GARLIC CHICKEN WITH ORZO NOODLES
This is a simple recipe with a spicy kick for garlic lovers. It is my combination of a much loved linguine and clam sauce dish and a recent introduction to orzo pasta. I have several variations for this recipe. Add more red pepper for extra spice. Substitute the chicken for clams or shrimp. Substitute the spinach leaves for diced tomatoes. I've also added spices such as basil, rosemary and oregano bringing a distinct Italian flavor to the dish.

Steps:
- Bring a large pot of lightly salted water to a boil. Add orzo pasta, cook for 8 to 10 minutes, until al dente, and drain.
- Heat the oil in a skillet over medium-high heat, and cook the garlic and red pepper 1 minute, until garlic is golden brown. Stir in chicken, season with salt, and cook 2 to 5 minutes, until lightly browned and juices run clear. Reduce heat to medium, and mix in the parsley and cooked orzo. Place spinach in the skillet. Continue cooking 5 minutes, stirring occasionally, until spinach is wilted. Serve topped with Parmesan cheese.

Steps:
- Preheat oven to 450øF.
- Wash chicken and rub outside and inside with 1 tablespoon olive oil.
- Season skin with salt and pepper.
- Place chicken in a medium-to-large baking pan, preferably glass or clay, and spread orzo evenly around chicken.
- Add remaining oil and other ingredients except cheese and toss in pan to combine.
- Place pan, uncovered, in hot oven and reduce heat to 350øF.
- Bake for 1 to 1-1/2 hours, basting chicken every 10 to 15 minutes with pan juices, until chicken is tender and orzo cooked, adding more water, if necessary, during baking if orzo seems too dry.
- Sprinkle with grated cheese before serving.

LEMON GARLIC CHICKEN (GREECE - KOTOPOULO SKORTHATO)
A recipe I am posting for ZWT6. This is one of the easiest recipes to make, and one of the most tempting to eat. Adjust the garlic down if it's not a favorite, and the classic tastes of lemon and oregano will still make this dish uniquely Greek. I put a little change on this recipe, by decreasing the amount of olive oil by half and adding the 1/4 cup of butter for more flavor. Update: 7/23/2011, I have now made this for DH and myself, so only made 1/2 of the recipe. We loved this recipe, so simple and a no fuss meal. I used small red skinned potatoes that I just cut in half, they didn't need the full cooking time, so added them in about an hour before it was done.

- Preheat oven to 355°F (180°C).
- Rinse the chicken and pat dry. Peel the potatoes and cut into quarters, lengthwise. Salt and pepper the chicken and potatoes. Transfer chicken to a roasting pan, and add potatoes, on and around the chicken. Add oregano, garlic, olive oil, and lemon juice, distributing evenly across the pan. Add water and roast uncovered at 355°F (180°C) for a total of 1 hour and 40 minutes. Half way through (50 minutes), turn the chicken.
- Note: Check periodically to make sure there is still a little water in the pan. If needed, add 1/4 to 1/2 cup more.
PARISIAN CHICKEN AND PASTA
OK It takes a bit of work to prepare but when you taste it you will agree it was well worth it! If you already have tomato sauce at home that is one step less.

Steps:
- Sauce Veloute: Melt butter and stir in flour,salt and pepper; gradually stir in chicken broth.
- Simmer 5 minutes stirring with wire whisk,until thick and smooth.
- Simmer 15 minutes stirring occasionally. Set aside.
- Tomato Sauce: Saute onions in oil 5 minutes.
- Stir in tomatoes, salt& pepper,bay leaf and thyme.
- Simmer 15 minutes; discard bay leaf. Set aside.
- Preheat oven 350*.
- Butter a 3 quart casserole.
- Saute chicken in 1 Tbsp butter 2-3 minutes.
- Season with salt& pepper.
- Combine 1/2 c.cream with 1 cup sauce veloute, tabasco sauce & green onions.
- Stir into chicken.
- Remove from heat.
- Melt remaining Tbsp butter and toss with pasta.
- Place 1/2 pasta in casserole.
- Cover with 1/2 tomato sauce.
- Repeat.
- Top with 1/2 cup cheese and entire chicken mixture.
- Blend remaining 1 cup Sauce Veloute with rest of cream.
- Spoon over chicken.
- Sprinkle with remaining cheese.
- Bake 45 minutes until bubbly and brown.
- Note:.
- This can be prepared the day before, refrigerated and heated in oven when you are ready to serve it. Enjoy!

- To prepare this super easy chicken with orzo, heat a large frying pan over medium heat, pour in 2 tbsps olive oil and sauté the onions, until softened. Season the chicken pieces with salt and pepper and add in the pan; fry the chicken breasts until lightly colored.
- Remove the chicken pieces and the onions on a plate. In the same pan, add 2 tbsps olive oil and sauté the orzo pasta. Add the tomato paste and continue sautéing. Pour in the tinned tomatoes, the tomato juice and a cup of warm water. Return the chicken pieces and onions in the pan, add a pinch of sugar, a pinch of cinnamon and season well with salt and pepper. Turn the heat down to medium, place the lid on and cook for about 15 minutes, stirring occasionally, until the orzo pasta is cooked. (Halfway through cooking time, check out if all of the liquid has been absorbed and add 1 cup of hot water into the pan).
- Remove the pan from the stove, drizzle with olive oil and stir in the crumbled feta cheese. Let the chicken with orzo rest for 5 minutes and serve while still warm. Enjoy!
