Meyer lemons are a cross between a regular lemon and a tangerine, so they have a more floral aroma and slightly sweeter taste than regular lemons. They are typically available all spring, but you can always use regular lemons for this recipe.This cheesecake has an unbelievably creamy filling that won't crack when you bake it, and then it is topped with a lemon curd, followed by a meringue topping. If you want to save a few steps, you can skip the curd and/or meringue - the cheesecake on it's own is stupendous.

1 cup (225 g) graham cracker crumbs
2 Tbsp (25 g) granulated sugar
¼ cup (60 g) unsalted butter, melted
3 pkg (750 g) cream cheese, at room temperature
1 tin (300 mL) sweetened condensed milk
1 Tbsp (15 mL) finely grated lemon zest
2 tsp (10 mL) vanilla extract
2 large whole eggs, at room temperature
1 large egg yolk, at room temperature
½ cup (125 mL) fresh lemon juice
2 large whole eggs
3 large egg yolks (reserve whites for meringue)
½ cup (125 mL) granulated sugar
1 Tbsp (15 mL) finely grated lemon zest
½ cup (125 mL) fresh lemon juice
½ cup (115 g) unsalted butter, cut into pieces
¼ cup (60 g) sour cream
3 large egg whites
9 Tbsp (110 g) granulated sugar

Steps:

  • Preheat the oven to 350 ºF (180 ºC). Lightly grease a 9-inch (23 cm) springform pan.
  • For the crust, stir the graham crumbs, sugar and melted butter together in a bowl until combined and press this into the bottom of the prepared pan. Bake for 10 minutes (no change in colour to note) and cool completely on a rack before filling.
  • For the cheesecake, lower the oven temperature to 300 ºF (150 ºC). Beat the cream cheese until light and fluffy. Beat in the condensed milk, scraping the sides and bottom of the bowl well. Beat in the zest and vanilla, then on a lower speed; beat in each egg and the yolk one at a time. Still on low speed, beat in the lemon juice. Pour this over the cooled crust and bake for about 45 minutes, until the outside of the cheesecake is set, but the centre still has a little jiggle to it. Prepare the lemon curd as the cheesecake cools.
  • For the curd, whisk the whole eggs, egg yolks, sugar, lemon zest and juice in a metal bowl. Whisk in the butter and sour cream and place the bowl over a pot of gently simmering water, whisking often, until the lemon curd has thickened (but it will still be fluid), about 10 minutes. Strain the curd and spread this gently over the cheesecake. Once fully cooled to room temperature, chill the cheesecake for at least 6 hours (do not cover with plastic wrap).
  • For the topping, whisk the egg whites and sugar in a metal bowl placed over a pot of gently simmering water until frothy and very warm to touch (165 F if using a thermometer). Use electric beaters or transfer to the bowl of a stand mixer and whip until the meringue has cooled and holds a stiff peak when the beaters are lifted. Use a butane kitchen torch to brown the meringue or pop it into a 400 ºF (200 ºC) oven for 3-4 minutes to brown and then cool before refrigerating.

5 ounces graham cracker crumbs
1 ounces organic sugar
3 ounces vegan butter
Ingredients for Cheesecake Filling:
20 ounces Kite Hill Ricotta
4 ounces organic sugar
1 tablespoon vanilla extract
2 tablespoons fresh Meyer Lemon juice
1 tablespoon egg replacer, hydrated in 1/8 cup of cold water

Steps:

  • Method: Melt butter, allow to cool. Add graham cracker crumbs and sugar in food processor, and pulse to mix. Add cooled butter to dry mix and stir with spoon. Sprinkle crumb mixture into the bottom of 10-inch spring form pan and press evenly to ¼ of an inch thick. Store pan in freezer for 10 minutes to chill butter in the mixture. Blend all ingredients for filling in food processor (except egg replacer) until smooth and creamy consistency is achieved. Add to mixing bowl blended cheesecake filling and egg replacer and stir evenly. Pour mixture into pan. Place onto a baking sheet and bake in a preheated oven at 300°F for 25 minutes. Rotate pan in oven halfway through baking. Allow to cool thoroughly and refrigerate 4 hours before serving.

