- Combine graham crumbs, coconut and nuts in medium bowl. Microwave 2 oz. chocolate and 1/2 cup butter in microwaveable bowl on HIGH 1 min., stirring after 30 sec.; stir until chocolate is completely melted and mixture is well blended. Add to crumb mixture; mix well. Press onto bottom of 9-inch square pan. Refrigerate until ready to use.
- Beat dry pudding mix, 1/3 cup softened butter and boiling water in large bowl with mixer until blended. Gradually beat in sugar; spread over crust. Refrigerate 15 min.
- Microwave remaining chocolate and 1 Tbsp. butter in microwaveable bowl on HIGH 1 min., stirring after 30 sec. Stir until chocolate is completely melted and mixture is well blended. Carefully spread over pudding layer. Refrigerate several hours or until firm before cutting into bars.

NANAIMO BARS
Named after the city of Nanaimo in British Columbia, the first time this square was published under that name was in the early 1950's in the Vancouver Sun newspaper! This version of the original bar is from Company's Coming - 150 Delicious Squares! Later versions change the vanilla custard layer to mint or peanut butter but the original is my favourite. You can make this a day ahead of a special occasion or keep it in the freezer. I used to freeze half because I'm very weak & I would eat the whole thing myself BUT I soon discovered that it tastes good even when its frozen!

Steps:
- BOTTOM LAYER: Melt first 3 ingredients in top of double boiler or heavy saucepan.
- Add egg & stir to cook & thicken.
- Remove from heat.
- Stir in remaining ingredients& press firmly into an ungreased 9 x 9-inch pan.
- MIDDLE LAYER: Cream all ingredients together; beat until light.
- Spread over bottom layer.
- TOPPING: Melt chips & butter over low heat; cool.
- When cooled but still runny, spread over middle layer.
- Chill in refrigerator.
- Use a very sharp knife to cut into squares.
CREAMY NANAIMO BARS

- Line a 9x9 inch-baking pan with parchment paper.
- In a medium saucepan melt the butter, add vanilla, granulated sugar, and cocoa powder on low heat; stir until combined. Remove from heat and mix in the beaten egg. Add the graham cracker crumbs, coconut, and walnuts and combine. Press the mixture into the baking pan with a spatula. Place in the fridge to cool.
- In a large bowl, beat the butter, sugar, and custard powder, and cream with a hand mixer or stand mixer until light and fluffy. Spread evenly onto the crust. Place back in the fridge for 20 minutes to set.
- In a double boiler, melt the chocolate. Remove the pan from the fridge, and pour the melted chocolate onto the Nanaimo bars, tipping the pan back and forth ensuring an even layer of chocolate. Cover with plastic wrap and place in the fridge for 30 minutes until the chocolate has set.
- Remove the bars from the fridge and let sit until room temperature. Cut the bars into 25 small squares. Store in an airtight container in the fridge for 2 weeks or in the freezer for 6 months.

- Mix 1/2 cup butter or margarine, white sugar, cocoa, egg and vanilla in a heavy sauce pan or double boiler. Stir over low heat until mixture is of custard like consistency.
- Combine graham crackers, coconut and walnuts and add to the melted mixture. Mix well and pack into buttered 9 inch square cake pan.
- Cream 1/4 cup butter, confectioners' sugar, vanilla custard powder and milk. Beat until creamy and spread over melted base.
- Refrigerate till hardened.
- Melt semi-sweet chocolate with 1 tablespoon butter and drizzle over custard icing. Refrigerate. When totally hard cut into square bars.

RAINFOREST NANAIMO BARS
Rainforest Nanaimo Bars This is a twist on the very popular Nanaimo bar from Canada. With the addition of peanut butter and mascarpone cheese to the filling and macadamia nuts to the cookie base, it is a scrumptious dressed-up, no-bake bar cookie that is still easy for children to prepare and freezes well-just skip the "serve" step, wrap in plastic wrap then in aluminum foil and freeze until you're ready to serve it. Some of the sugar and fat has been modified from more traditional Nanaimo Bar recipes for this Rainforest version, but it is still a very rich bar.

- Note: Line an 8 by 8-inch baking pan aluminum foil, leaving extra to hang over the edge (this will make it easier to serve later).
- Make the cookie base. Put the butter in the top part of a double boiler. Bring the bottom pan filled with an inch or so of water to a very slow simmer over medium-low heat. Set the top over the water-filled pan. Once the butter is melted, add the banana, Splenda Sugar Blend and cocoa, and stir to combine. Add the egg and cook, stirring constantly with a whisk, for about 5 minutes until warm to the touch and slightly thickened. Remove from the heat and stir in graham crumbs, coconut and nuts. Press the dough firmly into the prepared pan. (Save the pan of water for melting the chocolate later.)
- Make the filling: Beat the mascarpone, peanut butter and confectioners' sugar together in a medium bowl with an electric mixer until light. Spread over the cookie and freeze.
- Make the ganache: Put the chocolate, espresso and cream in the top of the double boiler, and set over the barely simmering water. Stir in the Splenda Sugar Blend, then stir occasionally until melted and smooth. Remove from the heat and let cool slightly. The ganache should have a sheen to it, and hold together well. When cool but still pourable, spread the chocolate layer over the chilled peanut butter layer and smooth over. You can press additional nuts into the top at this point fpr decoration. Freeze for 30 minutes.
- Serve: Remove from the freezer and let sit at room temperature for 5 minutes. Pull out of the pan and transfer to a cutting surface. Cut into 1-inch squares and serve cool or at room temperature.

My mother taught me to make these rich, delicious bar cookies when I was young. Though I've tried many variations, I always come back to this old favorite.

- In a large saucepan, melt 1/2 cup butter. Remove from the heat; blend in sugar, cocoa, vanilla, egg, crumbs and coconut. Also add nuts if desired. Press into a 9-in. square pan. In a small bowl, cream 1/4 cup butter, pudding mix, milk and sugar. Spread over crumb layer; chill. Melt chocolate and 1 tablespoon butter; spread over pudding layer. Chill before cutting into bars.

NANAIMO BARS
Taken from 'Baking and Desserts' cook book - Helpful Hint : These bars originate in western Canada in a town called Nanaimo. It is important to use dark chocolate which has not been sweetened too much because the filling layer is very sweet and rich. do be careful when melting the dark chocolate for this recipe as the plain chocolate used has a fairly high cocoa content and if the melting process is rushed and the heat is too high, the result will be a powdery looking finish to the chocolate topping.

- Lightly oil a 23 cm square tin and line with clingfilm. Mix together the 125 g butter, sugar, cocoa powder egg, biscuit crumbs, coconut and walnuts until combined thoroughly. Press into the prepared tin very firmly. Chill in the refrigerator for at least 1 hour.
- For the filling, cream together the 50 g butter and custard powder and vanilla essence. Add the milk and icing sugar alternatively, about one-third at a time. until smooth. Spead the mixture over the chilled base. Return to the refrigerator and chill again for a further hour.
- For the topping, melt the dark chocolate together with the 1 tbsp butter. stir together until combined well. Pour over the filling and spread quickly to cover the base and filling thinly,.
- Leave for 5-10 minutes until starting to set, then mark the chocolate with a sharp knife into 18 squares. Refrigerate until set. Cut through the marks, dividing the cake into squares. Serve the bar chilled.
