GOMTANG AKA KOREAN BEEF BONE SOUP



Gomtang aka Korean Beef Bone Soup image

The life-healing, good-for-you soup from my Korean American childhood. Gomtang (aka Korean Beef Bone Soup) will cure all your ailments in one delicious bowl!

3 lbs frozen beef bones (marrow)
2 lbs frozen beef kneecaps
2 lbs frozen beef tendon
2 large onions ((peeled but kept intact for easier removal))
20 cups cold water
1 1/2 Tbsp salt ((I use sea salt; season to taste if you like it less salty))

Steps:

  • Cover bones in cold water, just enough to cover, and let sit for 1 hour. Blood and fat particles will leach out. Drain the bloody water and rinse the bones under cold running water.
  • Now it's time to parboil the bones. Cover with cold water (again), just enough to cover. Bring to a boil and vigorously boil for 5 minutes. Scum and other impurities will rise to the surface.
  • Drain the pot. Wash the pot thoroughly with soap and water. Then wash the bones with cold water, one by one, until the bones look clean. Place clean bones into the clean soup pot.
  • Add 20 cups of cold water, and 2 large, peeled onions to the clean soup pot and clean, parboiled beef bones. Cover and bring to a boil, then lower heat to a vigorous simmer. This is not a roiling boil with big bubbles breaking at the surface; this is a vigorous simmer with lots of small bubbles popping up all over.
  • After 3 hours of vigorous simmering (covered), add beef tendon and simmer until soft, about 1 more hour (covered). Depending on the thickness of the tendon, this can take longer so poke with a chopstick to check for tenderness. The tendon should be soft enough so that there's some resistance, but not too much.
  • After a total of 4 hours cooking time (3 hrs for the bones, 1 more hour with added tendon), the soup should look milky. Discard onion and beef bones. Remove beef tendon and slice into bite-sized pieces when cool enough to handle. Add tendon back into the soup pot.
  • If possible, refrigerate overnight. This will allow the fat to harden. The next day, remove the hardened fat and discard. (This is an optional step but will result in a less fatty soup.)
  • Season soup with salt. Then serve with a generous amount of chopped green onion, freshly cracked black pepper, and additional salt for people to add at the table. Rice and kimchi make perfect accompaniments.

KOM TANG (KOREAN BEEF STOCK SOUP)



Kom Tang (Korean Beef Stock Soup) image

This basic Korean boiled soup is, according to Koreans, good for keeping you young and healthy. Full of vitamins and calcium, Kom Tang is great food after surgery or for pregnant woman. Normally used with Korean radish, daikon is easier to find. Feel free to use any pasta.

1 1/3 lbs boneless beef cubes
1 daikon radish, cut in half without top
1 large green onion
5 garlic cloves, minced
1/4 lb precooked Chinese egg noodles
salt & freshly ground black pepper, to taste

Steps:

  • In a large dutch oven, add 8 cups cold water, the beef cubes and the radish. Bring to a boil and then simmer for 1 hour until meat is very tender.
  • Remove meat and radish from the broth and skim off excess fat that has floated on the surface of the broth. Slice the meat into thin slices, cutting against the grain. Slice the radish into slices 1/4 inch thick.
  • Add the meat, radish and garlic to the broth. Bring back to a boil. Add noodles to broth.
  • Cut green onion into rings. Check seasoning and garnish with green onions.

Kubbeh is a small pocket of dough that is stuffed with ground beef. Kubbeh for soup is usually boiled, whereas Kubbeh served on a platter is fried. Grocery stores in Israel and increasingly in the United States offer frozen packages of Kubbeh that are ready to drop into a vegetable soup. Enjoy this traditional recipe for kosher Kubbeh Soup, or Marak Kubbeh in Hebrew. I found MirJ has a great Kubbeh recipe, Recipe #26755 or you can use frozen store bought kubbeh. 1 onion, chopped
3 tablespoons tomato paste
3 carrots, cut into rounds
3 zucchini, cut into rounds
2 sweet potatoes, cut into slices
4 garlic cloves, finely chopped
3 stalks celery & leaves, chopped
2 tablespoons chicken soup powder
1 teaspoon paprika
1 tablespoon sugar
1 teaspoon lemon salt
1 teaspoon salt
1/2 teaspoon black pepper
16 meat or 16 mushrooms, kubbeh

Steps:

  • Heat the oil in a skillet. Saute the onion until transparent. Add the tomato paste slowly and heat through.
  • Fill a soup pot with 2 1/2 liters (10 cups) of water. Stir in the tomato and onion mixture from the skillet and vegetables.
  • Bring to a boil.
  • Add the spices and Kubbeh.
  • Turn down the flame, and cook, partially covered, for another 20-30 minutes.

These noodles are so deeply satisfying, that they must be considered soul food. The thick noodles with the savory beef and mushrooms makes such a hearty meal, there is almost no room for tea.

1 1/2 lbs beef flank steak
3 tablespoons peanut oil
1/2 lb shiitake mushrooms or 1/2 lb cremini mushroom, caps,sliced
1/2 cup soy sauce
2 tablespoons sesame oil
2 tablespoons sugar
12 ounces Chinese wheat noodles (udon may also be used)
4 cloves garlic, minced
4 scallions, thinly sliced
1 -3 small dried hot red chili pepper
2 carrots, grated

Steps:

  • Slice beef thinly across the grain into pieces about 3-inches long (doing this while beef is partially frozen is best).
  • Bring beef to room temperature.
  • In a small bowl, mix together soy sauce, sesame oil, and sugar until sugar dissolves; set aside until needed.
  • Cook the noodles in boiling water about 8-10 minutes or until tender; drain.
  • While noodles are cooking, cook mushrooms in oil in a small skillet until softened, then remove and drain away the liquid that collects.
  • Add the garlic, scallions and hot peppers to the skillet and cook on high for about 1 minute or until pepper becomes aromatic.
  • Then add the carrot, steak and mushrooms.
  • Cook the meat for 2-3 minutes but try not to overcook (as this is usually served on the rare side).
  • Add the soy sauce mixture and cook about 2 minutes more.
  • Place noodles on a serving platter and top with beef mixture, and toss together until mixed.
  • Serve at once.

2 tablespoons olive oil
1 onion, finely chopped
4 slices bacon, diced
2 cups arborio rice (or other risotto rice)
1 teaspoon crushed garlic
1 (400 g) can crushed tomatoes
1 liter gravox beef stock
2 cups water
1/2 cup grated parmesan cheese
cracked black pepper

Steps:

  • Heat the stock and water in a saucepan and allow to simmer gently.
  • Heat the olive oil in a large pot.
  • Saute the onion and bacon until soft.
  • Add the risotto rice and garlic and stir for 1 minut.
  • add the crushed tomatos.
  • Add the hot stock a cup at a time.
  • Stirr in the stock until absorbed and the rice is tender (about 20 minutes).
  • Take off the heat and stir in the parmesan cheese and cracked pepper to tast.
  • Servce with steak or roast beef, or as a meal in itself.