Steps:

  • *If you can't get Meyer lemons, mix equal parts fresh orange and fresh lemon juice to approximate their sweet fragrance and flavor.
  • Preheat oven to 325°; grease a 9-inch springform pan with 3-inch sides.
  • Crust: in a bowl, combine the cookie crumbs and butter; press into bottom of cheesecake pan and freeze.
  • Filling: in a large mixer bowl, beat cream cheese and sugar on med-high speed for 3 minutes.
  • Add eggs, one at a time, beating after each addition.
  • Mix in zest, juice, and vanilla; pour over frozen crust.
  • Bake for 45-55 minutes or until the top is light brown and the center has a slight jiggle to it.
  • Cool on the counter for 10 minutes (do not turn the oven off); the cake will sink slightly.
  • Topping: in a small bowl, combine sour cream, sugar, lemon juice, and vanilla; pour mixture into the center of cooled cake and spread out to edges.
  • Bake for 5 minutes more.

1 1/2 cups lightly crushed butter cookies
5 tablespoons unsalted butter, melted
3 8-ounce packages cream cheese, at room temperature
1 cup sugar
3 large eggs
2 tablespoons fresh Meyer lemon juice (from about 1 lemon)
1 1/2 teaspoons vanilla extract
1 4-inch piece ginger, peeled
3 large eggs
1/2 cup sugar
1 tablespoon heavy cream
1/2 cup fresh Meyer lemon juice (from about 4 lemons)
2 tablespoons cold unsalted butter, cut into small pieces
Sliced strawberries, for serving

Steps:

  • Make the crust: Preheat the oven to 350 degrees F. Pulse the graham crackers and butter cookies in a food processor until finely ground; drizzle in the melted butter and pulse to combine. Press the crumb mixture into the bottom and about 1 inch up the side of a 9-inch springform pan. Bake until golden, about 10 minutes, then transfer to a rack and let cool completely. Reduce the oven temperature to 300 degrees F.
  • Make the filling: Beat the cream cheese and sugar in a large bowl with a mixer on medium-high speed until smooth and slightly fluffy, about 3 minutes. Beat in the eggs, one at a time, then beat in the lemon juice and vanilla. Pour the batter into the prepared crust. Transfer to the oven and bake until the edges are set but the center still jiggles slightly, 1 hour to 1 hour, 10 minutes. Turn off the oven and keep the cheesecake in the oven with the door ajar, 20 minutes. Remove from the oven and run a knife around the edge of the cake to loosen. Transfer to a rack; let cool completely, then refrigerate until set, at least 4 hours or overnight.
  • Make the lemon curd: Finely grate the ginger; put in a fine-mesh sieve set over a bowl and press with a rubber spatula to extract the juice.
  • Whisk the eggs, sugar and cream in a small nonreactive saucepan until combined. Add the lemon juice and ginger juice and cook over medium heat, whisking constantly, until thick and bubbly, about 6 minutes. Remove from the heat and whisk in the butter until melted. Strain the curd through a fine-mesh sieve set over a bowl, pressing it through with a rubber spatula; let cool. Refrigerate until ready to use.
  • Spread the curd over the cheesecake and refrigerate until set, about 30 minutes. Remove the springform ring and slice. Serve with strawberries.

This luscious New York style Meyer lemon cheesecake is topped with a creamy and froth lemon curd that isn't too sweet or too tart!

1.5 cups graham cracker crumbs
6 Tablespoons melted butter
butter (for coating the pan)
2 pounds cream cheese (softened)
1 cup granulated sugar
1 Tablespoon cornstarch
1/4 teaspoon salt
1/2 cup sour cream
1/4 cup lemon juice
2 lemons (zested)
1 teaspoon pure vanilla extract
4 eggs
3 lemons (zested)
1 cup lemon juice
1/2 cup granulated sugar
4 eggs
4 egg yolks
8 Tablespoons unsalted butter
salt (to taste)

Steps:

