KITTENCAL'S LAYERED BAKED CANDIED YAMS
This is a very simple recipe for candied yams but big on flavor, it's a must served along side of a Thanksgiving turkey or ham dinner ---the yams must be prebaked in oven *only* not boiled and just until fork tender do not bake until very soft and this may be done up to a day ahead --- this may be doubled and baked in a 13 x 9-inch baking pan, prep time does not include prebaking the yams --- no pumpkin pie spice? just mix together 1/2 teaspoon cinnamon with 1/4 teaspoon *each* nutmeg and allspice and use in place of the pumpkin pie spice :)

Steps:
- Set oven 400°F.
- Wrap each yam in foil then prick holes in each.
- Place on a baking sheet and bake until just fork tender (do not overbake) this should take anywhere from 1 to 1-1/2 hours depending on the size of the yams.
- Carefully remove the foil and allow the yams to cool completely (this may be done up to 1 day ahead).
- Using fingers remove the skins from yams.
- Slice into about 1-inch slices crosswise.
- For the topping; in a bowl combine the brown sugar, soft butter, nuts and pumpkin pie spice; using your fingers mix until crumbly.
- Butter a 9 x 9-inch baking pan.
- Layer half of the sliced yams into bottom of the dish, then sprinkle with half of topping.
- Layer the remaining yams on top then sprinkle the remaining half of the topping on top.
- Bake at 400°F until the topping melts and is bubbling (about 20 minutes).

HOLIDAY SWEET POTATO CASSEROLE
Update this classic cold-weather side dish with a sweet, crunchy maple-pecan topping.

- Preheat oven to 400 degrees F. Line a 2-quart rectangular baking dish with Reynolds Wrap® Pan Lining Paper, parchment side up. No need to grease dish.
- Add parsnips and/or carrots to a large microwave-safe bowl. Add 1/4 cup water and cover with wax paper. Microwave on high for 5 minutes. Uncover and add sweet potatoes. Cover and microwave 15 minutes more or until tender, stirring once. Drain and return vegetables to bowl.
- Pour broth and cream into the bowl with vegetables. Use a potato masher to mash to desired consistency. Stir in 3 tablespoons butter and 1/2 teaspoon salt. Transfer to prepared baking dish.
- Combine brown sugar, flour, rosemary, and 1/4 teaspoon salt in a medium bowl. Using a pastry blender, two forks, or your fingers, cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in pecans and maple syrup and sprinkle over sweet potato-mixture.
- Bake 20 to 25 minutes or until pecan mixture is just starting to brown.

KITTENCAL'S BAKED POTATO SOUP
If you prefer an extra creamy soup use 5 cups half and half cream, adjust the chili flakes to suit heat level or you may omit, make certain to oven-bake the potatoes not boil it will make a difference in flavor, prep time does not include baking the potatoes, this soup is best if used the same day, it does not reheat well --- *note* for a lower fat option omit or reduce the bacon amount, use low-fat milk, sour cream and cheddar cheese :)

Steps:
- In a Dutch oven or pot melt butter over medium heat.
- Add in onion and chili flakes; cook stirring for about 3 minutes.
- Add in garlic cook stirring 2 minutes.
- Add in flour then cook stirring constantly for about 1-1/2 minutes.
- Slowly add in milk and broth, whisking constantly until bubbly and thickened.
- Stir in the cubed cooked potatoes and green onions; bring to a boil.
- Reduce heat to low and simmer uncovered for about 20 minutes.
- Using a fork mash about half of the potatoes (leaving some cubed).
- Mix in crumbled cooked bacon, sour cream and 1-1-/2 cups cheddar cheese; stir until the cheese has melted (do not boil).
- Season with seasoned salt and black pepper.
- Ladle into 6 bowls then sprinkle with more cheddar cheese and chopped green onions if desired.
- Delicious!
KITTENCAL'S CHEESY MASHED POTATO PUFF BAKE
This makes it a wonderful side dish to any holiday meal as you can prepare well ahead and this makes a large amount also, feel free to add in some bacon or green onions :)

Steps:
- Set oven to 350°F.
- Grease a 13 x 9-inch baking dish.
- To mashed potatoes, add 2 cups cheese, cream or milk, butter, eggs, salt; mix well to combine.
- Cook, stir over very low heat until butter and cheese are melted.
- Spread into prepared baking dish.
- At this point you may cool completely and refrigerate until ready to bake.
- Bake uncovered for 25 minutes or until heated through.
- Sprinkle with remaining cheese bake 5 minutes longer.
KITTENCAL'S SALMON CAKES/PATTIES
Plan ahead the salmon mixture needs to be chilled for 2 hours before shaping, this also work using cooked leftover fresh salmon --- for the very best flavor do not use all pink salmon use all red or half red and pink --- I have this yielding for 12 patties that amount is only a guideline it wil depend on the size you make the patties you may make them any size desired, if you have a large family to feed using one more can of salmon won't hurt --- these are just as delicious eaten cold in fact my family prefers them cold :)

Steps:
- Drain the 4 cans salmon well and place in a large bowl; flake with a fork.
- Add in all remaining ingredients except the flour and oil; mix to combine (if the mixture is very moist add in more cracker crumbs using only enough to hold together).
- Cover and refrigerate for 2 or more hours.
- Shape into desired size patties.
- Place about 1/2 cup flour into a shallow bowl or a plate.
- Carefully coat each patty in the flour, then place the coated patties onto a large plate (have all the patties coated before starting to fry).
- Heat oil in a skillet over medium-high heat.
- Fry the patties about 3 minutes on each side or until golden brown.
- Delicious!
