Mix well.
- Add potatoes and mix again.
- Remove rope from roast. Cut roast into thirds.
- Season meat as you prefer and brown well on all sides in a skillet with a little oil.
- When roast pieces are browned, nestle them into the cabbage mixture.
- Cover roaster.
- Cook 2 1/2 hours.
- Stir occassionally.

- Brown the keilbasa well and remove to a cutting board.
- Dump the sauerkraut into the pan to deglaze and warm up the kraut while you slice the kielbasa. Add to the kraut in your pan and stir it up.

CREAMY KIELBASA AND KRAUT
This is one of those recipes that tastes better the next day, but is darn good right off the stove. Having spent half my adult life in Germany, I fell in love with anything that had sausage in it. This an awesome "comfort food" type dish. If you love kielbasa and sauerkraut, I think you'll really enjoy this. It goes great with slices of sourdough bread to mop up the juices.

Steps:
- In saucepan, cook bacon and mushrooms together. Cook until bacon is crisp, sauteing mushrooms at the same time.
- Drain bacon and mushrooms, leaving drippings behind.
- Brown ham and onions in reserved drippings.
- After ham and onions have browned, stir in bacon and mushroom mixture, sliced kielbasa, wine, bullion cubes, paprika, bay leaf, and water.
- Cover and simmer for about an hour.
- Remove bay leaf.
- Stir in sauerkraut.
- Raise heat and bring to near boil. As mixture is heating, stir in sour cream. Stir constantly until it reaches a boil. Lower heat and let simmer 20 more minutes, stirring regularly.
- Serve with sourdough bread.
- Refrigerate leftovers and discover how good it is the second day.

- Preheat oven to 375°. Over the sink place the kraut in a strainer give it a light rinse and a few squeezes to get out excess moisture. Heat a small skillet over medium high and add the butter, mushroom and onions. Saute these for about 5 minutes until they are softened. Reduce the heat to low, add the bullion cube, pepper, and 1/2 cup of water. Stir until the bullion cube is dissolved.
- In a casserole dish add the drained kraut and contents of the skillet, mix to combine. Top with the links of fresh kielbasa nesting it in the kraut a little bit. Bake covered for at least one hour. Uncover and bake for another half hour to an hour. Until the kielbasa is brown and the edges of the kraut are a little crispy and browned. Serve with prepared horseradish or sauce and rye bread if desired.

- In a large saucepan or skillet set over medium-high heat, heat butter until foaming, then add kielbasa. Cook, flipping the pieces, until the kielbasa is browned, about 5 minutes. Remove the kielbasa and set aside.
- Add the onion to the pan and cook, stirring often, until the onion is soft and slightly browned, about 10 minutes. Add the sauerkraut and cook for a few minutes then return kielbasa to pan.
