Nutritious cauliflower with a spicy sauce makes a great vegetarian substitute for chicken wings. Swap out the honey for agave syrup to make this vegan.

2 tablespoons gochujang (Korean hot pepper paste)
2 tablespoons ketchup
1 tablespoon raw sugar
1 tablespoon soy sauce
1 teaspoon sesame oil
1 tablespoon honey
½ teaspoon garlic, minced
6 tablespoons water
¼ cup sweet rice flour
¼ cup potato starch
½ teaspoon granulated garlic
¼ teaspoon salt
¼ teaspoon ground white pepper
1 small head cauliflower, cut into wing-sized pieces
2 tablespoons sesame seeds, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Mix gochujang, ketchup, sugar, soy sauce, sesame oil, honey, and garlic together in a bowl. Set sauce aside.
  • Mix water, rice flour, potato starch, granulated garlic, salt, and white pepper together in a bowl. Add a small amount of additional water if batter is too thick.
  • Place cauliflower pieces in a bowl and pour batter on top. Toss to coat. Transfer to the prepared baking sheet, leaving space between each piece.
  • Bake in the preheated oven until some spots form, about 30 minutes.
  • Transfer baked 'wings' to a large bowl, leaving oven on. Add sauce and toss to coat. Return 'wings' to the baking sheet, leaving space between them. Return to the hot oven until black spots start to appear, about 15 minutes.
  • Transfer to a serving plate and top with sesame seeds.

  • Preheat oven to 450F (232C) and line two baking sheets with parchment paper. Remove leaves from cauliflower and cut into bite-sized florets.
  • Whisk all batter ingredients together in a mixing bowl, adding water slowly at a time until it achieves the desired consistency-- the batter should be pourable, but thick enough to stick on the cauliflower. Dip each floret into the mixture and coat evenly, and shake to remove excess. Arrange florets on baking sheets (they shouldn't be touching) and bake for 25 minutes or until golden brown, then remove from oven.
  • While florets are still baking, whisk together sauce ingredients. Dip each baked floret into the sauce until coated, shake well to remove excess, and place back onto the baking sheet. Reduce heat to 400F (200C), and bake florets for an additional 12-15 minutes until caramelized.
  • Remove from oven and let cool, then garnish with chopped scallions and toasted sesame seeds. Serve immediately, with optional dipping sauces (see below).

  • Preheat oven to 450 F (232 C) and line one large or two small baking sheets with parchment paper or a silicone baking sheet (like this one). Use more baking sheets as needed.
  • Add cauliflower to a large mixing bowl and toss with oil to coat. Then arrange on baking sheet(s) and roast for 10 minutes.
  • In the meantime, prepare sauce. To the same mixing bowl from earlier, add gochujang sauce, sesame oil (or water), coconut aminos, maple syrup, sea salt, and chili garlic sauce. Whisk to combine. Then taste and adjust flavor as needed. Add more chili garlic sauce for spice, coconut aminos for depth of flavor (“umami”), maple syrup for sweetness, or salt for saltiness.
  • Remove cauliflower from oven and increase heat to 500 degrees F (260 C). Add a few “wings” at a time to the sauce. Toss to coat generously, tap off excess, and then place back on baking sheet.