  • Zest the lemons into a medium sized glass bowl and set a fine-mesh strainer on top.
  • Whisk the eggs, egg yolks and sugar in a small glass bowl that fits over a pot filled with a few inches of water. Bring it to a low simmer and place the bowl on top.
  • Whisk the eggs constantly, trying not to splash the mixture up onto the sides*. Whisk until mixture has thickened, coats the tines of the whisk, and reaches about 170°F.
  • Remove the lemon curd from heat and stir in butter one tablespoon at a time, stirring each time until fully incorporated.
  • Stir in the lemon juice and immediately transfer the mixture to the fine-mesh strainer. Strain into a bowl and let cool for at least 10 minutes before covering and transferring to the fridge to chill.
  • Preheat oven to 375°F.
  • Rub the inside of a 9-inch springform pan with butter until lightly coated. Stir together the graham crackers and melted butter and use the bottom of a measuring cup to press it into the bottom of the pan.*
  • Bake for 8-10 minutes or until fragrant and golden brown. Let cool completely.
  • Change the oven temperature to 350°F and set the wire rack into the lower third of the oven.
  • Place two long sheets of aluminum foil in a cross shape on your work surface. Wrap the foil up around the bottom edges of the springform pan to help prevent water from getting in.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese lowest speed you can until it is smooth. Add in the sugar. Beat in eggs one at a time, allowing each to fully incorporate before adding another.
  • Fold in vanilla, lemon juice, cornstarch, salt and sour cream and until combined.
  • Pour in the cheesecake filling into the cooled and prepared springform pan and use a rubber spatula to smooth out the top. Set inside of a baking dish and surround the pan with 1-2 inches of hot tap water. Place into the oven and bake for 55 - 60 minutes, or until the outside edges are firm but the center still slightly jiggles like jell-o.
  • Turn off the oven, crack the oven door and allow to cool in the oven for one hour.
  • Remove the cheesecake from the oven and water bath. Gently run a thin knife around the edges to release the cheesecake from the springform pan's ring, and then transfer to a wire rack to cool completely. Chill in the refrigerator for at least 4 hours before the next step.
  • Just before serving, remove the cheesecake from the springform pan mold and use a small knife or offset spatula to top it with the chilled lemon curd. The cheesecake will stay good uncovered and refrigerated for up to 5 days.

Found this in a local newspaper. Can't wait to try it. Wanted to post it before I lose it. Meyer lemons are a type of lemon, they are a cross between a lemon and a mandarin orange. Their are sweeter and a little less acidic flavor. These lemons are from California and are found across the country. Look in your grocery stores or specialty stores. Whole Foods, Wild Oats, Schnucks, Dierbergs, and Straubs in the Midwest. The season runs from November to May. Chefs are said to love to cook with these lemons.

1 cup canola oil
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

1 cup sour cream
1/2 cup unsalted butter, room temperature
6 ounces cream cheese, at room temperature

Steps:

  • Cake: Grease bottom, sides and center tube of a 9 or 10-inch fixed bottom tube pan with at least 3 3/4-inch high sides. Line bottom of pan with waxed paper or parchment; grease the paper.
  • Preheat oven to 325°.
  • Sift the flour, baking powder, baking soda and salt into a medium bowel; set aside.
  • In a large bowl, beat eggs and sugar with an electric mixer on medium speed until thickened and lightened to a cream color, about 2 minutes.
  • On low speed, beat in 1 cup oil, lemon juice, lemon zest and vanilla until blended.
  • Blend in flour mixture; when incorporated, mix in sour cream until no white streaks remain.
  • Pour batter into prepared pan.
  • Bake on center oven rack until top feels firm and toothpick comes out clean. about 65 minutes.
  • Let cake rest in pan for 15 minutes, then run knife around edge of cake and tube in center.
  • Invert cake onto wire rack.
  • Leave cake bottom side up to cool.
  • Frosting: In a large bowl, use an electric mixer on low speed to beat butter, cream cheese, lemon juice, zest and vanilla until smooth.
  • Beat in sugar until frosting is smooth and fluffy, about 2 minutes.
  • Frost cake: Cake can be covered and stored in refrigerator for up to 3 days.
  • Serve cold or at room temperature.
