Steps:
- Put noodles in 4 cups of salted boiling water. Cook 1-2 minutes. Stir occasionally.
- Drain and dry.
- Heat oil in wok or frypan until smoking hot.
- Add ginger and onion stir for 30 seconds.
- Add noodles and fry for 5 minutes over med heat.
- Add sauce, and stir until coated.
- Serve hot or cold.
- Sometimes I add some julienned carrots or broccoli to this.

KITTENCAL'S QUICK 5-MINUTE CHINESE NOODLES
I make this often it's easy and a great way to use up leftover cooked spaghetti, after you chop the garlic and green onions this takes only about 5 minutes to make, the amounts listed are really only a guideline you may use any amount of spaghetti and adjust all other ingredients to suit your taste --- I have left the chili flakes as optional you may omit or adjust to heat level, we like spicy so I always use lots! --- make certain to use only cold spaghetti for this, you may use cooked Chinese soba noodles if desired in place of the spaghetti, I like to add in a few teaspoons sesame oil also while cooking, prep time does not include cooking the spaghetti

Steps:
- Cook the spaghetti in boiling water until al dente (it is best to slightly under cook) drain then rinse well under cold water, then drain again; transfer to a bowl, cover and refrigerate until cold.
- Heat oil in a large skillet over medium-high heat; add in the chopped garlic and chili flakes, cook stirring for 2 minutes.
- Add in the cold spaghetti and toss using long tongs until the pasta is hot.
- Pour the soy sauce over the hot pasta and continue tossing with tongs adding in more soy sauce if needed until you have the desired flavor that you want.
- Season with black pepper if desired.
- Transfer to a bowl then toss with chopped green onions.

BROTHY CHINESE NOODLES
I found this recipe on msn.com and it is credited to eatingwell.com. We tried it last night- it's GREAT- so I wanted to share. I am posting recipe AS IS, but I did add 1 tsp of 5-spice powder to the turkey mixture and I used buckwheat soba noodles, plus, I added a little bit of Sambal for added spice. Here is the website description of it, and the actual recipe: This dish was inspired by Chinese Dan Dan noodles made with ground pork and noodles in a spicy broth. We use ground turkey and omit the traditional Sichuan peppercorns for convenience, but add hot sesame oil. Use toasted sesame oil instead if you want mild noodles.

Steps:
- Heat 1 tablespoon oil in a large saucepan over medium heat.
- Add ground turkey, all but 2 tablespoons of the scallions, garlic, and ginger and cook, stirring and breaking up the turkey, until no longer pink, about 5 minutes.
- Transfer to a plate.
- Add broth, water, bok choy, noodles, soy sauce, vinegar, and the remaining 1 tablespoon oil to the pan. Bring to a boil over medium-high.
- Cook, stirring occasionally, until the noodles are tender, 3 to 5 minutes. Return the turkey mixture to the pan and stir to combine.
- Serve garnished with the reserved 2 tablespoons scallions and cucumber (if using).
CHINESE NOODLES
This is a simple recipe using a few ingredients that makes a quick and satisfying meal. My mom used to make these for us growing up. Recipe is easily doubled and you can add more or less toppings to suit your taste.

Steps:
- Cook link sausages in boiling water til cooked through, approximately 20-25 minutes. Cool, remove any casings left on and cut into 1/2 inch pieces.
- Peel eggs and grate into bowl.
- Clean and slice green onions.
- Cook Chinese noodles according to package directions and drain. Place desired amount into bowl. Top with sausage, egg, green onion, soy sauce and sesame seeds. Enjoy!
